My lovely friend @carolcarpenter259 who is also coeliac, popped by today for a catch up and a gluten free fish finger butty!! And with her, she brought me a beautiful homemade gluten free soda loaf - how lucky am I!! Carol is a fantastic cook and has kindly passed on her gf soda bread recipe to share with you ....... Preheat oven Gas6/200C/400f Mix 1 packet Juvela fibre mix with 1tsp salt, 1tsp bicarbonate of soda and 1tsp cream of tartar. Gradually add carton of buttermilk and approx 50ml milk mixing with one hand until you’ve got a soft but not sticky dough . Add extra milk as required but go carefully with it - you don’t want the dough too wet. Dust your surface with gluten free mix and knead dough until smooth. Shape into a round, put on baking tray, Mark a cross on top and bake for approx 30 - 40 mins until cooked. It should sound hollow when tapped on the bottom. When cold slice into nice thick chunks and freeze. Fabulous with salad, soup or just spread with butter and eat on its own. Enjoy! .

A bowl of homemade spinach & chickpea curry 🍛 served with basmati rice and “DIY” naan. Both the curry and naan were very easy to make. I don’t know how I feel about the naan knockoff but the curry was delicious 💫
The curry consisted of: 1 onion, 2 cloves of garlic, 2 fresh chillis (seeds and all) 🌶, mild curry powder, cinnamon, hot chilli powder, turmeric, some water 💦, a tin of chopped tomatoes🥫, a tin of chickpeas, a tin of coconut milk and a lot of frozen spinach 🌱
For the naan I just coated a @bfreefoods with olive oil, a large (crushed) clove of garlic & a sprinkle of mixed herbs 🌿

2. I choose to live by the 80/20 rule. 80% of the time I focus on Whole Foods (🍋🥬🍅🥕🍌) and I supplement my diet with processed food 20% of the time.
Meaning I don’t often eat GF pasta or toast (like pictured here in my delicious morning breakfast) instead, I focus on enjoying naturally gluten-free meals.
Why Because Celiac is an Autoimmune disease and I’m trying to:
1. not get sick every other day
2. avoid acquiring another autoimmune disease (because they tag team on you like that)
How do you eat to support your health
Spaghetti Bolognese for dinner tonight, I bought a whiteboard to stick to the fridge with the menu for dinner each day...so far it's working, the kids know what's for dinner and snacking has reduced. My spag bol is of course packed with veg. Tonight's ragu has carrots, savoy cabbage, onion and tomato in it. This mum's back in charge!

On the seventh day of Christmas; I give you my cracking chicken wings served with Brie and 🎄⠀
Who doesn’t love chicken wings They are one of my favourite dishes to make for a festive period and even for a quick lunch. These chicken wings have been coated in with ground almonds making them completely gluten free, dairy free, low carb, reduced in sugars and suitable for those who follow a low fodmap diet.⠀
I decided to take my classic chicken wings recipe and put a Christmas twist into the flavouring with cinnamon and ginger and do they taste incredible 😍 served with a perfect Brie and spring onion dipping sauce which is perfect for Christmas 🎅🏻⠀
Ground almonds are a great substitute for those of us who are gluten free as well as being not as heavy as gluten free breadcrumbs which can easily be made blitzing gluten free bread. Ground almonds aren’t over powering therefore don’t take too much flavour away from the main spices, they certainly add the most perfect coating for gluten free Christmas KFC!⠀
Please note the pomegranates are solely for decorative purposes as they are high in sugars however, if you aren’t following a refined sugar diet they would be a great accompanying ingredient with the chicken and cheese.⠀

A pretty shot for Instagram...and then how I actually eat my pancakes - smothered in Nutella! 😅
I love making protein pancakes for breakfast. They fill me up until lunch and I feel good getting at least two servings of fruit plus a serving of spinach if I have some on hand to blend into the mixture, and the green colour is fun!
I make two servings in my bullet blender so I can easily store and cook more up a day or two later.
The recipe for one serving is:
- 1 banana
- 2 egg whites (add the yolk if you want!)
- 1/2 scoop protein powder (I use vanilla flavoured)
- 1/4 gf oats (or leave out and use a whole scoop of protein powder)
- pinch of bicarb and splash of apple cider vinegar (optional - for a fluffier texture)
- handful of spinach or kale (optional)
I usually serve these with frozen blueberries and other fruit if I have any, a large dollop of Greek yogurt and a generous serving of Nutella. Maybe one day I’ll be a little healthier and skip the Nutella, but I don’t see that happening any time soon!

@leonrestaurants is brilliant for #glutenfree sugary pick me up before a train journey. Staff checked if I had any dietary requirements and confirmed all other sweet delights in the display cabinet were also gluten free. Treated myself to the lemon ginger crunch made from ground almonds & maize flour. Citrus desserts always win over chocolate ones in my eyes and belly 😍😍😋😋 Nearly finished work for Christmas and then time for some panic Christmas shopping 😂🎄
Sometimes I just want an easy ready meal and this is NOT simple on the low Fodmap diet
I popped into @sainsburys over the weekend to grab some food to eat whilst watching the Strictly final, and I was really struggling.
In the end I found this gluten free @ugothrive pumpkin and sage low Fodmap pasta meal. This was actually was really yummy and I didn’t even put any sauce with it!!
I also picked up some gluten free pigs in blankets because well it’s nearly Christmas!!

Throwback to last week when I had the BEST Christmas trip to Exeter with the wifey @hannabeth714 and her beautiful girls! It’s December so chocolate for breakfast it totally ok 😋! It’s a very cold, wet, wintery morning and I’m currently snuggled up on the sofa watching Christmas films indulging in this yummy bowl of porridge 😍❄️ I used some @alara.cereals gluten free oats, my favourite @thatprotein cacao brown rice protein, a tea spoon of @grapetreefoods red maca powder and a sprinkling of @creativenature chia seeds! Then for the toppings I cut up some banana, chopped some mixed nuts and added some @tescofood 74% dark chocolate 😋 YUMMY! I’m still recovering from my glutening at the weekend. I’m just feeling very tired, bloated and well let’s put it this way... you wouldn’t want to light a match behind me 🤭😂! So today is going to be nice and restful. I’m going to put my feet up, drink peppermint tea and watch every Christmas film under the sun!☺️❄️
Today I'm bringing you the most delicious cinnamon & nutmeg french toast, perfect for your Christmas morning breakfast 🎄 I made a fresh loaf of gluten free bread for this recipe using the @panasonickitchen ZP2000 Hard Crust Bread Maker (link in my bio for more info!) It's perfect for making your own homemade GF bread with a guaranteed hard crust!
Simply pop all the ingredients needed for your loaf in your bread maker on Christmas Eve, then wake up to the delicious smell of freshly made bread on Chrimbo day 😍

- 4 slices homemade gluten-free bread
- 2 eggs
- 1 tbsp milk, dairy free if needed
- 2 tbsp coconut sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tbsp coconut oil
Start by mixing the eggs, milk, spices & sugar in a shallow bowl. Lay a slice of bread in the bowl and soak on either side. Next, melt the coconut oil in a pan, add the slice of bread and fry until both sides are golden brown. Repeat for each slice of bread. Top with winter berries, maple syrup, shredded coconut & granola - enjoy ❤️ #ad #ExperienceFresh

Bali and her healthy GLUTEN FREE smoothie bowls is a great way to start the day! I loved my Zoro smoothie bowl @greengurubali The staff read my gluten free translation card and said they wouldn't put in granola in it as it has oats in it, instead I could choose more fruit so I chose Mango (and it was definitely the best part of the bowl!). I would give this place a 8/10... let me know what you think....

It’s only ONE week until Christmas! For me Christmas involves attending various family events and LOTS of travel. To be my BEST self on Christmas Day, I like to give my stomach a well earned break (eating healthy, nutrious food) in the lead up to Christmas. This is my fridge currently. I have mangos, pears, apples, avocados, eggs, gluten free bread, yoghurt, feta and cheddar cheese (I LOVE CHEESE), a mixed vegetable bake with beef mince, and containers of chopped vegetables (carrots, broccoli, cauliflower, pumpkin, cabbage and capsicum) ready to be made into a vegetable risotto and shepherd’s pie later in the week. A happy tummy = a happy Christmas!
