Quinoa Greek Salad
Serves 1 | 490 cals | 9g sat fat | 7g sugar | 15 mins
60g quinoa, cooked
12 mint leaves, roughly chopped
100g cherry tomatoes
¼ red onion, sliced
1/3 cucumber, chunked
3 radishes, sliced thinly
15 black olives, roughly chopped
1 tbsp white wine vinegar or apple cider vinegar
2 tbsp extra virgin olive oil
1 tsp dried oregano
Salt and pepper
Combine the mint, vegetables, olives and quinoa. Add the oregano, vinegar and olive oil and stir. Transfer it all into an eating bowl, crumble over the feta and sprinkle with salt and pepper. Done.
