Happy #mealprepmonday! After such a fun and relaxing weekend at home, I'm feeling so well rested and amped to get tons of stuff done 😎 Here's what will be fueling me this week:
Pre-workout: Protein shake with almond milk
Breakfast: Overnight protein oats with chia seeds and blueberries
Snack: Coconut yogurt with almond butter and cinnamon
Lunch: Quinoa, chickpeas, sweet potato, greens, and homemade peanut dressing
Snack: Green smoothie
Dinner: Marinated tofu steaks with zucchini, kale, and onions

Beans oh beans,how I love you... You can be eaten with boiled or fried plantain / Yam/ sweet potato.. Some people even put spaghetti inside it... You can be eaten with garri soaked with sugar or garri mixed with the beans, You can be eaten alone and still taste awesome, You can be eaten with dry fish ,You can be eaten with roasted plantain ! Chei 🙌..

KOKUM CHILLI RICE
A little sour, a little spicy. This spicy & sour 'Kokum Chilli Rice' is wholesome and flavorsome that will tingle your taste buds.

Ingredients used in KOKUM PULIHORA
• Kokum - 20 grams.
• Rice(boiled) - 2 cup.
• Oil - 3 tablespoons.
• Ground nut - 1/2 tablespoon.
• Cumin seeds - 1/2 tea spoon.
• Mustard seeds - 1/2 tea spoon.
• Asafetida - 1 pinch.
• Chana dal - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Green chilies - 3 no.
• Water - as required.
• Salt - to taste.
Soak kokum in water for 30 minutes and squeeze water, later add to pan and boil it.
Heat oil in a pan, add ground nut and sauté it.
Add cumin seeds, mustard seeds, asafetida, chana dal, urad dal, turmeric powder, green chilies and sauté it for a 1 minute.
Add this mixture to boiling kokum paste and add salt and mix nicely.
If required add little of kokum pulp and cook it until it become thick mixture and oil losing out.
Switch off flame and add required quantity to rice bowl and mix nicely. Garnish it with Mint leaves.
Serve it hot.

Chicken: 1 Tbsp Minced Garlic, 1/2 Tbsp Sugar, 3 Tbsp Soy Sauce, Salt, Pepper, 400g Pre-Cut Chicken Thigh
Seasoning: 2 Tbsp Sugar, 4 Tbsp Corn Syrup, 2 Tbsp Red Pepper Powder, 3 Tbsp Hot Sauce, 6 Tbsp Soy Sauce, 3 Tbsp Red Pepper Paste, 150ml Water, Garlic, Scallion
Garnish: 1 Handful Chopped Scallion, Sesame Seeds
1. Mix 1 Tbsp minced garlic, 1/2 Tbsp sugar, 3 Tbsp soy sauce, bit of salt and bit of pepper to make seasoning. Spread the seasoning on 400g of pre-cut chicken thigh.
2. Add 2 Tbsp sugar, 4 Tbsp corn syrup, 2 Tbsp red pepper powder, 3 Tbsp hot sauce, 6 Tbsp soy sauce, 3 Tbsp red pepper paste, 150ml water, whole garlic and scallion into a pot. Boil for 10 minutes to make Fire sauce.
3. Grill seasoned chicken thigh on a grill pan.
4. Push grilled chicken thigh to the side.
5. Add boiled ramen noodle on the other side and add fire sauce. Garnish with 1 handful of chopped scallion and sesame seeds.
