back counting macros today - sort of. Am counting protein only as feel like I haven’t gotten enough lately. I had no meat out of the freezer, so I picked up some gluten free fish fillets at the supermarket, cooked them in the freezer then put them with salads I had in the fridge. Very easy, but I’m thinking I might need to branch out a bit from just salad and meat for some variety. Y’all know I love my bread. However, this chicken salad my husband made was best with lettuce boats! 🥬

We roasted chicken the night before and had tons left over. So he had grapes, roasted pecans, onions, celery, mayo and mustard and added it all together. 🐓
⠀⠀
After he mixed it all together, added salt and pepper and it was so good. 🧂
⠀⠀
Such a simple meal, and super healthy. I added crushed red pepper on top, because that is just my thing. 🌶

And of course, a few slices of avocado. 🥑

. ■Ingredients: ▪1 Boiled Potato
▪1/2 Cup Boiled Mix Veggies
▪1/2 Finely Chopped Onion
▪2 Cups of Fresh Spinach
▪4 Tbsp Chickpea flour
▪4 Tbsp Bread Crumbs
▪Masala Mix (salt per taste, 1 tsp red chilli, 1tsp cumin seeds, 1 1/2 tsp dry mango powder, 1 tsp coriander powder)
▪1/2 cup cooking oil ■Process to make Kebabs: 》》Preparations《《 ▪First of all dry roast the chickpea flour
▪Boil the mix veggies and transfer to grinder and let it cool
▪Blanch spinach ( boil for 5 mins and then run under cold water) and then transfer to grinder along with mix veggies and make a paste. 》》Making Kebabs《《 ▪Mash the boiled potatoes. Make sure there are no lumps.
▪Add chopped onions to it
▪Now add spinach puree to it
▪Now add the masala mix to it
▪Add dry roasted chickpea flour and bread crumbs and make a loose dough
▪Add more bread crumbs if the dough is too watery
▪Roll out the dough in the shape of a round kebab
▪Now heat the oil in pan and add the kebabs to it.
▪Cook the kebabs at medium to low heat until they are golden brown on both the sides.
▪TADAAAAAAAA!!! It's ready!!

Chicken Lo Mein with a homemade Pad Thai Sauce 😋 #dinnerisserved .

•Ingredients• (Serves 2) 
16 oz Nasoya Pasta Zero Shirataki Spaghetti ( #ketofriendly noodles)
3 Tablespoons oil
3 cloves garlic , minced
8 oz chicken, cut into small pieces
2 eggs, beaten 
1 cup fresh bean sprouts
1 red bell pepper, thinly sliced
3 green onions, chopped
1/2 cup Macadamia nuts 
2 limes
.
. •Ingredients for Pad Thai Sauce• 
3 Tablespoons fish sauce
1 Tablespoon low-sodium soy sauce
5 Tablespoons light brown sugar
2 Tablespoons rice vinegar * see note
1 Tablespoon Sriracha hot sauce , or more, to taste
2 Tablespoons creamy peanut butter, optional .
.
•To Make•
1. Cook noodles according to package instructions, just until tender. Rinse under cold water.
2. Mix the sauce ingredients together. Set aside.
3. Heat 1½ tablespoons of oil in a large saucepan or wok over medium-high heat.
4. Add chicken, garlic and bell pepper in the wok. Cook through about 3-4 minutes.
5. Push everything to the side of the pan. Add a little more oil and add the beaten eggs. Scramble the eggs, breaking them into small pieces with a spatula as they cook.
6. Add noodles, sauce, bean sprouts and nuts to the pan (reserving some nuts for topping at the end). Toss everything to combine.
7. Top with green onions, extra nuts, and lime wedges. Serve immediately!

🍝🥒🥫 Zoodles w/ Turkey Meatballs!! I’ve walked by the zoodles probably 100x, but couldn’t justify paying $7 for one zucchini cut into the shape of noodles. I wish I had that kind of cash flow but let me tell you, puppies are about the farthest thing from cheap 😹😅 (yet he’s one of my most favorite things so I’m more than ok with it 🥰) So my booty decided to buy a “zoodle-er” and make my own. On the other hand though, he eats so much that I run out of ideas to keep him full...💡 Recently, I noticed that as long as he can find chicken breast and greens for a salad in the fridge, he’s ok. 
He puts it together and gobbles it up, without dressing! 😯
And he doesn’t care how his salad looks like, pretty or not, it works for him. 
So it does for me! 👍

Fuelling your body with whole, nutrient dense foods is key to a healthy happy body. Both my Hubby and I work full time, our kids are all in after school activities and we each have our own hobbies. We are busy, but good, nutritious food (most of the time) is a priority for us.

Here are some things that have worked for us to make this possible: 
1️⃣plan your dinners for the week and do as much prep for them as possible on the weekends. 
2️⃣wash/cut fruits and veggies as soon as you get home from the grocery store to save time during the week 
3️⃣have a few easily accessible foods cooked and ready to go for any last minute plans that come up. We often have hard boiled eggs and a rotisserie chicken in the fridge. 
4️⃣roast your veggies for weeknight dinners and leftovers for lunches/breakfasts. .

I timed my food prep yesterday and it took me one hour and forty five minutes. Is it a lot of work in one shot? Yup. But it’s pretty awesome to wake up every day during the week and know you’ve set you and your family up for success and there is minimal work to do during the week⭐️

🚨Emergency fund food🚨

I arrived back to Minneapolis at 1am. Had to get up and finish a presentation for today and tomorrow on low backs.

Pretty much, I’m scrambling in my life right now. No laundry done, no groceries, no food prepped.
:
This is why it’s important to keep your emergency food around for your busy life.
:
You need to have food that won’t spoil, easy to consume, and lower on calories.
:
This allows me to have food for today until I can get my life back on track either tonight or tomorrow and not sacrifice my health.
:
Because of having this food on hand, I will be able to stay at my maintenance calories and not worry about going the wrong direction.
:
Examples of these foods include
- Different types of nuts
- Soups
- Beef jerky
- Protein bars
: 
This week was slightly different for me as in I had some left overs I could consume that were still fine from the previous week.
:
I was able to pack my lunch in 5 minutes and get out the door.
:
- Green bell peppers
- Deli Salami
- Beef stick
- Habanero cheese
- Not shown: Protein bar
:
This has bout me a few days until I can get everything re organized in my busy life.
:
You can also eat out in these situations, however this can be a slippery slope depending on where you eat and if you do your homework on how many calories you are consuming.

Monday inspiration, a simple and very tasty chicken and spinach curry. 
Recipe:
🔹 curry sauce 
Fry 1 chopped onion, 4 cloves of garlic (grated) and 1 inch of ginger (grated) in a pan gently with a splash of oil add a bang curry paste of your choice. 
My fave is Fiery Josht for obvious reasons! 🔹 add chicken - then spinach - enough to feed 4. Simmer and cook gently with a splash of water. 
Serve with rice, flat breads and a dollop if Nat yoghurt! #bangcurrycooks

Monday inspiration, a simple and very tasty chicken and spinach curry. Recipe: 🔹 curry sauce Fry 1 chopped onion, 4 cloves of garlic (grated) and 1 inch of ginger (grated) in a pan gently with a splash of oil add a bang curry paste of your choice. My fave is Fiery Josht for obvious reasons! 🔹 add chicken - then spinach - enough to feed 4. Simmer and cook gently with a splash of water.
