Avocados take longer to ripen when it's cold. Keep them in the box with the lid closed and they'll ripen up quicker. Just remember to check on them often so they don't get too ripe! Once ripe, put them in the fridge and they'll be good for about a week. 🥑

ever do breakfast for dinner realistically it’s probably on the menu 1/3 of the week for evenings that i’m busy af. it isn’t always pretty but it’s always good
1/2C egg whites, sautéed mushrooms + zucchini, roasted sweet potato (washed, dried, cut into cubes. toss in avo oil, black pep + garlic, bake @ 375 for 25 min, flip and put in for another 10 min) mashed avo w/ lime + hemp hearts + organic ketchup

I’ve made this a couple times now and OMG is it aaaamaaaazinggggg. Seriously. It’s pretty much cereal. I LIVED on cereal as a kid- honey bunches of oats and Life cereal were my faves, but really anything that was granola-y I’d devour. And I mean, like, 3 huge bowls of it for breakfast.
Buuuut I don’t eat cereal anymore for a number of reasons- first, almost none is made with health-friendly ingredients (sugar, wheat, grains that are not prepared correctly, unpronounceables…), ingredients that are grown in totally unsustainable ways, and plastic in the packaging (I avoid buying plastic as much as possible).
But this….is like being a kid all over again! It’s acorn meal (acorns that I gathered, ground, and processed myself, so harvesting methods are sustainable to the Earth, and connecting and healthy for me!) that I first lightly boiled in water to thicken slightly. Then I allowed it to cool, and mixed it with clabbered raw milk (vs unclabbered milk because I like it to be a little thicker- clabber is between liquid milk and yogurt in consistency), enough that there’s just a bit more milk than acorn meal, as you would with cereal.
Then I mixed in @_healthforcesuperfoods Vitamineral Greens powder, hence the color 😅 and topped with a TON of cinnamon.
Unpictured are my other toppings- I kinda treat it like a yogurt or smoothie bowl in the way I have fun with toppings🙃 Things like pumpkin seeds, berries, roasted cubed sweet potato, little maple syrup or honey, peanut butter…..yum.
I’m out of acorn meal now, so I’ll have to wait until the Oaks are ready to share their harvest before I can have this delicious meal again ✌️

Seedy paleo chicken tenders
1/2 cup @bobsredmill almond flour
1/2 cup hemp seeds
1/4 cup sesame seeds
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon @primalpalate adobo seasoning
Salt and pepper to taste
2 @vitalfarms pasture raised egg
1 @butcher_box organic chicken tenders
Set up your dipping stations: 1. chicken tender 2. whisked eggs 3. Seedy breading. Season with salt and pepper. Dip each chicken tender in the eggs . Add the chicken strip to the hemp mixture, and gently toss until the chicken strip is completely covered. Remove and transfer to baking sheet. You can either bake them at this point or air-fry them like I did. Drizzle with @primalkitchenfoods ranch! 💁🏻♀️💯
•Pair with air-fryed sweet potatoes:
Wash and dry sweet potatoes. Slice into wedges or fries (the thinner, the crispier). Spray potatoes liberally with @primalkitchenfoods avocado oil spray or drizzle with avocado oil. Season with salt and @primalpalate BBQ rub or Adobo seasoning. Place in air-fryer. Cook on “fries setting” flipping fries halfway through to ensure they fry evenly. (My air-fryer’s settings: 390 F for 16-19 minutes). Times vary. Dip them in @primalkitchenfoods spicy ketchup. Pair with green salad and avocado. Enjoy with a side of basketball 😉🏀
Loading up on TACOS! 🌮 Veggies for me, all the meats for Jared. You can’t go through a TX trip without a few doses of tacos and these ones are on POINT. The dream. 💯. The real DEAL. Wrapped up in the best fresh corn tortillas I’ve ever had (locals, you can buy them raw to cook at home too which we did last year and YES.) wild boar/venison, local and organic ingredients, all so good. @faregroundatx is such a great spot, we went last year and were the only people there 🤷🏻♀️ but this year it was bustling and 👌🏼. My FIL has a ramen bowl 🍜 that was divine, there are pastries from @easytigeratx, and soft serve from @contiguous that Jared got too. .
♻️ I was bummed I didn’t bring enough to go ware when we arrived cos it looked like everything was disposable but it wasn’t 👆🏼, and aside from pots of salsa I didn’t know would come on the side, everything was commercially compostable with a compost bin inside the area. Broke my 16 hour fast with my superpower oats this morning 😍
I had dinner at 6 pm last night and my first meal today at 10 am. I absolutely love Intermittent Fasting this way, as it gives my body enough time to fully digest my food and then some more time to go through a natural detoxification process, where it can get rid of dead and dying cells and produce new ones most effectively. I can also sleep better and walk up with more energy than ever before, so it’s a win win!!! 😊⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here’s how I made my superpower oats 👇🏼⠀⠀
What you need:⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1/2 cup gluten free rolled oats ⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1 egg⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1/2 cup raw almond milk or the milk of choice ⠀⠀
* 1 tsp. ground flaxseed⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1/2 tsp. cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1/2 ripe banana mashed up⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1 Tbsp. blueberries⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1/2 banana⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1/2 chopped apple ⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1 Tbsp. sliced almonds ⠀⠀⠀⠀⠀⠀⠀⠀⠀

1) Mix all ingredients together in a pot on the stove, turn to medium high heat.⠀⠀⠀⠀⠀⠀⠀⠀⠀
2) Cook, stirring frequently, until mixture reaches normal oatmeal consistency and the egg is no longer runny. This will take about 5 minutes.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Let it sit for a few seconds, top with all the good stuff and enjoy💃🏻⠀⠀⠀⠀⠀⠀⠀⠀⠀

My mushroom and herb pasta salad is what’s for lunch... and dinner! This is one of my favorite meals to prep ahead of time when I know I have a busy week ahead. I store it in a large container in the fridge, scoop when I’m hungry and go! Here’s the recipe below. Enjoy.
Mushroom & Herb Pasta Salad
Yield: 8 servings
3 cups organic pasta of your choice (cook according to package directions)
4 cups crimini mushrooms, cleaned and sliced thin
1 cup grape tomatoes, halved
1/4 cup fresh flat leaf parsley, minced
3 Tbsp chives, minced
3 large cloves garlic, minced
3 cups organic spinach, chiffonade
2 shallots, small diced
1 Tbsp truffle oil
1/4 cup olive oil
1/2 cup white wine (I used a Chardonnay)
1/4 cup #vegan parmesan shreds (I looove @followyourheart brand! Or use real parm if you’re #vegetarian)
1 tsp cracked red pepper flakes
Salt and Pepper to taste.
Cook pasta and toss in truffle oil. Set aside to cool.
Pour olive oil in frying pan and sauté shallots on medium heat until translucent.
Add garlic and chili flakes and cook 3 min.
Add white wine and simmer on medium/low until liquid is reduced about 2/3.
Add mushrooms and toss them in the sauce. Cook for 8 minutes on medium.
Taste and season with salt and pepper as needed.
Toss with parmesan, spinach, herbs, pasta, and halved tomatoes. Chill and serve!
