Consistency of tender and delicate flan, this homemade basket tofu blows me away every single time, and I do order it every single time when I visit @kaiseki_yuzu . Pour a little special soy sauce in the dish, add a little green onions slivers, yuzu paste and fresh wasabi, then dip a small piece of tofu that you could manage between the chopsticks, then, let heaven’s creation dance and sing in your mouth! Tonight was their last night of service for awhile. Chef Azeuchi humbly touched every table. We were very happy to find out his plan for reopening, and we can’t wait for what’s to come 🤞💕

FLAN! Need i say more This is the double sized recipe. We always make it double because one is not enough. If you want to make it small split it in half. 😋 You may also notice that Most recipes ask for a whole can of sweetened condensed milk but i do only ½ per portion becauase i find that it's way too sweet for me.
-alright so have your glass dish ready to go Because the caramel part goes pretty quick. Preheat your oven to 350 degrees.
-in a small sauce pan add about 1/2 a cup of sugar And turn on the heat to med-low. Now just leave it. Don't walk away or do anything else because it only takes like 5 min. The bottom layer will start melting and getting caramelized color. Once it's almost all melted you can turn off or lower the heat to the lowest setting and lift the pan a little and move it around so that it all mixes well. I don't suggest mixing with a spoon because it can get pretty sticky. Once its med brown take it off the heat and poor in your dry glass baking dish. Quickly Move the dish around to try to spread ot around before the caramel hardens. It doesn't have to cover the whole bottom because as it cooks it will melt and spread out. Let it cool a little like 10min. -Meanwhile you can be adding your ingredients in to the blender. I usually do 2 batches in the blender like this 3 whole eggs, 2 egg yolks, ½ a can of condensed milk, 1 whole can of evaporated milk, 1 whole can of media crema, ½ a tbls of vanilla extract, and a tiny pinch of salt. Blend everything very well pour it in your baking dish and repeat. -Now you need to bake you flan a baño Maria. You put your baking dish inside a larger baking dish or an aluminum tray. Put it in you pre heated oven and add hot water to larger baking dish/aluminum tray. Now let it bake for about 1hr and 15 min. Check it after an hour, put a fork through middle and it should come out liquidy it should look creamyish. Carefully remove your baking dish from the oven and let it cool.

The most delectable, moist, and luscious piece of cake you'll ever have. It's to die for. This cake is called “kudrit kader,” which means "made by way of a miracle". It is called that because you mix the flan and the cake ingredients in one pan and bake them. The magic happens as it bakes, where the cake layer manages to float to the top, and the flan to the bottom.☄
Begin with a bundt pan or any pan that has high edges and is closed off. You'll need a bundt that can be flipped at the end.
In the baking pan of choice, put 1 cup of sugar and place on the stove top on medium heat. * you can also do this in a pot then pour in the caramel into the baking pan, but this is easier*. The sugar in the pan will begin to caramelize. Give it a stir every couple of min to ensure it caramelizes evenly. It will have a thick consistency and will be golden/amber in colour. Tilt your pan to allow the caramel to spread evenely, then put it aside and allow it to cool down completely.
Meanwhile, make the crème. In a blender or food processor, blend the following:
3 cups milk
1 tsp vanilla
1/2 cup sugar
Zest of one lemon
Put aside and make the cake batter. You may use boxed dark chocolate cake mix, or follow your favourite chocolate cake recipe. To whichever option you use, add coffee! 2 tsps of Nescafe Nespresso melted in warm water works perfectly!
In the pan where the cooled off caramel is, pour in the liquid crème. Then, ladel in the cake batter onto the liquid crème caramel layer.
Bake in a water bath at 350 degrees on the middle rack of a preheated oven. Cake is ready when a toothpick inserted in the middle comes out clean.
Remove and let it rest till cooled down to room temperature, before placing it in the fridge overnight.
Flip onto a serving platter! It should come out easily.
