I haven’t been making anything worthwhile to share. But this was amazing!! I made matcha (powdered green tea) and ginger grilled salmon 😊!! First , I made coconut oil infused with h matcha( put some matcha in a dry skillet, heat till fragrant, add oil of choice, I chose coconut oil, it gives a slight sweetness) then, I used skinless salmon, rubbed it with coconut oil and grated gingerroot, then rubbed the matcha ( I added a little white pepper and salt, white sesame seeds to the matcha) on the fish. I grilled the fish , using indirect heat. A orange/ginger,sesame oil vinaigrette, herbed mix salad greens,avocado and cucumber zoodles , completed the dish😊. The flavors were amazing! This was an experiment, using matcha, other than for tea, smoothies, lattes and coconut milk ice cream 🍦😀! I’m so freakin happy that it worked😆😆😆😆! Give it a try😃!!! .

Used the roast chicken carcass to make a great soup base with some asian flavors like mirin and star anise next to more traditional western spice staples. Add in the leftover roasted veggies, sausage, and some of the roasted chicken and we have a fake pho.

When I think of #porkbelly I imagine a
#slow-roastedporkbelly that is beautifully #succulentandmoist with light #crispcrackling and this immediately transports me to the #MasterChefAustralia sets with Matt, Gary and George devouring the crackling with smiles across their faces!
But the majority at home wanted an Asian inspired pork belly and I made an attempt with it!
I marinated the belly with spices and cooked it for two hours in a slow cooker and then cut it into chunks and #braised it with spices and sauces to create a multi-flavoured dish; salty, sweet, aromatic and spicy. This was braised until the chunks were golden brown and the skin and fat became #gelatinous, it wasn't too greasy but a melt in your mouth consistency. The honey and spices added created this delicious sticky sweet and spicy, juicy bits!

Smoky Tempeh Ramen with green tea Noodles 😍 makes enough for 2 but I 100% ate it all🙄😂 Ramen broth
1 Red Onion
1 tsp sesame oil
1 Tbsp fresh ginger, chopped
1 large Clove garlic, chopped
1 Tbsp low salt soya sauce
1 Tbsp mirin
1 heaped Tbsp dark miso paste
1 Cup Organic Soya milk
1 heaped tsp veggie stock powder
1-2 cups Kale, chopped
1 Cup Water
Fry onion in sesame oil. Then add chopped garlic and ginger. Then add all other ingredients on a low heat until Kale is tender. Take off the heat. Add more water if you want it more soup like.
Cook Green Tea Vermicelli noodles separate, strain then add to Ramen Broth. You can use any noodles you have! I use 80-100g if dry noodles.
2 Tbsp lite salt Soya sauce
1 Tbsp Maple Syrup
1 Tbsp liquid smoke
1 tsp hot sauce
1/2 tsp cumin -Cut the tempeh into thin slices
-let the slices marinade for at least 10 minutes
-place on a lined baking tray under a grill, until brown (like 10mins). Add tempeh slices, seaweed thins, lambs lettuce on top of the noodle broth and sprinkle with toasted sesame seeds
Vegetable fried rice with a side of honey, soy chicken.
This colourful dish is so inviting and is a great way to add a good mix of veggies to your daily diet. I marinated the chicken for 15 minutes in honey, tamari (gluten free option of soy with 30% less salt), crushed garlic and some corn flour. The pieces were fried off in batches and set aside.
Once the veggies of choice (I used peas, carrots, shallots, red capsicum and choy sum) are stir fried to soften, I mix in a couple of eggs until scrambled. I then add cooked basmati rice but any short grain rice with do. Add a few splashes of tamari and combine.

Roast squash tossed in chilli, lime juice and lemongrass, ginger limey yoghurt. Served with rice, peanuts and coriander. A simple midweek meal. I wish I'd added the fragrants and spices to the squash mid way through cooking as they burned on the tray a little. I love obi belts. They are an easy to add accessory. Countless times I encourage people of all sizes to try them on. Usually it is met with statements like, “I don’t want to draw attention to my middle, I don’t have a waist anymore, or I’m too old for them.” I encouraged this real woman to try o e on. She was very intrigued and came back 3 different times. She started with the above statements and then changed her mind. She even went with the one she initially thought was way out of her comfort zone. As she put it on I watched her brow change from uncertain to empowerment. So I asked her if I could take her picture for my social media. She stood proudly and with a lot confidence. I think she looks fantastic! This one is reversible and all hers now. #snapshot of the past 24 hours for me. I danced the night away at a #Salsa party, something I wouldn’t dare do on my own watch lol, I had an amazing time and received an on time word at church this morning and finally a nice dinner with my two shawties at one of my favorite Asian spots (my attire even unintentionally matched the occasion) and I was definitively encouraged.
