🥕CURRIED CAULIFLOWER & CARROT COCNUT SOUP 🥕
✨Roast half a head of cauliflower and 4 large carrot with 2 cloves of mince garlic in the oven for 45mins (stir half where through)
✨move to a pot with 3 cups boiling vegetable broth, add 1tbsp curry and simmer for 15mins
✨transfer to a blender and blend until smooth
✨put back in pit with 1 can coconut milk & juice from half a lime, simmer for another 10mins
✨garnish with parsley & enjoy

É fácil de preparar e você pode encontrar a maior parte dos ingredientes aqui na Veggies & Cia. Fresquinhos e com aquela qualidade que você já conhece.

Bora pra receita.

Ingredientes:
2 xícaras de farinha de trigo
2 ovos
1 gema
2 colheres (sopa) de margarina
½ kg de cebola
1 xícara de queijo de minas
1 copo de leite
2 colheres (sopa) de cheiro-verde
1 pitada de noz moscada
2 colheres (sopa) de amido de milho
Sal a gosto

Modo de fazer:
Amasse a farinha, um ovo inteiro e uma gema, a margarina e o sal. Estenda em uma forma untada. Cubra com a cebola picada.
Misture o queijo ralado, o leite, um ovo, o cheiro verde e os outros ingredientes. Despeje sobre as cebolas. Asse no forno por aproximadamente 30 minutos.

Agora é só se deliciar 😉

Então dá uma olhadinha nessa receita super fácil e deliciosa de Torta Suíça de Cebola. É fácil de preparar e você pode encontrar a maior parte dos ingredientes aqui na Veggies & Cia. Fresquinhos e com aquela qualidade que você já conhece. Bora pra receita. Ingredientes: 2 xícaras de farinha de trigo 2 ovos 1 gema 2 colheres (sopa) de margarina ½ kg de cebola 1 xícara de queijo de minas 1 copo de leite 2 colheres (sopa) de cheiro-verde 1 pitada de noz moscada 2 colheres (sopa) de amido de milho Sal a gosto Modo de fazer: Amasse a farinha, um ovo inteiro e uma gema, a margarina e o sal. Estenda em uma forma untada. Cubra com a cebola picada. Misture o queijo ralado, o leite, um ovo, o cheiro verde e os outros ingredientes. Despeje sobre as cebolas. Je suis personnellement une grande adepte du beurre de cacahuètes. Pas seulement pour ses qualités nutritionnelles (puisqu’il est plein de protéines et autres nutriments intéressants) mais aussi pour son goût à la fois sucré et salé ! 
À lui tout seul il relève un plat ou fait d’une simple tartine un repas de gala !

Je l’adore aussi avec des tranches de pomme... tout simplement. 
Ici, je cherchais quelque chose de fun à manger et de sain (pour ma conscience et mon corps, n’est-ce pas!). Je suis partie pour cela des légumes qui attendaient, dans mon frigo, d’être dévorés ! Et les poivrons doux ont raflé la mise ... Je suis tombée sur une chouette recette de poivrons au beurre de cacahuètes que je voulais mettre dans un wrap. Alors j’ai fait un mixte des deux et ça a donné ce truc improbable et tellement savoureux! Mes filles ont adoré le concept !

SQUASH & CHESTNUT ROAST

This isn't an original recipe of mine, but as @plummergram described it "shits on every pub nut roast". Plus it's vegan, so no guilt.

I also am not a huge fan of food waste, so roasted the squash skin until crispy & added it on top at the end.

For base:
½ butternut squash chopped into pieces
100g shelled pistachio nuts
100g sunflower or pumpkin seeds
100g vac-packed chestnuts
2 tbsp olive oil
1 tbsp maple syrup
Grated zest of 1 unwaxed lemon
Leaves from a small bunch of thyme
Salt and black pepper

For the topping:
2 banana shallots
A head of cavolo nero kale
Thyme leaves
Dried chilli
500g silken tofu
1 lemon

Pop the squash in the oven with oil, salt & pepper. Roast for 30mins.

Put the pistachios and sunflower or pumpkin seeds on a baking tray & toast for 5 mins in the oven, then put them in a food processor with the roast squash, chestnuts, olive oil, maple syrup, lemon zest, thyme & salt & pepper. Blitz into a fine-textured mixture. This can take a while.

Put the mixture into a cake tin & roast for 30-40 minutes.

In a warm fry pan add oil & the sliced shallots until crisp. Add the kale, thyme and dried chilli, then cook for another few minutes.

Whip the tofu with the juice of a lemon and half its zest, salt & pepper. Spoon this onto the nut roast once it's out of the oven & cooled a little.

Add the shallots and greens on top.

FEELING GRATEFUL☺️ I’ve officially graduated from my health coach training program and damn it feels good! Every night, I’ve been writing down (or even just thinking) 3-5 things that I was grateful for that day. Soufflé de Pollo.
————————
150 gr de pechuga de pollo
150 gr de queso rallado ligero
500 gr de champiñones 
200 ml de leche de almendras 
300 ml de agua
4 huevos a temperatura ambiente
25 gr de aceite de oliva
Un poco de sal rosada
Pimienta.

Preparación:

Empezaremos este soufflé preparando la herramienta principal, el horno. Lo precalentaremos a 180º para que esté listo a la hora de recibir este plato. El calor homogéneo del horno hará que el soufllé se hinche y quede perfecto.
Seguimos con los champiñones, los ponemos en un sartén hasta que estén listos con una pizca de sal y las hierbas que te gusten.
En un bol ponemos las yemas y en el otro las claras. Las yemas las vamos a mezclar con la leche. Conseguiremos una de las bases de cualquier soufllé. Las claras las montaremos a punto de nieve.
Seguimos con la pechuga de pollo, la vamos a cortar en tiras muy finitas. 
Mezclamos todos los ingredientes con el queso rallado, el último serán las claras montadas para evitar que se caigan y nos quede un soufflé con menos textura.
Colocamos en moldes previamente engrasados y horneamos a 180º unos 20 minutos. Servimos al momento un increíble soufflé realmente delicioso.
