A lot of people actually thought that nyonya Chap Chye is a vegetarian dish. 
Well it can be both. 
But the one I’m used to and feel that is the true Nyonya Chap Chye is the non vegetarian Chap Chye; I believe it’s the Hokkien version as we use ferment bean paste (tauchew) whereas the Cantonese uses ferment bean curd (fuyun)
A tactic corrected by my friend @stefanie_chao , it’s not just a stew where you just dump all the ingredients, it’s fried, stock and braised, fried, stock and braised. Must learn to adjust your fire too. Every ingredient has to be added in a certain sequence, fried, stock, braised.
In the non veg version, it has pork, prawn, hae-bi and mushroom stock, hence the flavour is rich. Very pang as my hubby will say it. 
In the vegetarian version, it’s just mushroom stock. Not as intense but flavorful.

We just made up the name family 😂 Because we were super surprised when it was served and it felt like the whole family of the pigeons are there 😱One for each and each one was big comparing to the ones we usually eat 😵I was started getting full 😅But this one is marvellous🤤It was roasted very well❗️The skin was very crispy and the meat was super tender and juicy 💞Love it ❤️

The sixth dish Steamed giant Grouper 🐟normally giant Grouper are chopped into piece because of its size and cooked in different ways but rarely steaming 🤔They added some other ingredients to steam with such as some luffa underneath 🥒Quite interesting 😲The fish was good 👍🏻 There’s some jelly stuff near the skin which is the best part of a giant Grouper 🤤Delicious ❤️It had some little candles underneath to keep it warm so you could take your time to enjoy it 😋

🇪🇸 Flashback Friday brings me back to the degustation menu (96€) at Uma Barcelona; one of the most delicious meals I've ever had.

The 4th course was a "Love soup" that Chef Iker made for his wife. In this dish, a browned gyoza sits in a Thai lemongrass broth. The dumpling was perfect with large pieces of shrimp nestled inside a thin dumpling wrapper. It was well complimented by the rich curry and coconutmilk broth. Lemongrass and limebean contrasted the broth with an herby and earthy flavour while the velvety smooth roe added pops of sea flavour and some more textural elements.

The 5th course was called "Ducks Migration" - probably one of the most delicious courses imaginable. The course starts with a cotton candy "cloud" which has the lightest spread of foie nestled within it's airy interior. I was extremely impressed at how creamy and light the foie was and how well the two sweet and savoury elements mixed together in such harmony. I was already in heaven. But after the cloud is finished, diners are then instructed to open up the "mountain" underneath which reveals a poached egg in a porchini mushroom cream which is then topped with truffles. The egg was spectacular; perfectly poached so that it burst with the a luscious runny center which went so well with the deep creamy and earthy sauce. The generous large slices of truffles on top were the perfect finish to the dish. Cross your fingers and hope that this is on the menu if you ever get a chance to dine here.

The 6th course was Scallops with fresh peas and cuttlefish. The scallops were fresh and nicely browned but a bit over salted. The peas were combined with the chewy cuttlefish making a thicker pasty mixture which helped to ground the dish. The scoop of caviar on top was a nice touch.

The 7th course was an Iberian Suckling Pig. The ham had a nice acorny, nutty flavour and was sprinkled with the crushed crispy skin giving it more of the roasted aroma. The pumpkin purée was sweet and earthy and contrasted well with the kumquat which was orangy and tangy. The micro greens and dried corn added texture and freshness.

Had a very fun night at @culinarthk where we had a molecular cooking workshop and a nice dinner 😋 Culinart is located at Wong Chuk Hang and we can have to whole place to ourselves~ The night started with canapés which were pretty good especially for mingling over some bubbles. Then the chef demonstrated how to use "science lab tools" to make "ikura and caviar" with a method called spherification and we were then given a chance to do it ourselves with our own creative plating (it does reflect the personality of the chef!). The beet cured salmon was so yummy that everyone kept eating it while preparing our appetizer. The soup was a consommé version of the Singaporean dish bak kut teh (肉骨茶) and it was distilled/infused from a hario coffee maker! It's got all the flavors but without the remains of the herbs and spices so for lazy bones like me, it was a lot easier to drink than the real version haha. The seared steak was overcooked but the peppers on the side were delicious! The dessert table was very fancy and instagram-worthy but probably not the best desserts out there. Lastly, we could make our own chocolate lollipops using molecular nitrogen and the chocolate was surprisingly yummy - a very nice balance of milk and cocoa!
