Remember how a few weeks ago I was struggling with my lunch game Well the great news is, I've mastered classic cheese and herb scones! It's adapted from the Edmonds cookbook basic scone recipe so you know we've started with a good base and I've added lots of cheese, mixed herbs and a bit of garlic powder for extra flavour. And did I mention they're ready to eat in 20 minutes 🤗
3 cups (420 grams) plain flour
2 Tablespoons baking powder
2 teaspoons mixed herbs
1/2 teaspoon garlic powder (optional)
1/2 teaspoon salt
80 grams butter (cut into cubes)
1 - 1 1/2 cups milk
1 cup tasty cheese (grated)
Pre-heat the oven to 220°C/430°F and line a baking tray with baking paper or a silicone baking liner and sprinkle lightly with flour. Set aside.
In a large bowl, whisk together flour, baking powder, mixed herbs, garlic powder (if using) and salt. Add the cubed butter and using a pastry cutter or your hands, combine with the dry ingredients until the mixture resembles coarse sand. Stir through the grated cheese, reserving 1/4 cup to sprinkle on top if desired.
Add the milk (starting with 1 cup and adding more as needed) and stir together until a shaggy dough forms. I use a butter knife for this step - that's the original way to do it and it works really well! You want the dough to hold together but not be too wet. If you accidentally add too much milk, add a little extra flour.
Tip the dough onto the prepared baking tray and use your hands to form it into a rectangle. Cut the dough into 10 evenly sized pieces. You can also make a circle and cut the dough into triangles. It doesn't matter what shape the scones are, as long as they are all roughly the same size. Sprinkle with the remaining grated cheese.
Spread the pieces out on the baking tray and bake for 10 minutes until they are starting to go golden brown. Allow to cool for a few minutes either on the tray or transfer to a cooling rack.
Split the scones in half and spread with butter, jam, chutney or a slice of tomato.
Scones will keep in an airtight container at room temperature for 2-3 days but are best served on the day they are made.

Whole-wheat blueberry lemon scones 🍋 this is what I decided to bake after I bought a huge bucket of juicy blueberries from the store. I borrowed the recipe from @amyshealthybaking because I did not have time for any experimenting 💆🏻♀️I just added more butter and used stoneground whole-wheat flour instead of white whole-wheat flour. High in fiber and low in sugar, these scones are perfect for a healthy breakfast or a snack. Check out her blog for the full recipe!

➕Iced Vanilla Heart Cookies➕
I used a stand mixer. 🖤
Cream 125 g butter & 1/2 cup caster sugar. Add 1 egg and 1/4 of a teaspoon of vanilla bean paste slowly and blend well.
Next add 2 cups of sifted plain flour, (I used spelt flour) mix in slowly until combined. Knead mix lightly on a floured board, once it comes together wrap with cling film & refrigerate for 20-30 minutes before rolling out dough to desired thickness & using a cutter to form shapes. Bake at 180 degrees Celsius for around 10 mins.
Cool on rack and then ice. Mix 1 cup of icing sugar, 3 tablespoons of milk of your choice & 1 teaspoon of lemon juice together until smooth and well blended, add colouring if you wish. 💕enjoy 👌🏽

My pantry was getting a bit crazy, so I threw basically everything into this ‘cake’! It’s a bit crumbly, but tastes beautiful 😁
I used buckwheat pancake mix, coconut milk (from powder), cacao, almond meal, quinoa flakes, baking powder, and some espresso & vanilla essence, then topped with puffed quinoa & choc pieces. Told you there was a lot 😂😛 Plus, it’s quite sweet considering I didn't add extra sugar (though there was some already in the pancake mix & choc bits).

My sister has been requesting some vegan 🌱 baked goods recently, so I whipped up this batch of bakery-style choc chip muffins.
I haven’t had muffins/cupcakes in so long, and I forgot how much fun they are to make (and also how yum they are to eat 😋)
This is the @bakerbynature ‘Healthy Bakery Style Chocolate Chip Muffins’ Recipe. I altered a few ingredients;
🌷 Used the Bobs Red Mill 1-1 GF Baking Flour
🌰 Added some hazelnut meal (because #yum)
🍫Loving Earth Salted Caramel & Mylk Chocolate
🥥 Coconut Sugar instead of Maple
🥚 also tried the ‘YesYouCan’ Vegan Egg replacer instead of normal eggos to make the muffins completely vegan. •
