Sometimes I post on here everyday, sometimes I take breaks from posting. But when I’m in the habit of everyday, it feels really uncomfortable to stray from that routine. The thing is, when I take breaks, I don’t usually take breaks from the app- I still scroll, I still watch stories because I enjoy doing so. When I’m going and going all day, *sometimes* I like to sit and reflect back on my day and write something to share. But other times, I’m exhausted and honestly just want someone to do the work for me; I’d rather read/listen to what other people have to say than create something myself and I think we all need that sometimes. So, even though I’m clearly choosing to post today, it’s because I want to, rather than out of routine, which is how I want it to be. Plus, today I enjoyed food much more than I did yesterday, as I’m moving through my cold 😌 I made curry last night and couldn’t really taste it, but I ate some of the leftovers in my salad for lunch today and it was so good!

For the first time ever I was really happy with how my fathead pizza turned out tonight! Thanks to a suggestion from @ugojuls I rolled the crust out thinner and baked it at 450° for 8 minutes, flipping the crust once during the "pre-bake". .
I also decided to play with the recipe to see if I could get the calories down a bit and the end result was a little lighter and lower carb than some other fathead recipes with higher flour amounts. It was also really strong and pretty crisp! It kind of had the consistency of a cornmeal pizza crust. I did this using lupin flour to replace 1/3 of the almond flour (which is my usual substitution ratio).
I made one spinach, zucchini, and bacon 🍕 for me and a salami and peperoncini for Jason. I ate half my pizza. That's 1.5 servings of the dough. Not too shabby!
Quinoa and spinach salad --- I always make a staple of grains on Sunday that lasts me a couple of days at the start of the week 😇 That can be a batch of quinoa, brown rice, wild rice, black rice or buckwheat, whatever I feel like 🙆🏻♀️ And then I use it during the week to make lunch salads to bring to work, often with tahini dressings, a few nuts and a mix of veggies. This salad is a mix of quinoa, spinach, arugula, pistachios, almonds, grated carrot and and some fresh coriander and mint. I made a dressing by mixing some olive oil, tahini, apple cider vinegar, tamari and salt and pepper. Hara Bhara Kebab
2 cup Spinach
cup Green peas boiled and mashed3/4
Potatoes boiled, peeled and grated3-4 medium
Green chillies chopped3
Ginger chopped2 inch pieces
Fresh coriander leaves chopped2 tablespoons
1 teaspoon Chaat masala
to taste Salt
Cornflour 2 tablespoons or besan optional
Oil for deep-frying or Shallow fry
Blanch spinach leaves in two cups of boiling salted water for five minutes. Drain, refresh in cold water and squeeze out excess water. Finely chop.
In a bowl mix spinach, peas and potatoes. Add green chillies, ginger, coriander leaves, chaat masala and salt to taste. Add cornflour for binding.
Divide the mixture into equal portions. Shape each portion into a ball and then press it between your palms to give it a flat tikki shape.
Heat sufficient oil in a kadai. Deep-fry the tikkis on medium heat for three to four minutes.

Vegetable Stir Fry Pasta .
Thanks to Sunday’s meal prep sesh this #dinner took, legit, 15 minutes to put together: #broccoli, #cauliflower, #greenbeans, #carrots (which I have to cut thinner next time), #spinach and brown rice pasta tossed in turmeric, cumin, thyme, salt and a tiny bit of pepper. I sautéed garlic and onion first for a flavor base and topped it with some sprouts and sesame seeds (which I always end up sprinkling too heavy handed 🙄). .
I’m already looking forward to leftovers. .
