PEANUT BUTTER BLONDIES
This Peanut Butter Blondie recipe is naturally gluten-free and is sweetened with honey for a healthy dessert. I love that they are flourless, and oil and dairy-free!
If avoiding peanuts, I am sure it would taste good with another nut butter like almond butter – but I have not tried that yet. If you do so, let me know how it goes!
* 1 cup all-natural peanut butter (preferably organic)
* 1/3 cup honey
* 1 whole egg
* 1/2 teaspoon baking soda
* 1/2 cup dark chocolate chips
* 1/4 teaspoon sea salt, plus coarse salt if desired as a topping
1. Preheat oven to 350F and line an 8" or 9" square pan with parchment paper. (Pro Tip: Grease the pan with a little spray oil first to help keep the parchment paper in place when you add the batter)
2. In a mixing bowl, combine the peanut butter, honey, egg, salt and baking soda and stir well, until a thick and sticky batter has formed. Fold in the dark chocolate chips, if using.
3. Use a spatula to pour the batter into the prepared pan, then use it to smooth the top.
4. Sprinkle coarse sea salt over the top of the batter, if desired. (I highly recommend it!)
5. Bake at 350ºF until the top is a light golden brown, about 20 minutes. Let the blondies cool completely, as they are very fragile when warm, then cut into squares and serve.
6. Store them in the fridge in an airtight container, for a firm texture and longer shelf life. 📖 Recipe credit: @detoxinista

Very convenient too have around when feeling under the weather. The ratio of ingredients is up to anyone's taste. I prefer them to be a bit stronger so I put larger amounts of ginger.

Since I’ve been doing the #75hardchallenge, I’ve been following the #ketodiet meal plan. It has helped me lose over 31 lbs. in 57 days. I am really shocked on the results and plan to lose another 10 more pounds. Will I stick with this diet for the long term No. I’m only following this meal plan until I finish the #75hardchallenge and as soon as I am done I will make my alterations. I know there is a lot skeptics out there about the keto diet, don’t want to hear it, all I got say is it’s a good diet for you if you obese or overweight then it would be good. Consult with your doctor as well.

Just super excited and had to share. I have lost 7lbs in the last 2 months. It was an early day at work so I went grocery shopping... I had to cut the shopping short as I realized I was soo hungry I was starting to get shaky.. grabbed a roasted chicken and chopped up some mini cucumbers and lunch was about 4 points... the cucumbers and chicken breast would normally be #zeropoints but I did sneak some of the yummy rotisserie chicken skin 🤤

Shoutout to my client Jasmine. During a 30 period she was able to lose 15 pounds!
She lost a majority of this weight 10 pounds before adding any exercise to her regiment.
She reported with just the detox alone she was feeling better in multiples areas. She felt bloating in her stomach reduce tremendously.
She lost inches off her stomach. Her arms shrank and her neck and face slimmed down.
For all my people out there just want to lose about 20 to 30 pound. Just changing your nutrition can have big effect in a short amount of time.

@veganblisslv is the newest Plant-Based Eatery in town. They took over the space where Blinders Burgers and Vegeway North were located. They kept pretty much the same menu that Blinders used to serve but they’ve made a lot of improvements and I am so happy they are in town! Everything that I have tried here has been spectacular. The customer service is also great. They are very friendly and I must admit that I’ve never had to wait as long for my order as I did with Blinders.
They serve several different types of burgers and you can choose your patty (Beyond Meat, Veggie Patty or Dr. Praeger’s Patty). They also serve “Not Burger” options which include The Knockout made with Pulled No Pork, The Brat made with Beyond Bratwurst, a Chipotle Chicken Sandwich and my personal favorite the No Bacon BLT. It’s to die for. Seriously! They also have breakfast options which include the Breakfast Roll Up, Mornin’ Muffin, Monster Burger, Buffalo Bites, Pancake Bites and Banana Bread French Toast. They even have a kids menu.
You can check out their website to view the entire menu with pictures. Vegan Bliss also delivers through Grubhub and in a couple of weeks you will be able to order from their website for pickup orders at the pickup window.
I can’t say enough about Vegan Bliss, the staff and the food!! Go check them out if you are in the Northwest part of town. They are located in Centennial Hills on the corner of Centennial and Durango.

THAI LETTUCE WRAPS
1 lb. ground beef (I like to use 90/10), or swap ground turkey or chicken
1 head butter or bibb lettuce
1/4 cup raw cashews
1 tbsp sesame oil
2 cloves garlic
1/3 cup coconut aminos
1 tbsp grated fresh ginger
1 tsp. chili garlic sauce (or sub regular compliant hot sauce and a dash of fish sauce)
1/2 cup sliced green onion
salt & pepper to taste
Brown the beef in a large pan over medium heat until no longer pink, then drain the excess grease. In a separate bowl, whisk together the coconut aminos, ginger, garlic, sauces, and seasonings, & pour over the beef mixture and cook together for 2 minutes. Just before serving, stir in sliced green onions (I like them mostly raw, but if you prefer them softened, add earlier on). Serve with cauliflower rice, sliced avocado, slices of lime, cilantro and cashews with the lettuce leaves ready to assemble. .
COCONUT CAULIFLOWER RICE
1 head of cauliflower
¾ cup dried coconut flakes (be sure no sugar is added)
½ tsp salt
1 T. lime juice
1 tsp. Lime zest
Wash the cauliflower and cut it into small bite-sized pieces. In batches, add them to your food processor or blender and pulse until they break down to the consistency of rice. Lay the cauliflower on a large tea towel or cheesecloth and squeeze out any extra moisture over the sink or a bowl. Add the coconut flakes alone to the blender and pulse until broken down a bit smaller than grain-sized. Add the coconut & cauliflower to a pan together and sautee over medium heat until the coconut begins to toast, stirring occasionally. It usually takes about 5 minutes. Stir in the salt, zest, & lime juice.
