Spring onions mark my third indoor planting experiment and instead of hours and hours on end of scrolling through videos and articles, I just popped one bulb into soil and see where that takes me.
Thankfully spring onions aren't very picky plants and these guys showed new growth right after being planted 🌱

I’ve struggled with all these for years too so I decided to create an entire Thanksgiving menu of delicious, in-season recipes that just so happen to be entirely gluten and dairy-free, absent of most other common food sensitivities, and minus that turkey, entirely vegan.

First time making tamales and it was easier than I expected! 💃🏻
How are you decide to fill your tamales is up to you some people like to just do cheese and peppers, some do shredded chicken with green sauce others do pork with red sauce. The options are endless. I decided to make a couple of chicken and the rest pork. One of the most important things that you need to know is you need to keep your cooking liquid to use in your masa mixture.
-2 cups of masa
-1 1/3 cup of cooking liquid or water
-2/3 cup or lard or shortening (I used vegetable shortening)
-1 teaspoon baking powder
-1 tablespoon of salt (I omitted this because my broth was seasoned.)
-2 corn husk per tamale
mixed together and let it sit for about 10 minutes. This mixture will make 6 Tamalas.
Soak your corn husk and water for about five minutes, make sure to rinse them off to get any dirt off of them before placing your masa on them. The top of the corn husk is the wider part, flatten your Masa to the corn husk about 3 inches long all the way across and put your filling in the middle. Roll the cornhusk from left to right and then flip the bottom up right placing them in a large pot where they will end up being steamed for one hour.

I love the texture and refreshing flavors of Hiyayakko, or simply Japanese chilled tofu. It's great as an appetizer, snack, or even light breakfast; and it takes no more than 5 minutes to assemble. The essentials are silken/soft tofu, soy sauce, scallion, ginger, and katsuobushi (dried bonito flakes). The rest of the toppings are up to you! (Simply leave out katsuobushi and swap soy sauce for tamari to make this vegan/gluten-friendly)

Autumn calls for salads in different shades of reds. This Kohlrabi coleslaw is the perfect balance of different flavors and textures.
1/4 cup olive oil
1/4 cup lemon juice
1/4 cup coconut sugar
1 tsp salt
With a mandolin, food processor or by hand, finely slice vegetables to form thin long matchsticks.
In a screw-top jar, mix the dressing. Pour over vegetables and serve.

Pretty simple with only a few key ingredients but when their done well you don’t need much.
The chicken itself is marinated for 12 hours and then hand coated and deep fried. The buns are prepared daily in house too resulting in the softest cloud like texture ☁️ Mickey Mouse 🔥

I love stuffing so much because it’s so customizable. You can choose your favorite type of bread, vegetables, meats, and aromatics.
When it comes to the consistency, you want a moist bottom and a crispy top. Remember, you can always add liquid but you can’t take it away.
