Sichuan Chicken & Cashew Stir-fry 🥢
Based on @fuchsiadunlop prawn & Cashew recipe, but used juicy chicken thigh fillets instead.
Velveted the sliced 3 chicken thigh fillets in a 1tsp cornflour, 1tbsp soy sauce & 1tbsp shaoxing rice wine for 39 mins, which makes it incredibly tender.
Fried off crushed Sichuan peppercorns, sliced garlic & ginger in veg oil in a wok for 30 secs, then added the chicken in a single layer on the pan until browned one side then flipped over. When browned all over, I added 2 sliced ribs of celery, a handful of toasted cashew nuts and 5 deseeded halved dried chillies. A splash of water to soften the veg and steam the chicken.
The sauce added was 1tbsp Sichuan chilli bean paste, 1tsp cornflour, 1tsp soy sauce, 1tsp shaoxing rice wine, 1tbsp chinkiang black vinegar, 1tsp caster sugar and about 50ml water. Poured this over the chicken and mixed until simmering and heated through. Stirred through sliced spring onion and it's done 🤤 serve with rice 🍚

Fresh tomato, chilli and spinach gnocchi 🍅
The cherry tomatoes in this are sweet and almost gooey, yet the whole dish tastes so fresh. Perfect 👌
I made my own gnocchi this time, but if you’re short on time then use the shop bought stuff for dinner in an actual FLASH!
What I used:
100-150g flour (judgement call required based on stickiness!)
Cherry tomatoes (on the vine looks fancier but I think any will do)
1 fresh chilli
2 cloves of garlic
Salt and pepper
What I did:
Peel the potatoes and pop them on the hob to boil. While you wait, get the tomatoes in a roasting time with a good coating of olive oil, finely chopped garlic and chilli and sprinkle with salt and pepper. Pop them in the oven to do their stuff.
Once the potatoes are soft, use a slotted spoon to take them out of the water and leave on a board to cool. Once cool enough to handle, mash finely (I use a ricer to get rid of the pesky lumps) and sprinkle over the flour. Mix together with your hands, don’t be afraid to get messy, and knead until pliable and doughy. Roughly split into 4 or 5 balls and roll these out into sausage shapes a few cms wide. Cut into gnocchi shapes, an inch or so long. Pop them into a pan of boiling water (i do half at a time) and wait for them to pop up to the top.
Wilt a few large handfuls of spinach and take the tomatoes out of the oven. Mix the wilted spinach with the tomatoes, spoon over your gnocchi, grate some Parmesan and enjoy!
