The inflatable turkey is here as an ominous warning: the last day for guaranteed regular rate sharpening before Thanksgiving is nigh. In fact tomorrow... but we’ll still have rush service available most likely through next week but we got a lot of knives in to sharpen over here...

Mutsumi Hinoura’s forging and heat treatment are really excellent as are his grinding (he does all his own grinding and sharpening as is usually the case in Sanjo). Mutsumi’s shirogami has an excellent toughness and edgelife for shirogami and has a nice crisp responsive feel on sharpening stones. His aogami super is one of our favorites, it sharpens very easily for an aogami super of its hardness and cuts really well with a fine finish over a long time, many other aogami supers cut well with a fine finish at first but feel washed out without a somewhat coarser polish... a few of these we will definitely restock on but the light horn ferruled Knives are older stock and the handles are not made any more....

A grip of new old stock Sabatier carbon steel 6” fillet knives with Nogent / “Cuisine Massive” handles just in!
Great timing as we are almost out of the full tang new old stock 6” fillet knives (from earlier post).
Hand forged and hand ground these have a great light nimble blade and the old style French rat tail tang “Nogent” or “Cuisine Massive” handle.
These were made in Thiers in the 1950’s, most people these days know this handle type as a Nogent handle but the town of Nogent was / is a rival cutlery town so in Thiers they came up with the term “cuisine massive” for this style. In any case this style is still made but without the tang extending all the way to the end of the handle. 
This knife style is the OG French chef knife design that was very influential on culinary knife design in the 19th century especially as professional kitchens fell under the influence of Escoffier’s brigade system. While French knife production never equaled that of Solingen or Sheffield in Europe or of New England in its prime France was incredibly influential from the food perspective and the knives made in Thiers (and Nogent) had 1000 imitations..
While this knife is from the last days of this type of older 19th century style production (made with 19th and early 20th century equipment and techniques) it is a great example of the skill of the workers back then. While they were made quickly and are always with some little asymmetry these old knives have a lot of soul. $88 online and in the SF shop, coming to Oakland shop Monday.

Yoshikane 165mm shirogami bunka is back!
Forged and ground thin and fine with some of the tightest tsuchime patterns and flattest kireba grinds.
A great knife for sharpeners, shirogami is typically an easy to sharpen steel and the Yoshikane heat treatment is especially easy. You can easily feel the difference between different finishing finishes on a good treatment of shirogami like this. Also easy to learn to thin by flattening the wide primary bevels which on the Yoshikane are very flat and even.
