How about this beef bourguignon recipe... you could easily double the veg or add other veg like parsnips, courgettes/zucchini, butternut squash, leeks. Get creative. The main base and herbs give your the flavour and the veg can build on that.

Despite what people think, a roast can be very nutritious and balanced. Meat, potatoes and vegetables: great! .
In my opinion what’s important to keep it nutritious is a) not to roast every single thing and b) moderation.

I roasted the chicken, potatoes and parsnips but steamed the carrots, cauliflower and sprouts.

Also, a roast doesn’t have to turn into a feast feeding the tens of thousands. By all means make it stretch to several meals but be realistic, will you eat the potatoes this evening or for tomorrow’s dinner? And if there’s four of you, ask yourself whether you really need ten potatoes - could preparing four help you not overeat? What’s better 10 potatoes roasted in fry light or 4 in 1tbsp. coconut oil? .

Add them to everything and anything!⠀
Aim to have veggies 3 times a day. Or aim for 6 different kinds of veggies in a day.⠀

- grate a carrot and a zucchini into your bolognese sauce⠀
- grate a beetroot into your chocolate cake or muffins⠀
- start serving an entree of vegetables before you dinner⠀
- cucumber in your next smoothie⠀
- spinach and onion in your omelette⠀
- serve a side salad with your dinner⠀
- add grated carrot, cinnamon and nutmeg to your oats (carrot cake oats?!)⠀
- avocado mousse⠀
- pumpkin pancakes⠀
- get a spiraliser and make veggie noodles⠀
- steam veggies and keep them in the fridge to snack on⠀
- make mashed 'potatoes' but add cauliflower and parsnip to the mash too⠀
- add a veggie layer to your lasagne⠀
- mince cottage pie with carrot, capsicum, peas & spinach⠀
- puree them and add to your sauces or mince dishes⠀

We had a fairly early lunch and were starving when we got back so a stir fry seemed like the best option, especially considering the day!

I used rice noodles for a change and, a bit risky, tofu because I didn’t have any meat. I used smoked tofu which I absolutely love, as it’s a nice source of protein, it’s got a great texture and pleasant taste and it doesn’t need any marinating or pressing. .
I wasn’t sure what the boys would make of it though. Pierre loved it and finished the leftovers, husband liked it and Gaspard said it was “grim” 🙄 .
Three against one, tofu wins I reckon... 👍

A bowl of stir fry after a long day of walking in beautiful Cornwall - how lucky we are to live in the south west! . We had a fairly early lunch and were starving when we got back so a stir fry seemed like the best option, especially considering the day! . Upgrade your potato options

Sweet potatoes have a far greater nutritional value than standard white potatoes.

If switching to sweet potato mash is initially too much of a stretch, consider mixing the two to start.

Or baked spicy sweet potato wedges instead of chips:

Ingredients 2 large sweet potatoes, cut into wedges 2 Tbsp. extra-virgin olive oil Sprinkle of salt, pepper and chilli powder to taste
(Tip: you may find it easier to cut the sweet potatoes if you microwave them for a couple of minutes)

Instructions Heat oven to 200° C / 400° F . Place sweet potatoes in a large bowl and gently coat with oil. Season with chili powder, salt and pepper; toss gently to coat. Spread potatoes in a single layer on a baking sheet lined with parchment paper. Bake for 20 to 30 minutes, turning once, until brown and tender. Cool for 5 minutes before serving.

You can get courgetti (courgette/zucchini noodles) and boodles (butternut squash noodles) from most supermarkets or make your own with a spiralizer.

Blanch or lightly sitr fry for a minute or two then serve with Bolognese or Thai curries – or your own choice of meal.

Here's one of my personal favourites: 1 cup courgette noodles 4 oz. cooked chicken 1/2 cup organic edamame, shelled 1 tsp. sesame oil Chopped fresh ginger, green onions, chili pepper
