Casseroles, Bolognese sauce or chilli is the ideal place to smuggle in added veg. Vegetable dodgers will barely notice if you grate carrot or courgette, or finely mince mushrooms (which have a surprisingly meaty texture). The texture is barely changed.
How about this beef bourguignon recipe... you could easily double the veg or add other veg like parsnips, courgettes/zucchini, butternut squash, leeks. Get creative. The main base and herbs give your the flavour and the veg can build on that.

Swap wraps for lettuce
It might not cut it with children, but lettuce makes a surprisingly good stand-in for tortilla wraps when you’re serving up fajitas. As you get more adventurous, you can also use tougher greens like kale or chard, but you’ll want to blanch and pat dry before you wrap.

Aim to have veggies 3 times a day. Or aim for 6 different kinds of veggies in a day.⠀
- grate a carrot and a zucchini into your bolognese sauce⠀
- grate a beetroot into your chocolate cake or muffins⠀
- start serving an entree of vegetables before you dinner⠀
- cucumber in your next smoothie⠀
- spinach and onion in your omelette⠀
- serve a side salad with your dinner⠀
- add grated carrot, cinnamon and nutmeg to your oats (carrot cake oats!)⠀
- avocado mousse⠀
- pumpkin pancakes⠀
- get a spiraliser and make veggie noodles⠀
- steam veggies and keep them in the fridge to snack on⠀
- make mashed 'potatoes' but add cauliflower and parsnip to the mash too⠀
- add a veggie layer to your lasagne⠀
- mince cottage pie with carrot, capsicum, peas & spinach⠀
- puree them and add to your sauces or mince dishes⠀
Get creative, do some googling and get more veggies on your plate mate!⠀
ATTENTION VEGGIE DODGERS!
Here is an example of how you can get extra veg into unexpected dishes.
This is a turkey and black bean chilli recipe. It does have a tomato base but there are also 2 whole sweet potatoes (including skins) and 2 cups of kale blended in. So that means additional fibre and nutrients and your veggie dodgers would never know it!
Sweet potatoes are an excellent source of the veggie version of Vitamin A. Kale is high in Vitamin K, A, and C. And both veggies have good quantities of minerals and B vitamins too.

Upgrade your potato options
Sweet potatoes have a far greater nutritional value than standard white potatoes.
If switching to sweet potato mash is initially too much of a stretch, consider mixing the two to start.
Or baked spicy sweet potato wedges instead of chips:
Ingredients 2 large sweet potatoes, cut into wedges 2 Tbsp. extra-virgin olive oil Sprinkle of salt, pepper and chilli powder to taste
(Tip: you may find it easier to cut the sweet potatoes if you microwave them for a couple of minutes)
Instructions Heat oven to 200° C / 400° F . Place sweet potatoes in a large bowl and gently coat with oil. Season with chili powder, salt and pepper; toss gently to coat. Spread potatoes in a single layer on a baking sheet lined with parchment paper. Bake for 20 to 30 minutes, turning once, until brown and tender. Cool for 5 minutes before serving.

Experiment with courgetti and boodles
You can get courgetti (courgette/zucchini noodles) and boodles (butternut squash noodles) from most supermarkets or make your own with a spiralizer.
Blanch or lightly sitr fry for a minute or two then serve with Bolognese or Thai curries – or your own choice of meal.
Here's one of my personal favourites: 1 cup courgette noodles 4 oz. cooked chicken 1/2 cup organic edamame, shelled 1 tsp. sesame oil Chopped fresh ginger, green onions, chili pepper
