Mexican Style Rice in a Rice Cooker (Vegan & Gluten-Free)
So easy to make since the rice cooker does most of the work! 😜😋
🔸2 cups uncooked rice, washed and drained
🔸2.5 cups water
🔸14 oz diced tomatoes (1/2 28-oz can)
🔸2 tsp vegetable broth powder
🔸1 onion, diced
🔸1 cup cooked/canned black beans
🔸1 cup corn
🔸1 tsp garlic powder
🔸1 tsp cumin
🔸2 tsp chili powder
🔸1/2 tsp paprika
🔸1 vegan sausage, cut into small pieces (optional)
🔸Chopped fresh cilantro (optional)
🔸Salt to taste
1. Add all ingredients into a rice cooker (I added some cilantro to cook with the rice in the rice cooker, then added more fresh cilantro when it was finished).
2. Stir well so all the ingredients are well-combined and cook according to rice cooker instructions (I used the “white rice” setting).
3. Once finished, mix well and add salt and pepper if desired. Top with fresh cilantro and/or avocado slices and enjoy!

Started my day with Day 4/Week 4 Legs/tris high reps, and wrapped up with 15 mins MIS on the stairs 🥵. Idk if I like a good challenge or if I’m a glutton for punishment doing them damn stairs after high rep legs 🦵👊😆. Either way, had an amazing workout!🔥💪 Hubs and I 💑had a pizza 🍕 date last night, and nope, I didn’t track it. For the first time in awhile, I actually didn’t feel GUILTY about it🙌. Been staying rather consistent this month, and I wanted to share our favorite @biggies_stl pizza 🍕 without worrying how many calories were in it. I’m choosing to get right back on track today, even though it’s holiday 🐰🙏bc I WANT to. That’s the beauty of flexible dieting amiright! Anyway, hope everyone has a wonderful Easter, whether taking a rest day to spend more time with family, tracking, not tracking, eating all the candy or not, whatever you choose to do, enjoy the day! 💜🐰😊

At one point they was to small for me. now I can put both legs in the same pant leg. 😮😮💥 I have a ways to go but this makes me want to see what I can really do 💪🏼💙
