Hey, here’s a sweet lil’ quicky for y’all. Super easy but actually holds some nutritional value. Not my idea of an indulgence (that would be peanut butter pie or creamer brûlée for me) but something I like to enjoy when I’ve got a hankering for something on the sweet side. I don’t even know what to call this. Whoever picks a name wins
Apples (I love a variety of Granny Smith and Pink Ladies) sliced
Almond butter (or nut butter of your choice)
Hulled hemp seeds
Shaved chocolate (70% cocoa)
Fennel pollen (don’t trip if you don’t have this. But definitely give it a try if you ever come across it. It pairs so well with honey and apples) .
Slice apples, arrange on a plate. Dollop with nut butter and then drizzle with honey. Sprinkle on remaining ingredients and enjoy!

Some of my dinners are frugal indeed but so powerful. Bitter melon, daikon, okra, cucumber and mung dal sprouts. Cooked in onion, ginger, soy sauce and pickle juice.

A few months ago I had no idea what "sprouting" was, but when I learned about it, I knew I needee to try it. "Sprouting" is, in essence, the germination process plants undergo when they begin to grow. At this stage, they are PACKED full of nutrients (phytochemicals) because they need to support themselves as they grow into a vibrant plant. Because of this, sprouts can provide a punch of nutrition for us too when we eat them. This means you can get MORE nutrients in a few tablespoons of broccoli sprouts than eating cups and cups of broccoli itself. Sprouting seeds, nuts, beans, and grains also makes these foods easier to digest. This is partly because it reduces the power of antinutrients, things like phytic acid, which are compounds that hinder the absorption of minerals. Thus sprouting can help with digestibility and increase the availability of protein and nutrients like B12, Iron, Magnesium, and Zinc! •
I don't always have a green thumb, but even so this batch of alfalfa, broccoli, and radish seeds pulled through! It was so QUICK (this jarful only took 4 days!), CHEAP, and this sprouting jar from NOW made it so EASY! Highly recommend to anyone wanting to boost the quality of their food consumption!

Withering my intuition, missing opportunities...”✨ We have a tendency to - no, scratch that...I have developed a new tendency to take what was is meant to be simple and complicate the fuck out of it. I don’t know where it came from or why it’s happening, but the awareness of it is crucial to the changing of it. I’ve been way in my head and it’s distracting me. I’m distracted from what’s important, distracted from my path, distracted from true presence, distracted from being in gratitude - and I’m not about it. It’s not even shiny objects - it’s dull and dank and dingy. ☔️ My intuition has been on overdrive - synchronicity, validation, confirmation EVERYWHERE - and I’m just shutting it down left and right, trying to think my way through things (as if that’s ever gotten me anywhere really good). Well, until now. 👊🏽 I see what I’m doing. I see where I’ve been accepting and tolerating less than what is essential to my own well-being. And not just to my survival, but to my ability to THRIVE.
What’s next is about uprooting. Open your eyes and your heart, feel into your physical and energetic space. What does your garden look like Have you been watering where you want to grow, or are you giving all of the nourishment to more crab grass and weeds What is popping up - is it going to feed your soul or will it starve off your passion and purpose You reap what you sow. Now is the time to rip out - from the root - whatever it is you’re seeing push through that is NOT true to or in alignment with the harvest you want to reap. Pull those weeds from the soil of potential and possibility and fill the holes with new seeds. Nurture them. Water them. Tend to your garden, friend. YOUR garden. Sprouts are SO full of goodness, and so tasty! 🌱 I love making my own in a sprout tower I have - you can also make them with just a glass jar and some muslin cloth. Spring & summer is the perfect time for yummy, crunchy sprouts - though I have to watch my hubby, otherwise he eats them all before I get any 😂

Banana muffins: - 2 Ripe bananas - tsp vanilla - 2 tbsp pumpkin purée - 2 eggs - 1/2 tbs coconut oil - 1 1/2 cup @bobsredmill almond flour - 2 tbsp @nutiva coconut flour - 1/2 cup @birchbenders pumpkin pancake mix
Bake at 35 for 25 minutes. 🙌🏻

Picked up my order of incredible sprouts from the very clever Chloe at Mayjer Microgreens right here in Wanaka. These little powerhouses are going to feature in a very special bowl of goodness we are creating for the amazing @ahuaretreats retreat this Sunday. Mind blowing teachings, breath work, yoga & cold water immersions means these lucky students are going to need some nutrient dense superfoods to support their minds and bodies 🙌 Bursting with shear plant based power, sprouts are loaded with enzymes, vitamins & minerals helping you feel energised, alkalised and ALIVE 🌱💪✨

Sprouts with mustard vinaigrette and cider plumped cranberries, best side dish ever
INSTRUCTIONS FOR SPROUTING LENTILS🐉:
🌱Rinse ½ cup lentils, remove any stones or debris, and place in a quart-size sprouting jar or other sprouting container.
🌱Add 2-3 cups water, filling the jar three-quarters full; cover jar with a sprouting screen or mesh sprouting lid. Soak lentils at least 8 hours or overnight.
🌱Drain and rinse lentils thoroughly. Invert the jar over a bowl at an angle so that the lentils will drain while still allowing air to circulate.
🌱Repeat rinsing and draining 2-3 times per day until sprout tails appear. Taste sprouts (not lentils) daily; discontinue rinsing and draining when sprouts have reached desired length and flavor.
🌱Drain for several hours before cooking or transferring to a covered container.
Citrus Shrimp & Avocado Salad
For the Shrimp:
-1 lb of Shrimp, shelled and deveined
-Juice of 1/2 Lemon
-1/2 tsp Chili Powder
-1 tsp Ground Cumin
-2 Tbsp Olive Olive Oil
-Pinch of Salt
For the Salad:
-1 Ripe Avocado, cut into small cubes
-1 lb of Tomatoes, chopped
-1 cup Quinoa
-1/2 cup of Cilantro
-Juice of 1 Lemon
-1 Small Clove of Garlic
-3 Tbsp Olive Oil
-Salt to taste
—In a bowl, toss together the shrimp, lemon juice, chili powder, cumin powder, olive oil and salt, set aside while you preheat a pan on high heat.
—Cook the shrimp on the hot pan for just a couple of minutes until fully cooked through, remove the seafood and place them in a bowl, set aside.
—In a small mini chopper, add the cilantro, olive oil, lemon and garlic and pulse until just about smooth.
—Add the remaining salad ingredients along with the vinaigrette to the bowl with the shrimp, toss all together to mix then cover and pop it in the fridge for about half an hour before serving.
