🥗Put the dressing in first at the bottom of the jar.⠀⠀⠀⠀⠀⠀⠀⠀⠀

🥗Place heartier items like grilled chicken breast or quinoa in after the dressing. These items will marinate in the dressing for extra flavor.⠀⠀⠀⠀⠀⠀⠀⠀⠀

I guess the bright colours of all that beautiful produce can be off-putting? ⁣

In all seriousness though, I thought the same thing when I learned about whole food, plant-based eating. I was interested in turning my health around, but I was concerned I wouldn't be able to stick to it. ⁣

Do you know where that problem resided? ⁣
IN MY HEAD! ⁣

That was all that was keeping me from my healthiest self. My own hang-ups and fears. ⁣

So, what did I do? I told my hang-ups where to go and decided I would give it my best effort. ⁣

I've never looked back. Because it IS sustainable, it's NOT difficult and I LOVE the food! Not to mention how good I feel! ⁣

It all seems hard in the beginning because you can't wrap your head around something you've never tried.⁣

With a little practice and a little knowledge, it becomes second nature. ⁣

Fear should never hold you back from treating your body right. ⁣

We have been told how great garlic is and that it lowers blood pressure but we are not told it has a dangerous oxide that hurts our cells, weakens our membranes & ultimately destroys them. It is a man-made food and therefore highly acidic. So, stick witj onions, ginger and even shallots. I only eat onions & gunger myself as at this point I can't even tolerate the smell or the taste of garlic as it used to be one of my favorite ingredients in all of my cooking but so was beef and I have come a long way from that as well. We have been told how great garlic is and that it lowers blood pressure but we are not told it has a dangerous oxide that hurts our cells, weakens our membranes & ultimately destroys them. The lastly, these incredible foods make for easy, painless elimination. If you eat whole foods you will never, ever have a painful, a stressful or a day without elimination. "Ok, so I find it harder & harder to find any alkaline fruit with the seeds in it!!!" Do others seem to have that problem? I mean I can go to one store one week & then go back to the same store the following week & they won't have that same fruit with the seeds BUT sure enougg they will always have the seedless variety. We really need to do something about this, educate people and educate grocers. I mean if people ONLY want to buy produces for convenience purposes that are greatly gmo'd that could be their choice but let the rest of us buy the least, truest to its form fruit or veg available. It is so sad to me how little our country cares about our people & our people's health & always puts the mighty dollar before its people. Dreaming of this big bowl of scrambled tofu I had last Sunday for brunch 😴 I’m housebound this morning as Henry smashed his head on a rock last night so hopefully can pop out later and restock on the tofu 😬 (He is fine by the way today but just needs to chill out and recuperate). For this bowl I used half a block of @cauldronfoods tofu and sautéed with onion, garlic, green pepper, spinach, sundried tomatoes (these worked really well!), nutritional yeast, fresh turmeric, parsley and salt and pepper 😋 #tofu #scrambledtofu #veganbrunch #coconutbowls #glutenfree

🥗 So, here’s a big bowl of veg!  A little bit prosaic for Insta perhaps 😜, but the reason I am posting it is that this is the way we eat veg in our house, family-style (whatever that means🤨!), in a big bowl and the contents vary according to what’s in the fridge (and according to what the kids like and dislike 🙄!). I always cook it the same, very simple way - a pan-steaming method that retains the vits and crunch. So, in a big frying pan or wok add around 100ml of veg stock (from a cube – I love Kallo brand (@saykallo ) and some chopped garlic.  Get to a gentle simmer and then add veg in order of robustness, so here carrots first, cook for a few mins, then add green beans and lastly the broccoli.  Pop a lid over and steam gently until tender, probs about 10 mins total cooking time. 🙌🙌

Wrinkly veg! Bought fresh with good intention and then forgotten about in the fridge for a bit too long. Still so good to eat though! These bad boys were roasted and made into a yummy soup. I strained out the bits to make a minestrone style soup but saved them to make a delicious pasta sauce for my dinner. I've made three meals (two lunches and one dinner) out of these three slightly old peppers. I think sometimes we get caught up with throwing food away or not choosing it if it doesn't look perfect. Food waste is a massive waste of money, energy and is contributing to global climate change. Changing our attitudes to food could make a real difference in the fight against climate change. It's Celebrate Celeriac Week here at G&G Towers. This is one of my favourite ways to serve celeriac - roasted with white miso, sesame and seaweed. You can call this a side dish if you want, but I think it's rich and comforting enough to make a winter supper all by itself.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 celeriac (or a dozen in my case - see Stories for more)
1 tbsp sunflower oil
2 tsp white miso paste (I use @misotasty)
1 tsp sesame oil
1 tbsp lime juice
1 tsp black sesame seeds
1 tsp yellow sesame seeds
Seaweed sprinkles to serve (@clearspringuk do some great ones)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Peel the celeriac and chop off the tentacles. Cut into 2cm cubes, pop it in a roasting tin and drizzle with the sunflower oil. Give it good mix so the celeriac is well oiled. Roast at 200C for 30 minutes.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Meanwhile, whisk together the miso, sesame oil and lime juice. After the celeriac has had it's 30 minutes, removed the tin, pour the miso sauce over the celeriac and toss until the celeriac is coated. Return to the oven for 10 minutes.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Once it's an appealing golden brown, remove, scatter over the sesame seeds and seaweed and serve immediately. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

There’s NO single use at this cafe - straws are metal, coffee is BYO mug or drink-in only. Seeing the pavements on nearby streets littered with crap, it’s so good to have these guys blazing a trail by being part of the solution.

"Nothin' like my bubbling antioxidant-rich triple berry banana smoothie." I rarely feel under the weather but when I do I load up on fruit smoothies, tea, water and homemade soups. I am doing my best to push anything that does not belong in my system out and in order to do that I stay hydrated with homemade ginger tea, smoothies, homemade soup and a ton of water. There are times in life where you simply cannot avoid germs even if you wash your hands a thousand times, exercise and eat healthy it will be inevitable that we become ill. In the meantime between time, I will stay hydrated while eating TONS of antioxidants and polyphenols, getting enough rest and gettng better. I bought some frozen cherries from Aldi the other day which I’ve blitzed with chocolate Complete powder (I’m in love with this stuff - spirulina, mushroom 🍄 powder, ancients grains plus heaps more in it) and water 💦 It’s school holidays and the kids and I have been relaxing and taking it easy and watching movies - not missing the morning school rush that’s for sure! #healthieroptions #choccherry #smoothierecipes

Basically I wacked some of my Bean Chilli from last night on a bought base, and topped with whatever veg I could find in the fridge! 😁 (this was mushroom, Red Pepper, Red Onion, green chilli and Rocket)! .

An easy and tasty as hell treat! .
I often don't put vegan cheese on pizza, and to be quite honest, I enjoy having without so you can really taste the flavours of the veg topping. It's obviously also less fattening so WIN!👌🌱❤

⁣🍃We are really trying to get more plant foods into our diet- not just for us, but for the whole family! We’ve got to admit that our kids are always pretty amazing at chomping into our regular plant based offerings, but we are always looking to add more variety to their repertoire. Not only for the different nutrients, but did you know that your gut bacteria LOVES variety!⁣ •⁣ 🍃But, it can be tough... it seems it’s a kid’s prerogative to be as fickle as the wind when it comes to mealtime. What was their favorite yesterday, today is ‘disgusting’! Just when you feel like you’ve had a win - they’ll knock you back down...⁣ •⁣ 🍃 Regardless, we are always putting new things in front of them. And we keep going and going and going. Until we wear them down (ha ha - just jokes🤣😂- kind of!!😜). We are ALWAYS asked how we get our kids to eat what they do - the answer is “keep trying”. if there was a gold medal for persistence in the kitchen, then I feel like we could take out the title! 🥇😜🏆⁣ •⁣ 🍃It can take 10-20 exposures to a certain food before they are willing to try it, let alone enjoy it 😩😳🙈 Frustrating, right But oh, so worth it. I used to be a pretty picky eater. All of my food had to be separated on my plate. I didn’t like sauces, spicy food, or fish (to name a few). And there were only a few veggies I would eat (with cheese melted on top).

I didn’t start experimenting with different foods on my own until after college, when I learned about functional nutrition. I tried new foods over and over, cooking them different ways until I found methods that appealed to my tastes and made me feel great.

And now, I enjoy almost all veggies (except chard 😝), and love experimenting with new recipes and food variations!

If you struggle with finding a taste for certain foods, just keep trying! It may take 10+ different tries and various methods or recipes until your taste preferences change. 👌🏽

A really easy & tasty way to use a vegetable lots of people are put off eating because they don’t know how to cook it 🍆

1️⃣ Slice the aubergine, place into a colander & sprinkle salt over. Leave for 30 minutes.

2️⃣ Layer aubergine, crushed garlic, sliced tomato & mozzarella in an oven dish. Sprinkle over some dried oregano & drizzle with olive oil.

3️⃣ Bake at 180 degrees for 45 minutes or until all ingredients softened & mozzarella has melted.
