My New Sassy Molassey Caramel Ginger Chews!
I made these the night before my spine injections.
I'm hurting bad today but they say it will take a few days. I had to get in the kitchen & cook before who knew what was going to happen. Gonna keep fighting to walk again... Hinsel & I made them together & I had fun watching him eat one then another then another!
It here took some work & I was going to just make my grandma's molasses cookies but I decided to change them up.
I minced up by hand about 1/4 cup cystalized ginger but use the food processor or your choice I just chopped them in tiny pieces & used the back of a hot silver spoon to mash them. I cooked the ginger in some golden brown sugar, granulated sugar & honey,. when it gets bubbling I add butter & cream nutmeg & ginger & importantly 1/2 tsp kosher salt & cook it to just under a soft ball stage just barely & take it off the heat add vanilla extract. If you pour a little in cold water it will ribbon on top of its self & the water won't get cloudy you can pick it up out of the water but it kind of is really soft caramel.
You pour this cooled caramel into the dough at the end after the flour. You won't see the streaks of caramel but you bite into this chewy surprise in the cookie they are Sooo good. Crispy just on the edges & bottom with gooey chewy centers!
Oh, I roll these in a mix of granulated sugar & raw coconut sugar that's what the darker flecks are...it gives the molasses even more depth & crunch on the outside...ive eaten too many already!

Almost anything can be made into something that is healthy. They said I should not drink coffee but coffee enemas were ok. I chose not to do that. Instead I boost my coffee into a super coffee. Using the Brain Buster recipe as my starting point...
Coconut oil and
Red palm oil
Black seed oil which they say is good for anything but death.
Electrolytes which my body dumps like crazy
Cayenne pepper to rev up my system and it keeps my temperature up to normal levels
Cinnamon which helps with blood sugar problems
Molasses helps to keep my potassium levels up as coffee is a non potassium sparing diuretic
All of these separately taste horrid but together and covered with a strong cup of JOE I can take them.
So each morning I can start my day feeling good that I started it with a bang already defeating CANCER!
