It turns out dairy and I are not friends.
I’ve been on an exclusion diet for the last 3 weeks. Mainly because I was so fed up with topical steroids not working and my face flaring severely 🐷. I did this using #radiant book @mygoodnessrecipes because I wanted to test if gluten, eggs, dairy, sugar etc were contributing to my skin not settling.
On Thursday I went for a fancy dinner 🍾 and had dairy 🐮 (and yeh it was delicious...but ultimately not worth it even though I could have rammed 4 of the rhubarb and malt ice cream in my face happily ☺️) - within an hour of coming home by skin was red, itchy and I had an allergic rash on my neck. First photo pre 🥛 , one hour after and the last picture is the next day.
Allergies are so complex. As atopic people, we often have allergies (hay fever etc) but annoyingly eczema isn’t usually due to just one thing. It’s more complicated than that and we can react to stress, heat, dust, pets as well as food. We’re hypersensitive so ‘true’ allergies are relatively rare although sensitivities are common. No easy answer! Removing foods from your diet can cause other problems, especially children (please see your GP to discuss). For me, the exclusion diet has shown I’m sensitive to dairy. So I’m cutting it out. Calcium, protein and fats are abundant in green veg, pulses and nuts. 🥑🥦🥒
I’m going to look into allergy testing after my trip - again a controversial area which often creates more questions than answers. But I’ll let you know what I find out.
The food I’ll most miss - Ben and Jerry’s cookie dough ice cream, Stilton at Christmas with chutney and grapes, halloumi on the BBQ - but I prefer my face not looking like a 🍅 much much more 💕

Chia seed pudding for the A.M. Quick, decent source of protein and can be topped with nuts, fresh fruit etc. 😊😊
Recipe is 1 portion:
3 tablespoons chia seeds
1 cup non dairy milk
1/2 teaspoon vanilla extract
1 tablespoon maple syrup as a sweetener (optional)
1 teaspoon cinnamon
Pinch of nutmeg
Mix everything together in mason jar or tupperware with a lid until well blended. Let sit for 5 minutes. Mix again to release clumps. Place in fridge for at least 3 hours before enjoying!!

Best nice cream yet ... soaked some dates for about an hour then blended the dates with cacao powder, non frozen banana and refrigerated coconut cream, which basically becomes coconut cool whip agreed it is refrigerated. Then added a bunch of frozen bananas to the date mixture.
Late night eats! It's nice eating with another veg cuz then we can split stuff. We shared a sandwich and salad and each had a bowl of chilli.
I got to hang out with these lovely folks, celebrating their 5th wedding anniversary in the cloudforest, in my divine cabin, hiking and practicing yoga....super way to celebrate.

Potato & tofu curry 🍛
1 onion, 2 garlic cloves, 1 large potato, half a block of tofu, coconut milk, water & soy milk (only cos I couldn’t be bothered opening up another can of coconut milk lol), cumin, turmeric, paprika, curry powder, chilli powder, s&p
Looks like I set up a fancy lunch with the molded brown rice but it’s cos it was already leftover in a container 😅👍

Part of our story today was how a couple years ago we were all praying for children. The last time we all hiked together, we were four. And now we are seven. Hallelujah!
Peeps, we live in such an awesome world, and when you get out of the hustle you see miracles everywhere.
Today was more of an adventure than we expected. We hiked through an area where a forest fire had swept through. We even encountered a bit of snow.
We are super prepared since our hubby's are seasoned outdoorsman. Thank you Jesus! The boys all did amazing in the Osprey hiking packs; A must have when hiking with littles. Can't wait for our next adventure.

Wrapping the week of salads up with this beauty!
Strawberry Quinoa Salad
2 medium-sized red beets, cubed
1 cup dried quinoa
2 cups water
dash of salt
1/2 lemon, squeezed in top
A big sqeeze of honey
Salt to taste
Toppings to add:
10 medium strawberries, cubed
2 green onions, sliced
1. Wash, peel and cube the red beets.
2. Rinse the quinoa, add the grain to a sauce pan with the beet cubes, water, salt. Turn the pan onto medium high, until bubbles form. Cover and turn the heat to low. (The beets will cook in this mixture.) Allow the quinoa to sit on low for 15 minutes then turn the heat off. Take the lid off and let the quinoa mixture cool.
5. Slice the onions, dice the strawberries. Combine all the ingredients together in a salad bowl.
🍃greens are welcome, add a little olive oil off desired.
Make the quinoa a day ahead to get the deep color. Add strawberries the day of serving so they keep their texture!
