This is a picture of Alison Knowles, 85 years old, using a sterilized rake to mix together a giant salad. This was part of the performance piece that brought me to Los Angeles. She first created the piece, “Make A Salad” in 1962 and words can’t describe how exciting it was for me to be able to experience its staging in such an opulent space (Disney Hall). By all accounts that I have been able to briefly research, it doesn’t happen often. The last time was a decade ago at the Tate Modern in London.
Briefly, long tables were set on a stage behind a giant tarp (also sterilized). There were microphones set to record the action of 6 others chopping vegetables while Knowles tossed those efforts with lettuce and vinaigrette in rondeau. When it got too full, she tipped it forward for the contents to fall onto the tarp. When there was no more lettuce to be blended, she donned special socks so that she could step onto the tarp to add seasoning, additional vinaigrette, and to take the contents together. Her sous chefs also picked up the edges of the tarp to toss the salad together. .
Then an army of servers arrived to dish out and serve the offerings to the audience. Tomatoes, cucumber, and olives rounded out the offering. And there isn’t enough IG room for me to write more as to how much I enjoyed this.
