Cold winter days are meant for soup 🍜🙋🏼♀️. Today we’re in the mood for something SPICY🌶 to heat 🔥 is up and this tom kha (thai coconut soup) from @lindseyeatsla fits the bill. It’s filled with mushrooms, coconut milk, galangal, lemongrass, and kaffir lime leaves. Video + recipe (below) by @lindseyeatsla.
2 cups coconut milk
2 cups vegetable or chicken broth
1 thumb chunk of galangal
3 stalks of lemongrass
1 big white onion (or 2 small white onions)
6 kaffir lime leaves
1-2 cups of oyster mushrooms
5-6 thai chili
½ teaspoon salt (to taste)
1 tsp fish sauce (optional)
4 tablespoons of lime juice
1 tsp chili paste (optional)
chili oil and salt to taste
small bunch of cilantro
In a pot, add your coconut milk, vegetable broth, galangal, lemongrass, kaffir lime leaves, thai chiles, salt and fish sauce. Let simmer. Add your onions and mushrooms next. Mix well and let the mushrooms and onions cook, about 15-20 mins. Top with lime juice at the end, chili oil and cilantro. You can add shrimp or chicken as well, and also I sometimes like to add tomatoes!

💪I have Rheumatoid Arthritis and my Doctor says “strength training” is great to do. It builds your muscles and helps support and protect joints that are affected by arthritis.
_💪 Your instinct may be to protect your joints by limiting your movement, but motion is lotion. Make it a habit, and you could have less pain. It also helps you move better. That will allow you to do activities that may now be tricky for you.
_💪For me I do a lot of body weight only exercises. And I get a great workout. And on the recommendation of my Rheumatologist I only strength train twice a week Why Because for me there was a point of “overdoing” it and getting pretty severe tendinitis.
_💪This has always been a marathon—not a sprint. So I obey my doctor and I get in two great days of resistance training a week. Check with your doctor and see what he/she recommends for you.

Y’all, just keep moving forward. We let so many things hinder our performance that we shouldn’t. Fear, anxiety, depression all fall into play. Early this morning I had an allergic reaction to Marijuana. Yes you can be allergic it is a plant. Today halts a lot of extra activity as my lungs are not working properly from the reaction this morning. I have MCAS.
