Chardonnay, but not as we know it! The first two pictures show Kizan’s pergola Chardonnay vineyards. In a country with comparatively high rainfall and humidity during growing season, this approach - known as “Ichimoji tansho” - keeps the grapes away from the damp ground and allows air to circulate around the leaves and bunches. The orderly arrangement of shoots and grapes also allows for easy maintenance and harvesting.
Kizan’s grape growing and winemaking began with @kozotsuchiya’s grandfather 88 years ago and this approach is the result of many years of experimentation, testing traditional Japanese “tana saibai” pergolas and ultimately opting for a hybrid trellising system. Their vineyards are a combination of this and two other trellising techniques: traditional pergolas for Japanese varieties Koshu and Black Queen, and European VSP (vertical shoot positioning - third photo) with rain covers for Cabernet Sauvignon, Merlot, Petit Verdot and some Chardonnay. Their vineyards come to just over a hectare, which provides 30% of their grapes. The rest comes from contracted local growers, as is common here.

Peixe é assim, quanto mais fresh, mais leve, mais o sabor dele, melhor. Ele foi feito para ser leve, e sem queijo, pelamor 🤦🏻♂️. Esse, de forma simples, foi colocado em uma assadeira e, por cima, uma pasta de manteiga, cebola, alho assado, pimenta dedo-de-moça e sálvia.
4 colheres cheias de manteiga macia (temperatura ambiente), meia cebola picada em quadradinhos minúsculos, alho assado amassado, 1 pimenta, algumas folhas de sálvia, quanto quiser.
Espalhe a pasta sobre o peixe, posicione algumas rodelas de laranja ou limão ao lado do peixe e leve para assar. Forno já quente, 15 minutos para uma posta mais grossa, ou 10 para posta fina. No caso de forno elétrico, prefiro deixar com o grill ligado.
A quantidade de peixe foi 500g cada posta, um baita filé. E a Rafinha e eu, foi tipo assim, um pra cada 😅😅😅. Mas o competente, só salada, alface, maçã, nozes e alcaparras, light.

Visited Chaberton Estate Winery this afternoon. Took a tour and saw the vineyard, the bottling room and the barrel room. The smell of cedar in the 9-degree Celsius barrel room permeated the space and it was divine! They use two types of oak (American and French) to age particular varieties of wine. The barrel that is chosen adds its own unique flavors to the wine that is stored in it. Each barrel contains enough wine to fill 300 bottles! This winery started in the 1980's. The region it's located in (Langley, BC) is considered to have a "microclimate" meaning it gets less rain than other areas of Greater Vancouver. In the tasting room, I tried four wines: Dry Bacchus (the grapes used are grown on the property), Barrel Aged Chardonnay, Valley Pink Rosé, and Single Vineyard Pinot Noir. My favorite was the Chardonnay, which I bought to take home. I was surprised to taste popcorn! I was also delighted with the rosé. It smelled to me of strawberries, but I tasted raspberry. Maybe I'm weird, but that's what I experienced. This would make a lovely summertime wine. Maybe I should've bought this one, too! I had an informative conversation with the knowledgeable sommelier, Judy. It was so nice of her to take the time to give a newbie some tasting tips and advise me to not get overwhelmed trying to decipher individual aromas or tastes. When starting out, it's ok to generalize what I'm smelling or tasting. For example, recognizing that what I'm smelling is citrus or what I'm tasting is a tree fruit. My trusty sidekick, Fitzwilliam the cork owl, accompanied me on this outing...he likes his picture taken and has decided he should be featured in at least one pic in each of my posts. Wine country was actually amazingly peaceful. And the Dry Creek Valley/Healdsburg area was pleasingly unpretentious. I had the opportunity to meet a member of the Hurst family at Total Wine in Tucson, so on day 3, June 3rd we ventured all of 10 minutes from hotel to the Truett Hurst Winery, which shared space there with VML Winery. The experience was second-to-none. Truett Hurst (the first 5 pics) treated us like old friend and VML treated us like royalty (the sommelier, Mila, treated each taste like an experience in and of itself). At VML, we sat on the porch looking out on a beautiful landscape. They both are amongst the wine clubs (more affordable than one might imagine) we are considering. 2012 Marcassin Sonoma Coast Chardonnay, 14.4% alcohol.
Light greenish-gold colored. Beautiful aromatics of apple blossoms, poached pear and honeysuckle. A bouquet of white flowers. On the palate, orange marmalade, toasted caramel and lemon oil. Lingering kiss of a finish. Incredible length for a white wine. According to the Wine Advocate, Helen & John use 100% new French oak and 100% heavy toast for both their Chardonnays and Pinot Noirs, but there’s not much noticeable oak here. More wet stones minerality with a vibrant acidity. Full-bodied, super intense, ultra rich. Elegant. Ethereal. Simply, my favorite Chardonnay. And please don’t mistake what I’m saying here. There are other absolutely great Chards out there that I very much enjoy and appreciate. Ferren And Aubert come immediately to mind. Beautiful wines perfectly executed by superstar winemakers. But these Marcassins just consistently wow me. And this 2012 really WOWS me. If you can source some, do it. El martes pasado tuve el honor de acompañar a @victoriaortemberg en @lachampagneria.ar por uno de sus eventos, llamado "los olores del vino", donde no sólo fue una simple cata de vinos, sino que primero nos explicó cómo era el proceso para perfumar un vino (con mucha interacción de por medio), después nos dio a conocer una rueda de los olores que podemos llegar a encontrar, ordenados por una rama de género primero (flores, especias, vegetales, entre muchas otras), y las divisiones por especies después (rosas, jazmines, violetas, y más); acto seguido, nos compartió unas bolsitas que ella misma había preparado para que recordáramos y reconociéramos los olores que habían en ellas, así como unas esencias en frasquitos... y competimos por un vino de premio. Por último, infaltable, nos dio a oler y catar vinos, explicándonos lo que contenía cada uno de ellos.
Fue una experiencia hermosa, sumada a la simpatía que tiene ella al explicar las cosas.
El mundo de los vinos es algo mágico, algo que no se puede dejar de conocer... y quién que @victoriaortemberg para explicarnos 👏

Asparagus, a small bite of my daughters baked potatoes with butter, sour cream and cheese, sweet potato and mahi mahi and shrimp over spinach. Side salad; greens mix, sweet peppers, cucumber, tomatoes, cranberry, almonds and brie cheese with strawberry vinaigrette.
And Chardonnay. The last picture is what the husband person is eating, steak and quail!
