One of my top 5 fav ✨ Thai coconut curry cod 🐟 SO YUMMY! (4 servings) •Preheat oven to 180*C. Spray oven dish with coconut oil. Whisk together 3/4 cup coconut milk & 3tsp of Thai red curry paste, salt & pepper. Place cod in dish with broccoli & green onion. Pour sauce over fish & veggies. Cover with foil & bake for 25 min. Top with fresh cilantro, chili flakes & lime slices 💥 🌶

After they are nice and clean rinse them off and then do what you will. When I juice I typically just toss the whole thing into the juicer except for seeded stuff like mangos and cherries.

Cajun Prawns with Avocado Salsa 🍤🥑🍅🧅

For the prawn marinade:
- 300g raw peeled and de-veined prawns
- 3 tbsps cajun seasoning - 1 tbsp minced garlic
- 2 tbsps paprika
- Salt to taste
- Black and white pepper to taste
- 2 tbsps olive oil

For the avocado salsa
- 1/2 red onion
- 1/2 large avocado - A handful of cherry tomatoes - 1/2 of the juice of a small lime
- 1 tsp of olive oil
- Salt to taste - 1 tbsp of coriander •

Method 🥣👩🏾‍🍳
- Marinate the raw prawns with all of the marinade ingredients, and leave for 30mins-1hr. If you can, marinate overnight for better flavour. - Heat a large pan with a little oil on a medium heat. Fry the prawns for 3-5 minutes on either side depending on size, or until they are a translucent pink colour. Be careful not to over cook them, as you will be left with rubbery prawns. - For the salsa, combine all the ingredients and mix well. Prepare the salsa no longer than 30 minutes before serving. - Serve with cooked quinoa, or if you want a lower calorie meal, skip the quinoa. It’s just as delicious without it! 11 points with the quinoa, 6 points without it on the #wwblueplan

Salmon with coconut and cashew cauliflower rice 
2 tbs coconut oil
1 onion, finely chopped
1 cinnamon stick 
300g frozen cauliflower rice 
1 tsp each ground cumin
1 tsp ground turmeric 
1/4 tsp dried chilli flakes
400ml can coconut milk
1/2 cup water 75g roasted cashews
2 salmon fillets
Put 1 tbsp coconut oil in a pan with the onion and cinnamon stick, soften for 3 mins. Add the spices and cauliflower rice and mix well, cook for 2 mins. Add the coconut milk, water and cashews. Simmer for 12 mins. Meanwhile put 1 tbsp of coconut oil into a pan, cook the salmon skin side down for 4 mins and then 3 mins on the reverse, take off the heat and rest the salmon until the rice is cooked. Out of the oven....My Whole Snapper Fish cooked at 200c for 15 minutes in my @authenticpizzaovens Maximus wood fired oven and was delicious. Wood fired ovens aren’t just for pizza! 😉🔥

strain the milk until there are no lumps left🥛
