A community of Japanese immigrants in Lima, Peru has led to a unique fusion style called "Nikkei," in which fish is sliced thinly like sashimi and is prepared with Japanese ingredients.
Just as a curiosity, Peru has the second largest population of Japanese people in Latin America after Brazil and the largest population of Chinese people in Latin America!
We will be preparing a very exclusive Nikkei Ceviche as the protagonist for our event ‘On The Go celebrates Peru's Independence Day’ happening on Saturday the 28th July.

I'm always tempted by a bit of Ceviche though more often than not I find the flavours overpower the fish. The tart salad that came atop gave a vinegary hit but clouded the miso sauce and I wish there were more chunks of mango.

1 pound of flounder or other white fish (grouper, sea bass, snapper)
yams or sweet potato
salt/pepper/tajin (red salt)
Boil the yam and chill
Cut the flounder into small pieces 1” or less
Add to citrus juice along with thin sliced onion and jalapeno - make sure fish is covered
add pinch of salt and pepper
Let sit for 2 hours in fridge
