With this cooler weather the Farmer’s are delayed in getting many of their crops planted and growing. Every week you’ll start seeing something new from our farmers and my family farm. Next week it’s fresh zucchini and lettuces!

With our local farmer’s market gearing up, we started making this a few weeks ago and are already completely hooked. We’ve been packing it for lunch, eating it at dinner and, yes, we’ve even had it with our breakfast. It’s delicious, bold, refreshing and packed with vitamins.
It’ll take you about ten minutes to make a big bowl of this — it’s a lot of chopping, so put some speed metal on — but you’ll be rewarded in the days to come, as it stays pretty well in the refrigerator (covered). For maximum flavor, you want to dice the vegetables as small as possible.
Prep Time: 10 minutes | Cook Time: 0 minutes | Servings: 4-8
4-6 Roma tomatoes (other types will work, too; use the freshest possible!)
3 Persian or 1 English cucumber
1 medium red onion
1 red or orange bell pepper
1 handful of parsley, chopped (use more if you like parsley)
1/4 cup extra virgin olive oil
Lemon juice (start with ½ a lemon, more to taste)
Salt and pepper to taste
1) Chop the first 6 ingredients into a very small fine dice. The smaller, the better. Take your time and put some good music on.
2) Place in a large bowl and toss with the parsley, olive oil, lemon juice, salt, pepper.
3) Taste and adjust lemon and salt to your liking.
4) Enjoy! Cover and keep in refrigerator for 3-4 days.
Pro-tip: Feel free to add grilled chicken, chickpeas, spinach — heck, anything — to this. It makes a great meal base.

Their variety is astounding, and the dough is perfectly fried. This place is a hidden gem - opened by the Pennsylvanian Dutch locals only Thursday through Saturday, they also bring fresh produce, a pickle bar, a jerky stand, and all the home cooked food you could hope for.
