We believe we not only need to know where our food comes from but how it is made and what is in it. Transparency above all. Pastificio Boulder starts by milling organic wheat berries into 100% whole flour, then we add Boulder water (believe us, one of the best in the country!) in order to make our extruded pastas. Today I’m working with two inspiring ingredients. To my incredible surprise, I managed to get my hands on Tuscan Kale ( 🇮🇹 Cavolo Nero, 🇳🇴 Svartkål) and the best part is that it’s organic AND locally grown. My plan now is to pair it with a pasta which I’ll make with this stone-milled Spelt flour from @hollimolle , a mill not too far from Oslo which works with a variety of organic grains. Excited!
