Folding those 🥟 dumplings are a struggle, so I am waiting on my amazing neighbor to school me... Literally.
I infused some olive oil with fresh herbs and garlic earlier this week and have really enjoyed it on roasted veggies, toast, salads, and sauteed chicken!
It's a really easy way to throw together a light sauce that can be drizzled on whatever you have meal prepped for the week. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here's how I did it:
- Heat 1/2 cup of extra virgin olive oil, sprigs of fresh herbs (I used rosemary and thyme) and 2 cloves of roughly chopped garlic in a saucepan/skillet over low heat until it the oil just starts to smoke.
- Strain the herbs and garlic from the oil and store in the refrigerator for up to 1 week. - Let the oil sit out at room temperature for a few minutes to liquify before drizzling on whatever you like!

I was going to wait and post this until later but so many of you are wanting the ingredients ASAP so you can make it tonight, I am making it happen for y’all!🙌 _
Here’s what you need!
•6 Chicken Thighs, cooked bones and skin removed (or a whole chicken, can use rotisserie chicken too)
•2 Tbsp. Grated Ginger
•4 Diced Green Onions
•1 Tsp. Kosher Salt + more to taste if needed
•1 Tsp. Sugar
•1 Tsp. Fish Sauce
•6 Cups of Homemade or Store Bought Stock (see stories for homemade)
•3 Baby Bok Choy Bundles, end removed
•1 Tbsp. Avocado Oil
•Cooked Jasmine Rice
•Heat skillet to medium high heat and add green onions and ginger to the pan and sauté until tender, about 2-3 minutes.
•Add in stock at this time and season with sugar and salt.
•Add in cooked chicken to the stock and bring to a simmer.
•Add in bok choy at this time as well as the fish sauce and let cook another 2 minutes until bok choy has wilted.
•Add rice to a bowl and ladle soup over top to ensure the rice keeps it’s texture.
•Top with jalapeño, cilantro, green onions, and lime juice and serve immediately.

Ketan has a sweet tooth and loves tea cakes but since I advocate healthy eating he hardly gets to eat cakes et all the sugar. Once in a while when we have over ripped banana in our fruit basket, we end up either making a smoothie, Sheera (semolina pudding) or banana cake. This time around I decided to bake a cake because I need to work on my baking skills as I don’t get or rather miss the chance of baking often.
Also we are really adulting, forgetting milestones 🙈it’s been 4 years yesterday since Ketan & I had our first phone conversation and a saga of unconditional love and friendship began. We both are quite risk takers as we didn’t see other in person or on a video call when we decided to get engaged. The decision to get engaged was all based on phone calls and the inner vibes as we didn’t want to influence our decision based on physical appearance. I will unfold more about us sometime later!! So we can say this cake was coincidentally baked to celebrate our 4th friend anniversary milestone which we didn’t even remember.

Want to know my trick for really crispy baked tofu After pressing out all the water, toss your cubes in arrowroot (or corn) starch!
Once coated, I baked for 30 minutes, turning once. Then, I tossed the crispy cubes in hot sauce. 🔥🔥
To reheat, simply warm in your oven! 🙌🏽🙌🏽

Idealne jako słodka przekąska, a także pożywne śniadanie lub kolacja.
Przepis na ok 10 sztuk:
4 czubate łyżki mąki kokosowej,
5 łyżek mąki pszennej (może być również mąka pełnoziarnista),
1 łyżka miodu,
1-2 łyżki oleju kokosowego,
1/2 szklanki mleczka kokosowego,
szczypta soli oraz sody,
Wszystko razem wymieszać do uzyskania konsystencji podobnej do klasycznych naleśników (w razie potrzeby dolać mleka lub wody, albo dodać mąki pszennej). Naleśniki rozpływają się w ustach, są kruchutkie, puszyste, słodkie i przede wszystkim zdrowsze. Gwarantuję, że każdy mały i duży niejadek będzie się nimi zachwycał!

I loved this recipe and I hope u do too , I’ll be sharing the steps on my stories. Btw refried vegetable purée is 👌 I wanted to use a different filling than beans and I had some roasted sweet potatoes that already tasted amazing, so I fried bit of garlic, finely chopped fennel and loads of red chili, then added the roasted sweet potato, added a few other ingredients for extra flavor (they will be on my stories ) but it turned out delicious and now this has given me many ideas for many more recipes ☺️
Chicken with Fresh Lime & Coconut Milk .
4 tsp avocado oil
4 breasts, skinless, chopped into bite-sized pieces
1 can green chiles
1 can coconut milk
2 Tbsp fish sauce
6 green onions, chopped
½ bunch Cilantro, chopped
2 limes, juiced
1. Heat avocado oil in wok over high heat, add chicken and saute 5-7 minutes, until no longer pink.
2. Add chiles and continue to cook 1 minute.
3. Add coconut milk, fish sauce, green onions, and cilantro.
4. Cook for another 4 minutes, then serve over brown rice, drizzled with lime juice. .

Dlatego gdy zobaczyłam, że robią się już miękkie, to w myśl zasady zero waste zabrałam się do dzieła i zrobiłam z nich błyskawiczny domowy ketchup (co jak się okazało było świetnym posunięciem, bo tego samego wieczoru sklepowy ketchup nam się skończył) 🥰
➡️ 6 pomidorów
➡️ 1/2 łyżeczki soli
➡️ 1/2 łyżeczki chilli
➡️ 1,5 łyżeczki oregano
➡️ 1 łyżeczka bazylii
➡️ 1 łyżeczka czosnku niedźwiedziego
➡️ 1 ząbek czosnku
➡️ 1 łyżeczka ksylitolu
➡️ 1 łyżka sosu worcester (może być sojowy)
1. Pomidory nacinam w krzyżyk, zalewam wrzątkiem. Po chwili obieram je ze skórki i przekładam do garnka. Rozdrabniam je przy pomocy ugniaracza ziemniaka.
2. Najpierw gotuję pod przykrywką na wolnym ogniu ok. 10 min, potem ściągam przykrywkę, aby woda trochę odparowała.
3. Dodaję wszystkie przyprawy, gotuję ok. 30 min bez przykrycia.
4. Czekam aż sos ostygnie, blenduje go.

Two days ago, my heart dropped as I walked towards my daughter’s school to pick her up. A car accident had spun up onto the sidewalk, almost colliding with the school. It is a busy intersection for pedestrians and cyclists. Thankfully, no one was injured but I all day I dwelled on the fact that if the timing was later, it would have been a disaster. It was a wakeup call for me as it has been something that I have tried to change and then given up on. It is a call to action to create safe and healthy communities. Communities that value the pedestrian over the vehicle. Communities that are vibrant. Communities in which it is safe for children to walk to school. *

who doesn’t love 🥓 + 🍳 while this is a relatively healthy breakfast. it’s our method of cooking and additions that can cause it to lose it’s nutritional value. i use avocado , coconut and olive oil and ghee (clarified butter) when cooking and stay away from anything labeled “partially hydrogenated”. if you eat the REAL bacon — try draining out the fat or cooking in the oven. adding fruits and vegetables are great way to balance out a meal. #glistenupbabe

Most people don’t care about health until they have to.
It’s estimated that it costs twice as much, and takes twice as long to prep whole organic (real) food.
If we took agricultural subsidies away- those costs would be more equal. We would be able to afford organic produce better if we took away the advantage that bad food has- and yes, I don’t mind calling some food bad. The effect on our body is negative- rather than positive. Instead of adding to health, we are confusing our brains and poisoning ourselves slowly. We are getting ourselves addicted and closing our eyes to the harmful things happening.
If we could cut two things from our diet- everyone’s health would improve dramatically- no matter what diet you are on- and those are sugar and vegetable oils. If we could cut these out of existence, our health bills would be slashed.
You may think you are saving money by getting the cheap stuff at the grocery store, but you’d be better off not buying them at all. The health bills accumulating from the cereals and packaged dinners and stripped, fortified foods, along with the pains in your body from those health problems are staggering.
What is losing weight worth to you What is worth having a fully functioning brain and disease free existence Putting down those chips, cookies, French fries and sugary drinks are worth it for me.
