Into the lasagna they go! I also added carrot tops and a few small pumpkin leaves to the courgette/onion mix. Vegan Mac 'N' Cheese
Ingredientes:

Dilua o amido de milho na água e ponha na panela. Acrescente o sal, a pimenta, a páprica e o nutritional yeast. Mexa até que fique com uma textura mais grossa. Jogue a massa e está pronto!

Preparation: Roast the hazelnuts for 10 minutes at 180 degrees without removing the skin. Allow to cool and mix the other ingredients to a homogeneous mass using a kitchen machine.

1 tsp paprika
1/2 tsp salt

Bake on 450 until crispy, turning once. Total of about 30 mins

Crispy Savory Sweet Potato Fries!! Sometimes we all just want a different "Fry" or "Chip" on our plates. Tonight was one of those times for me. The trick to crispy Sweet Potato Fries is in the CUT! Thin is your friend. Slice on the wide axis, then lay flat and make several slices out of each half. Then cut these into thin slices. *The thin slices will crisp up better than wide*. Put all fries in a bowl, add couple teaspoons of olive oil. For savory fries, I shake dried rosemary, onion, cayenne and garlic powders. Also black pepper and some salt. **Careful not to over salt at this point..cause the fries will give up a lot if moisture as they cook...and can become over salted**. Lay out in a tray with parchment paper, cook at 425F for 25 minutes. Flip..cook another twenty. Check along the way..and taste test the super thin ones that are crisp before the others. At this point l will cook in continued 5 minute intervals, tossing each time..till they are crisp and done. Remove from oven...taste test..add more salt and pepper or cayenne. I douse mine with hefty portions of nutritional yeast for extra savory depth! Also, l mix some organic ketchup with a little Dijon and a local siracha style sauce. Time to DIG IN and ENJOY!! .

Lay out in a tray with parchment paper, cook at 425F for 25 minutes. Flip..cook another twenty. Check along the way..and taste test the super thin ones that are crisp before the others. At this point l will cook in continued 5 minute intervals, tossing each time..till they are crisp and done. Remove from oven...taste test..add more salt and pepper or cayenne. I douse mine with hefty portions of nutritional yeast for extra savory depth! Also, l mix some organic ketchup with a little Dijon and a local siracha style sauce. Quick n easy Sunday lunch.

Chickpea fritters
Can of watties Moroccan style chickpeas
1 cup GF self raising flour
1/2 cup Psyllium ground
1/2 cup nutritional yeast
1 tspn garlic powder
Salt n pepper

Simply whisk all ingredients apart from the can of chickpeas. Once the mixture is nice and smooth, mix in can of moroccan chickpeas.
Shallow fry w avocado oil.
Makes 10 fritters

Served w carrot salad and side of potatoes.

Carrot salad
3 medium carrots grated
1/2 a cucumber
1/2 red capsicum 
3 yellow tomatoes
2 heaped Tbspns zenzo aioli (vegan)
1/2 tspn mandarin rind finely grated
Juice of 1 plump mandarin.
Salt n pepper

Mix all ingredients and serve.

Finally eating dinner after a super long but fun day!
I worked from 8am until 2pm today, then picked up my best friend (who is home from Penn State this weekend), took at speedy shower, and headed off to the local orchard to pick pumpkins with a whole group of friends and my boyfriend. We took a lot of funny pictures (to come later once my roommate sends them to me from her camera) and ate some baked goods. I got some really yummy gluten free molasses spice cookies... yeah, I know I'm literally a grandma 😂 We also played with really cute goats! Then I drove my bestie home and came back to my apartment to whip up a quick meal of leftover slow cooker chicken, lots of steamed veggies, a whole bag of microwave rice, and plenty of nutritional yeast sprinkled on top!
One of the greatest parts of recovery is being able to actually be present and have fun. Being able to let go of control, enjoy some spontaneous treats, and make memories with your friends. That is a big part of what makes recovery worth it!
