Just because you’re on a healthy lifestyle does not mean you can’t make a cocktail alternative. Tonight I wanted just to sit in the garden whilst it was still warm and just relax. Even though there was no pool to sit by or alcohol in my homemade cocktail it was still relaxing. 🔑

Try this little recipe that I tried earlier. 1 cup of coconut milk, 1/2 a cup of pineapples, 1 tsp of ashwahgandha and 1 tsp of sesame seeds. It still tasted like a pina colada but with added health benefits and no alcohol. Give it a try and let me know how you find it. 💪🏻👌🏻🚨

🔹️1 Red Pepper 🔹️1 Courgette 🔹️1 packet of 500G mince (we use Beef or Turkey)
🔹️2 Tsb Smoked Paprika

If you wanna nail this recipe at home, here’s what you’re gonna need to know:

INGREDIENTS:

FALAFEL:

2 cans chickpeas (drained)
1 red onion (finely chopped)
Juice of 1 lemon
3 cloves garlic
2 tsp Harissa paste
1 tsp Salt1 tsp Cumin
½ tsp Pepper
½ cup Flour
¼ cup Coriander
¼ cup Parsley

BATTER:

1 cup Plain flour
½ cup Almond milk

CRUST:

1 cup Panko breadcrumbs
Vegetable oil (for frying)

TO SERVE:

Hummus
Salad

METHOD:

1.Put all the falafel ingredients into a food processor & whizz them up into a thick paste.
2.Take a spoonful of the mixture out of the food processor, roll it up into a ball in the palm put on a plate. Repeat this process until all the falafel mixture has been used up.
3.Put the batter ingredients in a mixing bowl & mix them up until you have a creamy, thick batter.
4.Dip a falafel ball in the batter, roll it around in the panko bread crumbs making sure you have a good coverage.
5.Deep fry the balls until the crust is golden brown & really crispy.
6.Serve immediately with hummus & salad. 💚💚

Blends take a max of 2 minutes, and clean up is made simple with two drops of @drbronner and half container of warm water to blend clean. It’s slim profile design takes up little counter space, giving us more room to create (and less to clean! 😅). Our version is the E310.

We purchased our first new at @costco , and started having issues with the motor about 9 months into use. Thanks to Costco’s warranty, we were able to exchange for a new blender that we’ve had for about a month. Purchasing through Costco allowed us this trade in, and also helped save some money off the price of a new machine. The brand is expensive but does it’s best to provide more affordable options, including reconditioned blenders you can buy at discounted prices. .

I NEVER cook during the week, but this weekend was so crazy I didnt have time.

So last night I got home and tried a new recipe, Shredded BBQ Chicken Casserole.

I'm not a fan of BBQ so I only used half a cup instead of a full cup. I also cooked the chicken in a crockpot (it comes out juicer). Other than cooking the chicken, this took 10 minutes to put together. 
One of the easiest recipes I've ever made and actually really good!! You can put it over rice or make a burrito.

Now let's see if the kids eat it for dinner tonight 🤣

Dinner tonight was turkey bolognese, rice & green beans🍛
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I made a big batch of this bolognese at the weekend to keep in the freezer, for 8 portions I used:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1kg turkey mince
4 tins chopped tomatoes
4 large carrots, grated
3 sticks of celery, diced 
1.5 courgettes, diced
3 large onions, diced 
4 reduced salt chicken oxo cubes dissolved in 500ml water
8 cloves crushed garlic
40g tomato purée
mixed herbs
black pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
method:
- fry mince until all white, remove from pan
- fry all veg in batches (or all together if you scale the ingredients down) until all soft and slightly browned
- add everything back to the pan and add the tinned tomatoes, seasoning, tomato purée and stock
- cover and simmer for an hour
served with 1/2 pack tilda wholegrain rice & 80g green beans
