New Recipe Alert- Goat cheese, Leek & Mushroom Tarts👩🏽‍🍳

With Thanksgiving around the corner, why not treat your guests to something different! 😀

Everything flaky, flavorful, crispy, and fresh outta the oven!
•
With a few of you wanting the recipe to my past dishes, I'm doing better in keeping track of measurements and ingredients I use. For years, I've always cooked openly and freely. I don't really follow recipes and I don't plan out beforehand what I'll use or make. To me, cooking has been a way to express myself. No guidelines, no step by step instructions, but I'm mindful of my audience and followers and doing better in keeping track for you guys. Recipe below 😁🔽
•
-sauté 3 cloves of garlic and 1 red onion in extra virgin olive oil. -add 3 sprigs of thyme and rosemary -add 2 large leeks (wash thoroughly, halved and chopped) 
Sauté about 6-8 minutes
-add a bin and half (roughly 15 mushrooms) of cremini or white button mushrooms (your preference, simply wipe mushrooms with damp towel, DON'T WASH, mushrooms are porous, they'll soak up water like a sponge) sauté 3-4 min -add 1/4 cup of white wine -salt, pepper, red chili flakes, red cayenne pepper, and oregano for taste. -add goat cheese crumbles at the end. Dairy-free-omit the cheese, not a fan of goat cheese-add couple tablespoons of créme fraíche or mascarpone cheese.
•
I unfolded store bought puff pastry roll (can find in freezer aisle, flattened out as a large square. Cut up in small squares and topped with filling. 
Bake until pastry puffs (375 for 10-15 min) and VOILA, warm, crispy tarts! I made 3 batches and the moment they came outta the oven-GONE 😆

These are my basic foundations creating a nutrient dense colourful fibre containing low carb meal.
Change the protein source, swap the fats, add more carbs to your cooked veg. Do whatever floats your boat. Optimal goal here for me with these food choices is control blood sugar, eat foods which cause no inflammation, a variety of plants, eat good portion of protein, make sure I chew, eat in a relaxed state of mind & be grateful as F*** and celebrate Mother Nature. Zucchini noodles were sautéed in olive oil for extra flavor and healthy fat! The sauce was made from pea protein crumbles, marinara sauce, caramelized onions and loads of Italian seasoning...which makes it epic! Not only healthy, but it took way less time than it would take for standard pasta noodles and beef to cook!
