Let’s call it Mexican Tofu Stir Fry 🌽 .
Super quick meal - I marinaded cubes of firm tofu in a Mexican spice stir through sauce and the juice of one lime (probably fine without the lime too, I’m just putting it in everything at the moment 🤷🏼♀️). .
Cook the marinaded tofu. When pretty much done add in a tin of corn (or fresh corn even better - this is just what I had on hand). Stir through. I had a bag of 250g bag of stir fry vegetable ‘superfoods’ from woolies and added the whole thing into the pan. Mix through. Ready to eat! .
Easy peasy! .
Would be super tasty with some chicken or beef 👌🏻

Huge fan of this combination of food. Been trying to make it my goal to have a spectrum of colors on my plate whenever possible. Chlorophyll is what gives some vegetables their green pigment which is found to help red blood cell production. As for the bell peppers, Yellow and orange peppers take their color from lutein and beta-carotene. Lutein is found to be beneficial for your eyes and beta-carotene is a precursor for Vitamin A.

Leslie Cerier’s eggrolls made with two tablespoons of cannabis-infused sesame oil are nutritional powerhouses. Cabbage and collards are full of Vitamin C, and goji berries deliver antioxidants. Arame (or sea oak), a sweet, mineral-rich brown algae from Japan, delivers fiber, vitamin A, calcium, and magnesium.
Sometimes Leslie eschews eggroll wrappers and stuffs this filling into pitas or piles it on top of fresh greens. When she’s feeling adventurous, Leslie makes these eggrolls more potent by frying them in cannabis-infused virgin (unrefined) coconut oil. Because the virgin coconut oil has a lower smoke point of 350 degrees Fahrenheit, it won’t burn off THC (which begins to degrade if food is cooked above 350 degrees). 1. Because they last and stay fresh much longer.
2. Because I buy my veggies unpackaged in the fresh produce section to avoid plastic.
3. Because I don’t want to store them in plastic bags or moist paper towels, again because I like to avoid trash
4. Because it looks so pretty when I open my fridge and it makes me want to eat lots of greens.
