Vegetable fried ‘rice’😋
Cauliflower rice and lots of random veggies I added! I try to get as much color on my plate as possible
I cook the riced cauliflower in the microwave for 3 minutes to soften it then finish it in the skillet with coconut oil, veggies, and spices of choice:)

How was your Monday
I went to Speech Therapy today. It was a good day. I practiced some math problems. It’s weird doing these types of problems again... and it’s a little embarrassing how hard this is now. Lol. At least I’m hopeful that these will get easier.
Today I “cheated” on my “clean” eating diet. I went to Panera Bread. Sometimes you don’t have time to eat at home. I made do with some butternut squash soup and their Green Goddess Cobb salad with chicken. They were both so tasty! I recommend!
This afternoon I did 4 tricep exercises with 4 sets each and I biked 12-13 miles in an hour at the gym.
I’ve got a busy week ahead. Is anyone doing anything fun

I had a wicked killer leg day yesterday! This account is really inspiring me to switch up my workouts and wowza it’s making me really sore. If you wanna really feel a burn give this workout a try! 💪🏼💕🌱
