Breakfast for my 19 month old toddler: Rolled oats with amaranth, homemade blueberry chia jam, sunflower seeds, flax seeds, cinnamon and sea salt, with homemade coconut milk. He loved it! He didn't finish it though but I blended the leftovers with a chunk of banana and more coconut milk to make a homemade pouch for his morning snack. For lunch I quickly made a farro, pea and arugula salad with avocado and a creamy lemon tahini dressing. So yummy! Have you tried farro It's an ancient grain (type of wheat) and it's very nourishing and grounding, perfect for fall and winter. Not the best picture but this was my salad for lunch. Love those kind of salads with just a bunch of chopped stuff in it. This one has massaged kale, shredded carrots, red bell pepper, raw sauerkraut, beets, grilled artichokes, avocado and black kalamata olives, and all tossed in a creamy dressing made with tahini, lemon juice, maple syrup, tamari, nutritional yeast, garlic, pink salt and freshly ground black pepper.
