Tonight's dinner was a wedding soup with white beans "meatballs", corn orzo and kale. I also made my own vegetable broth which made the soup even more delicious. Was vegan & gluten free. Not the best picture but this was my salad for lunch. Love those kind of salads with just a bunch of chopped stuff in it. This one has massaged kale, shredded carrots, red bell pepper, raw sauerkraut, beets, grilled artichokes, avocado and black kalamata olives, and all tossed in a creamy dressing made with tahini, lemon juice, maple syrup, tamari, nutritional yeast, garlic, pink salt and freshly ground black pepper. It's made with rolled oats, almonds, walnuts and pumpkin seeds; chia and hemp seeds; goji berries, raw cacao nibs and coconut flakes; maca; and cinnamon, nutmeg and ginger.
