One of my favorite things to meal prep on the weekends are mason jar salads. It’s an easy way to eat a salad every day and increase your veggie intake throughout the week. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Prep once, then grab & go! What’s really awesome is that because the jars are sealed, the salads stay fresh and crisp all week. Mix and match with your favorite salad combinations — the possibilities are endless!⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here are some tips when prepping mason jar salads:⠀⠀⠀⠀⠀⠀⠀⠀⠀
🥗Put the dressing in first at the bottom of the jar.⠀⠀⠀⠀⠀⠀⠀⠀⠀
🥗Place heartier items like grilled chicken breast or quinoa in after the dressing. These items will marinate in the dressing for extra flavor.⠀⠀⠀⠀⠀⠀⠀⠀⠀
🥗Add heartier veggies (carrots, grape tomatoes, peppers, cabbage, etc.) in next.⠀⠀⠀⠀⠀⠀⠀⠀⠀
🥗Put greens and delicate veggies in last.

Dreaming of this big bowl of scrambled tofu I had last Sunday for brunch 😴 I’m housebound this morning as Henry smashed his head on a rock last night so hopefully can pop out later and restock on the tofu 😬 (He is fine by the way today but just needs to chill out and recuperate). For this bowl I used half a block of @cauldronfoods tofu and sautéed with onion, garlic, green pepper, spinach, sundried tomatoes (these worked really well!), nutritional yeast, fresh turmeric, parsley and salt and pepper 😋 #tofu #scrambledtofu #veganbrunch #coconutbowls #glutenfree
How do you feel about salads I think lots of people feel unsatisfied by salads, but you just need to find a few go to recipes that you love and it can really be a game changer. Salads can be a main meal but they can also be a base or a side to the main event. Lots of vegetables retain more nutrients when consumed raw so it’s a good idea to include them this way. Here we had mixed salad leaves, avocado, tomato, beetroot and red pepper in an apple cider vinegar and extra virgin olive oil dressing with homemade sauerkraut and nigella seeds. With our salads we also had leftover curried sweet potato noodles, I’ll have to share that awesome recipe another time 😋 Where do you go to look for salad recipes I think @ottolenghi is the winner for me 🌿

2. Cooked strips of zucchini, roasted red peppers, and kale.
3. Topped stuffing with diced tomatoes and red onion.

Had a lush #vegan rainbow coloured wholefood bowl for lunch on my first visit to @wildthingcardiff in Grangetown 💛 Warm maple roasted squash, carrot, tahini, quinoa, lentils, garlic and parsley broccoli and lemon kale. Oh and a bottle @karmacolauk drunk with a reusable metal straw. .
Wild Thing is #cardiff’s new vegan cafe with social goals - to get everyone eating more veg. On the menu is a daily “pay what you can” veggie soup, served with a hunk of @riversidesourdough - to make healthy, plant based eating accessible to all 🙌🏻
There’s NO single use at this cafe - straws are metal, coffee is BYO mug or drink-in only. Seeing the pavements on nearby streets littered with crap, it’s so good to have these guys blazing a trail by being part of the solution.
A little choc cherry smoothie to get me through the afternoon 🍒🍫 I would normally grab a coffee ☕️ around this time but I’m conscious of having too much and blocking nutrients absorbing so this is a much healthier option for me. I bought some frozen cherries from Aldi the other day which I’ve blitzed with chocolate Complete powder (I’m in love with this stuff - spirulina, mushroom 🍄 powder, ancients grains plus heaps more in it) and water 💦 It’s school holidays and the kids and I have been relaxing and taking it easy and watching movies - not missing the morning school rush that’s for sure! #healthieroptions #choccherry #smoothierecipes

🍃We are really trying to get more plant foods into our diet- not just for us, but for the whole family! We’ve got to admit that our kids are always pretty amazing at chomping into our regular plant based offerings, but we are always looking to add more variety to their repertoire. Not only for the different nutrients, but did you know that your gut bacteria LOVES variety!
🍃But, it can be tough... it seems it’s a kid’s prerogative to be as fickle as the wind when it comes to mealtime. What was their favorite yesterday, today is ‘disgusting’! Just when you feel like you’ve had a win - they’ll knock you back down...
🍃 Regardless, we are always putting new things in front of them. And we keep going and going and going. Until we wear them down (ha ha - just jokes🤣😂- kind of!!😜). We are ALWAYS asked how we get our kids to eat what they do - the answer is “keep trying”. if there was a gold medal for persistence in the kitchen, then I feel like we could take out the title! 🥇😜🏆
🍃It can take 10-20 exposures to a certain food before they are willing to try it, let alone enjoy it 😩😳🙈 Frustrating, right But oh, so worth it. You are honestly giving your children the very best start to their long term health if you can persist with the vegetable thing.... we feel your pain though, mummas! It can be hard - just hang in there 🥒🥑🍅🥬🥦🥕🌽

Blood orange salmon and broccoli. Simple and delicious. All from @communitymarkets. Orange marinade was half a fresh squeezed blood orange, sea salt, dried rosemary, coriander, black pepper and garlic. Broccoli sautéed with olive oil and fresh garlic.
Hump day breakfast - Mum, 4year old and 8 month old. Wholegrain toast, avo, rocket, smoked salmon (Jasmine calls it fish bacon) and a nectarine. No raw fish or salt for bub but he prefers to eat his toes🙈 #eatmoreveg #loveoilyfish
Can I tell you a secret
I used to be a pretty picky eater. All of my food had to be separated on my plate. I didn’t like sauces, spicy food, or fish (to name a few). And there were only a few veggies I would eat (with cheese melted on top).
I didn’t start experimenting with different foods on my own until after college, when I learned about functional nutrition. I tried new foods over and over, cooking them different ways until I found methods that appealed to my tastes and made me feel great.
And now, I enjoy almost all veggies (except chard 😝), and love experimenting with new recipes and food variations!
If you struggle with finding a taste for certain foods, just keep trying! It may take 10+ different tries and various methods or recipes until your taste preferences change. 👌🏽

Roasted cauliflower with tangy dipping sauce.
Simply drizzle florets of cauliflower with olive oil and sprinkle with cumin and a pinch of salt.
Bake in a moderate oven for 20 minutes.
To make the dipping sauce, use your stick blender to blitz 4 tablespoons of natural yogurt, a handful of coriander leaves and the juice of a lime.
