Wine Barrels: Part 28
Today, most French oak barrels are designated COF, or Center of France. This designation signals that the oak wood used for construction, has been sourced from multiple forests. French law also allows inclusion of a small percentage of oak wood harvested in western Germany, in COF barrels. This makes sense, as the two countries share forest land on either side of the border.
A more precise way of describing the location of the French oak forests, might be “north central”. This description more accurately reflects their location, in relationship to the Allier/Limousin forests: the oak forests span to the northwest (Jupilles), the north (Fontainebleau), and northeast (Vosges). In the not too distant past, a cooper most often relied on oak wood, sourced from forests in close proximity to the cooperage. From a logistical perspective, it was easier to purchase, and ship oak wood shorter distances.
Today’s French oak wood market allows the cooper to purchase wood, from across the country’s forests.
This benefits the cooper, and the winemaker, in numerous ways.
Each oak forest in France is subject to variability in the quantity of trees allowed to be harvested, in any given season. This means the price of oak wood, from each forest, can fluctuate considerably. By sourcing oak wood from multiple forests, the cooper can manage the cost of raw material to a greater degree. This means they can (in theory), keep their price more competitive with COF sourcing, versus sourcing wood for single forest origin barrels.
Each of France’s oak forests are known for both average grain thickness, and sensory character (flavor/tannin/aroma). Blending wood from multiple forests, may allow the cooper to achieve a more complex, broader flavor profile, than any single forest might offer.

Organic viticulture has become something of a catch cry in the modern wine world, but never have I seen a more profound statement of its impact than in Eric Rodez’s magnificently positioned vineyards of 6.5 hectares on the glorious mid-slopes of Ambonnay. Standing on the edge of his rows of vines, he showed me tiny, sparse bunches. In the very next row, not more than a metre away, his neighbour’s vines were loaded with full-sized bunches. The fanatical approach of this eighth-generation winegrower permeates every detail of his work, which embraces vinification in barriques, light dosages and a colossal resource of reserve wines spanning 20 years. The aspiration is to let the salty minerality and generous expression of one of Champagne’s greatest grand crus sing through every cuvée. And sing they do.
