Let me explain: there are 6 types of vegetarian.
1. Vegans - who eats only vegetables and fruits. 
2. Raw vegan - who eats only vegetables and fruits but not cook them. 
3. Lacto vegetarian - who eats vegetables, fruits and milk. 
4. Ovo vegetarian - who eats vegetables, fruits and eggs. 
5. Lecto-Ovo vegetarian - who eats fruits, vegetables, eggs and milk. 
6. Pescatarian - who eats fruits, vegetables, fish & seafood.
So basically, I am a Pescatarian, who eats vegetables, fruit and sometimes I eat fish and seafood since I still need some protein and I don't like to eat tofu and soy. 
Why I choose to be a vegetarian? I want to avoid killing animal in the industry. 🙏

I had the Seafood "Mariscada" and I absolutely loved how fresh and well-cooked the seafood was. Asked for a tomato sauce instead of the original white butter sauce (which they accommodated). That simple but delicious tomato sauce was the perfect complement to the seafood. I definitely enjoyed the daily special of creamy lush scrambled eggs with sweet scallops immensely. I look forward to dining here again.

Crabbers are restricted to remove only one of the two #claws and return crustaceans to the sea unharmed where the limb is quickly regenerated. Seeing a super cool #octopus sand sculpture on my beach walk made me crave some tentacles, and I'm a big fan of the Greek inspired dish my server brought me. Shrimp and Asparagus Skillet is a quick and healthy one pan meal loaded with fresh citrus flavors.

INGREDIENTS
1 pound shrimp peeled and deveined 16/20 count size
½ teaspoon kosher salt
¼ teaspoon black pepper
3 tablespoons extra virgin olive oil divided
1 tablespoon lemon juice
½ teaspoon lemon zest
1 tablespoon minced garlic
¼ cup chopped shallots ¼ -inch dice
1 pound asparagus spears 3 cups cut spears
1 cup baby tomatoes cut in half
Lemon wedges for serving

DIRECTIONS
1. In a medium bowl combine shrimp with salt, pepper, 1 tablespoon olive oil, lemon juice, zest, and garlic.
2. Trim off the tough bottoms of the asparagus, and then cut into 2-inch spears.
3. Heat a large 12-inch skillet over medium heat, add 1 tablespoon of olive oil.
4. Once the oil is hot, add the shallots, stir and cook until tender and fragrant, 1 minute.
5. Add the shrimp in one layer to the pan. Cook for 2 minutes, not moving the shrimp.
6. Flip shrimp over and cook until just cooked through 1 minute. Transfer to a clean plate.
7. Add 1 tablespoon of olive oil to the pan. Once hot add the asparagus spears and saute until crisp-tender, 3 to 4 minutes.
8. Add the tomatoes and saute for 1 minute.
9. Add the shrimp back to the pan, cook until warmed through, 1 minute.

Bay Shrimp Salad served on cucumber slices can be on the table in 15 minutes as an appetizer or a light lunch.

Stir together a batch of the shrimp salad in advance to refrigerate for up to three days in advance of hosted events. Then you just have to slice up the cucumber and spoon on the salad.

Bay Shrimp Salad on Cucumber Slices
1/2 pound Bay Shrimp (250-300 count)
2 celery stalks, cleaned and fine diced
1 Whole30-compliant dill pickle, diced
1/4 cup Primal Kitchens mayonnaise
1/2 lemon, juiced
Salt and pepper to taste

Add all ingredients into a bowl and mix together. Spoon onto cucumber slices and garnish with salt, garlic and onion seasoning blend (optional). Serve.
