Veggie tacos! We’ve been way too busy, eating out way too much, having too many sweets! Getting back to healthier days with my littles. Had a smoothies for breakfast and now veggies tacos for lunch.
I sautéed some sweet bell peppers, garlic and thinly sliced carrots with organic pinto beans. Made fresh pico with cherry tomatoes (soooo good!) and chopped fresh lettuce, radishes and cilantro on top! Kids loved it! Go #vegan lunch!

Last month, after meeting my new doctor and telling her my story, she almost started crying and gave me a hug.. said she wanted to just take me home and love me. Take care of me like my parents never did.. Yesterday, I had another appointment with her. She was so, so happy and proud of me for all the changes I have been making. Said I inspired her and that she can't wait to tell people my story.

Was gonna wait for a #tacotuesday post but this was too good and I’m impatient. Happy Monday! If you’re lazy like me and haven’t meal prepped yet just go ahead and throw what you’ve got in a tortilla and call it a night! 🤷♀️
So! You all probably know how obsessed I am with oatmeal but honestly everyone should be because it’s so unbelievably healthy for you and your gut! It helps aid digestion with whole grains and fiber and it even has protein! This is a new recipe I came up with full of antioxidants and omega-3s. I hope you guys like it as much as I do!
1/2 cup quick oats
1 cup milk (I used unsweetened almond)
1/2 a banana, sliced
1 tbs almond butter (unsweetened / no salt added)
1 tsp chia seeds
Small handful of blueberries
Sprinkle of pomegranate seeds
2-3 small chunks of dark chocolate
1 tbs coconut chips
Drizzle of agave nectar or honey (if you have a sweet tooth like me)
Mix oats and milk in a microwave safe bowl and cook your oats according to directions on your packaging! I usually pop mine in the microwave for 1 min 30 seconds.
Decorate with all your yummy toppings, drizzle with agave / honey and eat it up!
