Tsukasa Hinoura 150mm outdoor knife in iron clad shirogami 2 with kurouchi and uchigomori stone finish.
Most of our customers who are familiar with Hinoura-San’s work know his culinary knives, especially the half twist Warikomi “river jump” series. However, Tsukasa got his start making outdoor knives and nata (a thick Japanese machete / hatchet). Tsukasa studied under Shigeyoshi Iwasaki as a young smith in Sanjo Niigata who introduced him to the idea of using scientific analysis to examine traditional Japanese blacksmithing. Tsukasa ran with this and dove deep into using a metallurgist microscope to examine not only his own forgings but from other blacksmiths. Hinoura-san was made fun of by some for this saying he was wasting his time, but his persistence helped to make him one of Japans most respected blacksmiths.
This might not be possible without Shigeyoshi Iwasaki’s philosophy of openly sharing his findings.
What initially began as an effort to raise the level and prestige of Sanjo blacksmithing by Shigeyoshi’s father Kosuke Iwasaki became a general philosophy of sharing knowledge that has made a big contribution to blacksmithing.
This is totally inspiring and really points to the value of hard work and in sharing what you know with those coming up.

The Japanese trade ins vary from totally reworked to barely touched and the vintage are all lightly to barely used, the French knives being mostly from the 1960’s or early 70’s with the exception being the Foster Bros which has been re-tipped...

These Yoshikane SKD Knives were one of the first Japanese Knives we imported in 2010 and are still a favorite. The VG10 are old production from about 5 years ago and are not regularly made, we got a small grip of them about a year ago and this is the last one.. Yoshikane does their heat treatment twice on the VG10 and gives them a much better sharpenability and improved cutting feel, sometimes VG10’s shortcoming.
Yoshikane has been a family business in Tsubame Sanjo since 1919 and was passed down to the current head smith Yamamoto-san several years ago. He has slimmed down this series and made them slightly more triangular. Their production has never kept up with demand despite them being underrated in my opinion.

Just got a few stray Yoshikane knives including a grip of 165mm nakiris.
Kurouchi finished iron clad shiro 2 $168 and nashiji finished stainless clad shiro 2 for $188.
Yoshikane Knives always have a great sharpenability and especially their shirogami. While shirogami isn’t thought of as a long lived edge steel the Yoshikane treatment of it isn’t that short either. If you like to sharpen and want to experiment with different finishes from different stones (especially naturals) this shirogami is a great medium to explore cutting feel, straight off the stones and in the secondary “sharp enough” period.

The classic post WW2 French chef knife. While this design pre-dates this period it really took off with the adoption of the drop forged in Thiers. The use of hand forging on the Martinet trip hammer after forming the basic blade shape and bolster on the drop forged lasted until the early 1990’s for extra large blades but was phased out on smaller knives beginning in the 1960’s.
The tapered tang is the tell tale sign of hand forging
This Thiers Issard 9” chef was forged out of carbon steel in the late 1960’s or early 70’s and luckily hasn’t seen too much heavy grinding.

Antique Wm Marples & Sons (est 1873) 10” cleaver made in Sheffield with turned wood handle.
Most likely this dates to before 1890 when England was added to most Sheffield markings to comply with United States tariff laws that all imports must bear country of origin.
Blade is s still very full despite some pitting, handle is solid and is ready to get to work with a fresh edge.

Second hand Ashi Hamono wa-honesuki maru in shirogami 2.
This knife is ground very right handed, with a lot of convexity on the right hand omote/ outside. It had gotten a little chunky with a few years of sharpening and I opted to thin it with a flat primary bevel that should be easy for the next owner to follow. It has a secondary bevel (more than a microbevel) and a higher angle on the small inside bevel.
Ashi Hamono’s treatment of shirogami is really nice, a great combination of toughness and easy sharpening / edge formation.

Supposedly the Laguiole design is influenced by the Spanish navaja, French shepherds would travel to Spain to work during the winter and bring back Spanish knives. Many navaja were quite large and had a ratchet notched tang that would rattle against the spring as it was opened.
While the Nontron one is much smaller than those and is a utility knife rather than a fighting knife it has the old style ratchets on the tang as a nod to the old navajas.
The Le Thiers is a new design made as a collectively owned design by Thiers area knife makers. They range across all price ranges the Fontinelle Pataud are especially nice though, great mechanisms and clean work.
