The popup will begin at 10pm with the knife demonstration beginning at 11pm; drinks and snacks will be provided by Alden & Harlow with help from friends at Privateer Rum, Buffalo Trace, and Formaggio Kitchen. Mutsumi Hinoura stainless clad aogami super knives are finally back!
For those who don’t know him yet Mutsumi Hinoura forged knives in Sanjo Niigata in his family workshop that he shared with his father Tsukasa Hinoura.
Tsukasa studied under the great Shigeyoshi Iwasaki whose work applying scientific analysis to traditional Japanese blacksmithing has been incredibly influential.
Mutsumi has been making small improvements constantly to his knives over the last 5 years or so that we have been selling them, this last batch has arrived with slightly lighter, wider, more triangular blades. A bit less flat in the heel and a bit wider on most models. Sanjo knives often have generous proportions and a robust feel, these still have that but just a hair more refined.. L-R

Last 2 (for now...) Ohishi 240mm SLD workhorse gyutos in our Oakland shop!
SLD is a semi stainless tap and die steel that’s nearly stainless, it’s tough toothy edge cuts well as it dulls and is fairly easy to sharpen.
These have a wide primary kireba bevel grind with a hammer marked (tsuchime) surface on the rest of the face of the blade. This kireba grind is easy to follow as it gets sharpened down to keep the blade thin behind the edge. $238 Oakland shop only

Konosuke Keiai 210 gyuto kurouchi finishes iron clad shirogami 1 with walnut handle $225 with saya.
These cut very nicely with their thin grind, shirogami 1 has a very carbon content which lends to longer edge life than shirogami 2 but requires a little more care with this thin grind. No winter squash with this one..

Vintage Joseph Rodgers 3 1/4" sleeveboard pen knife $58 in SF shop and online Bernalcutlery.com
Joseph Rodgers is one of the most well respected of the Sheffield makers, their knives represent some of the best Sheffield work of the 19th and early 20th century. The registered their Maltese cross and star trademark in 1764 and in 1821 was officially appointed cutlers to the royal family.
This knife looks to be from the early 20th century and has an interesting main blade with rounded tip to keep the point from sitting above the narrower end of the frame poking it's user.

Yoshikazu Ikeda 195mm santoku with iron clad aogami 2 blade.
This is the knife I’m trying not to keep. I usually prefer gyuto over santoku but this narrow santoku has a great feel.
Ikeda’s forging and heat treatments make for a very easy to sharpen long lived edge with great toughness.
This knife is ground symmetrically with an octagonal ho and horn handle. $448 in SF shop and online Bernalcutlery.com
