This is a hybrid version of a seed bark @sophiecutler introduced me to (thanks darlin)
It’s from @mynewroots and is yummm in a big way, I could not keep my paws off of it 🤗
Of course though in true Sarah style I was like, why use 1 recipe when you can make it complicated and merge 2! 💁♀️ so I also used @minimalistbaker quinoa brittle recipe as a guide. Love this website for inspiration to make practically everything. The one pictured contains quinoa, so obviously it’s healthy. 😉

And the up-cycled part... a Glass House candle jar. I always save them and use them in the pantry and today they became gift jars.
1 1/4 c. Sunflower seeds
1/4 c. Sesame seeds
1/2 c. Coconut
1/2 c. uncooked quinoa
1 Tsp. Cinnamon
2 Tbsp. Coconut sugar
1/2 c. Maple syrup
2 Tbsp. Coconut oil
Preheat oven to 160 C
Mix all the above ingredients EXCEPT the maple syrup and coconut oil in a bowl.
Line a rectangular baking dish with baking paper.
Melt coconut oil and maple syrup together in a sauce pan over low heat for 2-3 mins until heated and well combined. Then pour over dry ingredients and mix together until it’s all coated and forming sticky deliciousness. Pile into prepared baking dish and spread out in an even layer not too thick. Then pop in the over for 15 mins and then rotate pan to ensure even cooking. Then cook for a further 5-10 mins or until it looks golden and delectable. Allow to cool then break into shards and package in a candle jar, or whatever floats your boat.

Had to have a word with myself last night. I can't seem to get out of holiday mode, foubd the other half of Saturday's mince pie and ate it whilst watching Father Christmas and the Snowman then ate a puffy one and 2 lindor last night. That word wasn't about the eating though, the word was about my guilt. The guilt I felt for having a week not 100% off plan, 3 days of it totally off plan. The guilt of a gain, the guilt of not sharing that gain with you 3lbs btw. The guilt of having a disappointing, uninspiring instafeed. The annoyance I felt for saying no to all the goodies at the Christmas markets yesterday, none passed my lips, not one single bratwurst or boozy hot choc! The word I had was this "you are human, it is Christmas, you are at a healthy weight, you exercise, you are not going to put that 3 stone back on, you do not need to punish yourself". I am a foodie, I occasionally abuse it but @Slimmingworld has totally changed my attitude to it, I no longer use food as a fix. I respect my body a whole lot more and I choose my meals wisely, I look at the bigger picture. So a week or the whole of December is not going to ruin me and if I come out of it 7lbs lighter well it'll be off again by the end of Feb. Lesson, don't beat yourself up if you have a well deserved treat.
That Salmon Bowl!

Feeling so exhausted after a week full of exams! Honestly, so over studying at this point haha. I got a few good workouts in this past week (less than I would have liked, but I'll take it!) and now time for a couple weeks off of the med school grind and a much needed break! Got home and I can tell y'all, nothing beats a momma's homemade cooking 😊 My mom made a pot roast and veggies tonight. She is pretty good with making sure all the meat she cooks with is really lean, but honestly after the week we had, I would eat it either way!
On a less exciting note, I am getting my wisdom teeth out tomorrow 😝 So, I am being forced to take a few days off of the gym. Also, going into the New Year I am getting back to tracking macros pretty strictly again to shed a few #s of body fat before doing a bulk this summer. Grilled Lemon Garlic & Herb Chicken with Chickpea Greek Salad.
3 WW Smart Points
Lemon, Herb & Garlic Chicken
500gms Chicken Breast
Zest & Juice of 1 large lemon
1/4 cup fresh chopped thyme
1 tsp dried oregano
3 cloves of garlic grated
2 tsp garlic olive oil or plain olive oil
1 tsp djon mustard
Salt & Pepper .
I marinaded 4 chicken breasts and then grilled them last night in 1tsp of garlic olive oil.
Serves with last nights salad (recipe is the post before this one)
And that’s lunch done.
This week has also seen me lose -500gms of my Sydney gain.

Zimt, Piment, Speckulatuisgewürz, Kurkuma, Salz
Alles zusammen verrühren, in eine Form geben und 1 Apfel in Scheiben schneiden und drauf verteilen.

Monday motivation 😕
Sometimes, like anyone, I have no motivation to go to the gym. I think there is a belief that if you work in the fitness industry then you must want to train ALL THE TIME. There’s also a belief that you actually have the time to train all the time. Both are untrue. I love to train but there are times when I just don’t feel like it
This time of year can be quite busy. It’s also more geared towards going out and partaking in merriment, as opposed to partaking in circuits. Chatting with one of my clients the other day, I said that I too can find it hard to feel motivated for some of my sessions. I think you’d be pushed to find anyone who was up for every single session, and actually had a good session, every single time they train.
Sometimes your motivation will be sky high, other times it won’t. When it isn’t I find it’s actually habit that gets me to the gym. Once there, generally speaking I enjoy my sessions. At the moment my working hours are quite sporadic, with early starts some mornings, meaning I’m on my feet for the best part of 10-12hrs. On those days I can only train in the afternoon/evening, when my motivation is lacking. It’s wet, dark, cold. I’ve had a long day and going home to watch crimbo films seems much more appealing. But I have my gym kit with me, I’ve got a session planned, so I may as well go. Once I’m there and warmed up, I’m usually much more in the zone. -
Of course there are times when I really do not want to train, so I’ll prioritise other things- sleep mainly 😂 Missing sessions is absolutely fine, and something we all do. Equally lacking motivation to train is absolutely fine, never feel like you’re the only one!
