Who loves gooey, chocolatey, nutty cookies 🙈🙋🏼♀️ These white chocolate and macadamia cookies are gluten free and refined sugar free (they could also be dairy free if you’d like!) 🍪 The best kind of cookie to me is one which is still soft and chewy when you bite into it, not hard as a rock. These only take 10 minutes to cook which makes them quick, easy and the flavour of them is DELICIOUS! 😋 —
Ingredients: * 1 cup gf all-purpose flour * 1 tsp cornflour * 3/4 tsp baking powder * 1/4 tsp salt * 1 1/2 tbsp coconut oil * 1 large egg white, at room temperature * 1 tbsp milk, at room temperature * 2 tsp vanilla essence * 1/2 cup unrefined coconut sugar * 1 1/2 tbsp white chocolate, chopped
* 1 tbsp macadamias, chopped
Method: * Mix flour, cornflour, baking powder and salt in a bowl. * Whisk coconut oil, egg white, milk and vanilla essence in a separate bowl. * Stir in coconut sugar into wet mix, then stir the dry mix into the wet mix until just combined.
* Preheat the oven to 180 degrees.
* Let the mixture chill in the fridge for 30 minutes. * Spoon the mixture onto baking paper, and press extra chopped white chocolate and macadamias into each cookie. * Bake for 10 minutes, then remove from oven. Move cookies from the baking tray to a wire rack after 10 minutes to cool.
Just after they come out of the oven, I recommend that you sprinkle a tiny bit of sea salt on them to really enhance the flavour. 🏡🥔👩🏽🍳HOME COOKING TIME👩🏽🍳🥔🏡 Since developing Coeliac Disease, potatoes have become my main source of carbohydrates (not that I’m complaining, just look at them😍😂) My diet changed drastically, as I had to give up most other yummy carbs!!😞🍞🍝🥧🍰 But being able to cook them in different ways really adds variety to your diet! As this is the first, sort of, #bodyupdate on my IG I thought I would take this opportunity to also talk about my ambition for #healthyeating and living a #healthylifestyle with an autoimmune disease💫 through being diagnosed with coeliacs I discovered the importance of treating my body with care and listening- ALWAYS LISTENING! Having an #autoimmunedisease isn’t fun but what is, is being able to say “hey- I’m healthy anyway!” ❤️
GLUTEN FREE TACOS @buhocantina! The menu is clearly marked with what is gluten sensitive (FYI a lot places around Waikiki use this term rather than gluten free, I presume something to do with liability). I had the pork tacos and they were delicious 😋 The staff were also amazing!!! After telling them I was coeliac, the waitress went and checked with the chef who confirmed what I could and couldn't eat and explained what their procedures in the kitchen were with my food and asked me if there was anything else they needed to do or be aware of. I seriously have had a CHEF 👨🏻🍳 explain that ‘while they don’t have a seperate fryer for the GF chips and calamari, their oil is set at a hot 🔥enough temperature to ‘burn it off’!!! 🤷🏼♀️⠀
I have also heard of restaurant staff talking about gluten getting ‘killed’ by the hot temp of the oil!! 🙅♂️⠀
Gluten is a protein molecule. It cannot be killed 😂⠀
And IF gluten was destroyed in this way then the food containing gluten would lose its glutinous structure and consistency...ie. the batter or bread crumbs would not hold together...⠀
In fact, for the temp of the oil to be hot 🔥enough for the gluten molecules in the food to be ‘destroyed’ (higher than 260C) the food would almost all be reduced to charcoal!!!⠀
However, regardless of the temperature of the oil there would still potentially be enough of the gluten protein’s sequential molecular structure remaining intact within the oil/food item to trigger an auto-immune response in a coeliac. ⠀
Mind you...the coeliac at this point wouldn’t eat it as IT WOULD BE MOSTLY CHARCOAL 😂😂😂⠀

Got these reduced from @marksandspencer for a little treat 🧀. They were actually really good, the garlic was just the right amount and the breadcrumb coating was so good!! 😍 They went really crunchy on the outside and the cheese was the perfect gooeyness in the middle ♥️. I’ll definitely get these again if I come across them!!

Tried the chicken @heckfooduk sausages for the first time and was pleasantly surprised. Grilled them and had them with a @bfreefoods baguette which was amazing. Also had sides: a small sweet potato, red pepper and tenderstem broccoli.

This weekend I finally got a chance to try out the @traderjoes Gluten Free Pumpkin Bread and Baking Mix, and guys it was the best pumpkin bread I’ve ever had🙌🏻🙌🏻 The boxed mix made it so easy to make, and my family and friends devoured it🤩 It’s the perfect thing to bring to any fall gathering, and I will definitely be stocking up on more boxes to make it all throughout November 👌🏻 (P.S. When I hit 1000 followers, I will be doing a huge giveaway, so get excited 🎉)

Marinad till 300g kött
1 msk chilisås
1 msk sesamolja
1 msk sojasås (gf)

Wok with ham and rice noodles. Doesn't have so much energy today so, I bought wok vegetables. Don't prefer it, but sometimes you have to prioritize🥦🍆🌽🍴 To wok, I usually marinate the meat in this marinade. It’s so delicious 😋
Marinade to 300g of meat
1 tbsp chili sauce
1 tbsp sesame oil
1 tbsp soy sauce (gf)
1 tbsp sesame seeds
Came across the cutest coffee shop by my boyfriends house called @bigbadwolfcoffee ☕️ 🐺 . They do gluten free hot chocolate in 3 flavours, milk, white and dark 😍. I got the dark chocolate one with almond milk and some caramel syrup 🍫. It was so nice and it kind of had a fruity taste too which was a little bit different 🙌🏻. They also do a few gluten free cakes and some crepes (although not sure if they are coeliac safe yet as I wasn’t eating, I just saw it on the board). ♥️ It is worth checking out if you are in the area! I can tell I’m going to be having these quite a lot now the weather is getting frosty ❄️. What is your winter morning pick me up
