Today I did a little bit of meal prep ahead of the weekend. In today’s turnout I made some pasta, bliss balls and granola bars. 😋

Below is the pasta recipe that I had for lunch and with leftovers for lunch the next couple of days. •
Sun-dried tomatoe & Red capsicum Pasta 🍝 •
* 2 (~119 g each) red capsicums * 1/3 cup sundries tomatoes (chopped)
* 2-3 Tbsp olive oil
* 2 medium shallots (finely chopped)
* 4 cloves garlic (finely chopped)
* Pinch of cayenne pepper
* Sea salt and ground black pepper (to taste)
* 1 1/2 cups Plant based mylk
* 2 Tbsp nutritional yeast
* 1 1/2 Tbsp cornstarch or arrowroot powder * 1 packet of gluten-free pasta spirals (or other noodle of choice)
1. Heat oven to 190 C and roast capsicum on a baking sheet until charred - about 25-30 minutes. Cover in foil for 10 minutes to steam, then remove (peel away) charred skin, seeds and stems. Set aside.
2. Cook pasta according to package instructions; drain, toss in a touch of olive oil, cover with a towel and set aside.
3. While the capsicums are roasting, bring a large skillet over medium heat and sauté onion and garlic in olive oil until golden brown and Season with a generous pinch of salt and pepper and stir. Remove from heat and set aside.
4. Transfer sautéed mix to blender with roasted peppers, almond milk, sun-dried tomatoes, nutritional yeast and cornstarch.
5. Blend until creamy and smooth, taste and adjust seasonings as needed.
6. Once blended, place sauce back in the skillet over medium heat to thicken. Once it reaches a simmer, reduce heat to low and continue simmering.
7. Once sauce is thickened to desired consistency, add noodles. Then, toss to coat.
8. Add into coconut bowls with chopped kale for those added greens 🥬😋

Kombucha! A fizzy, fermented tea that's good for your gut! I've been brewing my own, & over the holidays it's been a little neglected so today I started to make a new batch 😊 Here's my go to ratio -
1L boiling water : 1/4 cup sugar : 2 tea bags : a little (1/2 to 1cup-ish) kombucha/starter tea le ft over from last batch.
The tea bags are left in for 15min, then cooled before being added to a glass container the SCOBY (symbiotic culture of bacteria and yeast). The bacteria eat the sugar, so the final product has very little sugar in it. It then sits & brews. Depending on the weather (much quicker in warm weather), it may take a few days up till a week or two until the kombucha is ready (it will taste a little tart). You can then bottle it, & flavour it (2nd ferment) if you choose, waiting another day or two for the flavor to develop before you drink. The one in the video above is blueberry 👌
Just a side note, as I said in my stories, it is bacteria that we're working with, so everything has to be sterilised really well to make sure it's just the good bugs that grow! If you're worried that your SCOBY is mouldy or just not quite right play it safe & start again with a new one ❤

Really, isn't that what ' weekends' are about Yes, sure, for the majority of us, our weekends take place on a Saturday and Sunday but your week might come to an 'end' at any other time of the week. Many.of us in pursuit of wealth,.success.and 'freedom' from.the traditional 9-5 work pattern have begun to let work creep in to every day of our week so that we never fully give of ourselves to the.reason of our existence. Life is our interaction in our relationships with family and friends. Life is indulging ourselves in our interests, our passions, our hobbies, and in discovering the answers to the questions which may arise about our spiritual and religious beliefs. We must be careful not to make dormant these parts of our personalities and characters which make us who we are. Because if we overfeed one area of our life ie work and reduce what we input into the other the result has surely got be ill health somewhere along the line
That's why we say weekend. The crucial word to focus on there is the reminder to END what you have been doing from Monday to Friday and switch it up! When your week of making a living ends, whatever day/s of the week they fall on, the goal is to end making a living for that week.and make time to make a life at the end of it.

In a rather challenging time in my life, around 20yrs old my Dad handed me this book. After reading it, for the very first time I came to see the body & mind as one, and how you can take an active role in your own healing. Man, I still remember how eye opening this was for me at the time!
This little book gave me such practical guidance to get out of my head (where all those crazy thoughts were!) and into my body ~ using meditation. And reflecting back I actually think it also sparked my fascination with the mind body connection.
Anyways, I had kinda forgotten about this book until last week when the author #joanborysenko lectured us. What an amazing woman still inspiring and sharing her knowledgeable with the world today.
For anyone kinda curious about the mind body, honestly give this book a go. It’s a short easy read that gives a practical overview on how to use the mind body connection for healing. And is also great if you want to learn the basics of meditation as a tool to access this deeper sense of self. It definitely helped me with my inner struggles as well as getting a regular meditation practice going. Thanks Dad 🙏🏼

Allergies & Hayfever plague me year round. But since starting with essential oils I have been able to reduce my antihistamine dosage from 4 tablets a day to 2 and I no longer need sinus spray. Occasionally I’ll still use eye drops but only every few days instead of 3-4 times daily!
This simple blend of peppermint, lavender and lemon works wonders. I tend to just use the roll on morning and night but in days that are particularly bad I’ll also diffuse these oils.

Well that’s the Christmas New Year done and dusted and everything returning to the same old. Managed to limit the damage the festive season usually inflicts on me. Went to the doctor and had my annual old man checks and it seems all is going as it should, slightly high cholesterol, but I know I have some weight to lose. Now don’t get me wrong, I think everyone needs to be healthy and take care of themselves but just because you’re not ripped or tall and skinny doesn’t mean you’re not beautiful and perfect the way God made you. I had the hardest time with that. I used to think every day (even when I wasn’t) “I’m soooo fat and disgusting” and totally body shame myself. Not cool. Do I think I’m in my best shape here Heck no but it’s a process and I gotta love myself for changing and challenging myself to be a healthier me.
We can’t compare ourselves to other women. Not in body image, not in self worth and defiantly not in success. We all have our unique shapes, beauty and stories. That’s what makes women so amazing! We are all different and it’s okay to be you and to be who you are. ♥️ #selflove
