Anyways this is the garden set we picked from wyvale garden centre 😍😍 I love it and it’s soooo comfy, it’s all packed away for winter now but I’m dreaming of summer looking at this pik, the parasol was from @ikeauk and was a fraction of the price of others we had seen in other shops! Can you smell that It's almost BBQ season! These veggie skewers from @theminimalistbaker are a great idea to keep a bit of variety and healthy colourful food on the grill plate.
1 large sweet potato (chopped into large pieces)
4-6 whole baby red potatoes (quartered)
1 medium red capsicum (seeds removed + chopped into large pieces)
1 medium yellow capsicum (seeds removed + chopped into large pieces)
1 medium red onion (peeled + chopped into large pieces)
2 large portobello mushrooms (wiped clean + chopped into large pieces)
2-4 cobs corn (optional // grilled off the skewer)
1-2 Tbsp avocado or coconut oil (for brushing vegetables)
1 healthy pinch each sea salt and black pepper
Heat up your BBQ or preheat oven to medium/high grill.
Place your chopped sweet potato and potatoes in a large pot and cover with water. Bring to a boil and cook or "parboil" for about 10 minutes or until almost tender. You want them to be semi-tender - firm enough to stay on a skewer, but tender enough that they won't require too much time on the BBQ/in the oven. Drain and let cool slightly.
Assemble skewers by adding the vegetables in layers to the skewers, leaving enough room at the top and the bottom to help with flipping and preventing vegetables from falling off. Brush with a neutral, high-heat oil such as avocado or coconut oil (or sub water if avoiding oil) and sprinkle generously with salt and pepper on all sides.
BBQ(or grill) until grill marks are present and vegetables are tender and cooked through - about 10-15 minutes. Flip once at the halfway mark to ensure even cooking. If browning too quickly, move to the perimeter of the BBQ, where the heat is less intense (or turn oven heat down/move the pan lower in the oven). If grilling corn, place directly on the grill without the husk, or on the grill with the other vegetables.

My favourite kind of meal is a bbq, where you get to have a bit of everything on your plate and a mix of hot and cold!
Inspired by @botanicarealfood, I went all in with the salads on the weekend so I could create my dream bbq plate! Beetroot, lentil and quinoa tabouleh, roast veg and pesto, cashew cream slaw, green beans in lemony tahini dressing with toasted almonds and a green salad topped with avo and edible flowers.
We also had homemade veggie burgers in fresh bread rolls and bbq-ed corn on the cob!

2 minute gut friendly salad 🌱🤤 @aldiaustralia noodle salad mix, with fresh spring onion, red onion, kale and avocado. Made my own dressing of 2 squeezed limes, 1tbsp sesame oil, 1tsp raw honey, 1tsp grated ginger and chilli flakes.
Serve with your choice of protein. We had a BBQ with choice of tofu, steak or lamb.
