ROASTED GARLICY NOODLES 🧡
1 lb pasta noodles of choice (I used Long Fusilli)
1 large garlic head
4 tbsp olive oil
1 bunch fresh herbs (like parsley or cilantro) or micro greens
1 tsp salt
1/2 tsp pepper (Optional) .
2 cups chopped oyster mushrooms
1. Preheat oven to 400F/200C. Slice off top of the head of garlic. Drizzle with EVOO (extra virgin olive oil) and season with a pinch of salt and pepper. Wrap in foil and place in a shallow dish.
2. Roast until golden and soft, about 40 minutes.
3. Meanwhile, cook pasta noodles according to directions on package.
4. Once the pasta is done cooking, drain then return pasta to pot.
5. If you would like to add any other ingredients like veggies do this now... I sautéed mushrooms in 1 tbsp EVOO and seasoned with a pinch of salt. Then added them to the pasta!
6. Once the garlic is out of the oven, let cool then squeeze out garlic cloves. Place garlic cloves in a small bowl and add 3 tbsp olive oil. Mash the garlic with a fork to infuse oil.
7. Drizzle all of the garlic oil over the noodles, add a good pinch of salt and pepper, and chopped fresh herbs or micro greens! *also vegan parm is amazing on top too.

Let's shed some light on those non-organic spuds.. Ok enough puns! 😆
There's long been a debate about whether pesticides cause cancer. And whether it's worth our money to buy organic 🌱
A study from Dec '18 in the JAMA (Journal of American Medical Association) looking at almost 70,000 people demonstrated a 25% lower cancer risk in those who ate more organic foods.
So does an apple a day really keep the doctor away 🍎
Let's break it down...
1️⃣ the study was prospective, and shows a correlation (a link) but not causation. This means we can't say for sure that organic food increases the risk of cancer.
2️⃣ there are many other factors to consider:
People who buy organic are usually wealthier, more educated, may exercise more, less obesity, more health-conscious, less smoking etc.
3️⃣ the researchers adjusted for these confounding factors but given there are so many, it can be difficult to accurately say these factors are non longer relevant
- this study indicated a link between pesticides/non-organic food and cancer risk, but it's not a strong enough life to say that pesticides cause cancer.
As such government recommendations won't change.
The recommendation remains to aim for 5 veggies and 2 fruits per day (organic or non- organic). Just wash them before eating!

There’s a lot of things I can’t control (like the current never-ending list of stupid injuries and ailments) but I can choose what I eat.
Now I’m almost settled in our new home, it’s back to basics with good, simple nutrition and focusing on just getting that right.

Food also has the ability to create moments of social connection and personal enjoyment. ⠀
Food's amazing like that and needs to be respected for the qualities it brings to your day-to-day life.⠀
With this in mind, when you eat, give food the full attention it deserves. For instance, get out of the habit of eating lunch at your desk, last time I checked this practice it wasn't enjoyable, resulted in limited social connection and lacked the space to be mindful of the food you were eating. ⠀
Just the same as we need to give food some respect, the same respect needs to be shown for our miraculous body. To do this you need to spend less time with foods that don't respect you or your body's amazingness. You know the one's I'm talking about - the ones that make you feel bloated, lethargic, out of sorts and bad about yourself. ⠀
If you think of your relationship with food as one of mutual respect maybe it will help you make more nourishing choices, give it a go. ⠀

People need to get the extremes out of their mind when it comes to long term healthy and sustainable change
"So I'm hitting 3.0g.kg protein, No Fats, Low Carbs, Training 8 days a week and hitting 20k steps a day"... but mate... why tho! 🤷🏼♂️
Who even wants to live like that And when you start to struggle with sticking to it, you can start to feel like a failure and there's no hope... so let's stop that process before it begins
While you're here lets let's address some of the common questions I get asked
"Should I go Keto or Low Fat" - probably somewhere in between is best
"Should I just do cardio or just lift weights" - probably somewhere in between that involves both is best
"Should I track all my food or just use portion sizes" - Probably somewhere in between so you can match the two is best
Just like water, oxygen and gravity.... too much or too little isn't great for us 🤯
Unless you have extreme goals, then extremes aren't necessary for success... they also certainly aren't fun and you won't be able to sustain them long term
So if you've got a goal, and are thinking about extremes... Don't... you don't need to!
