Pasta Cooking Tip: Pasta Water is the secret ingredient you’ve been missing!
We repeat, do not toss your pasta water. Instead, use a slotted spoon to pull the pasta out and drop it into your sauce or a colander. A healthy splash of the starchy water will thicken your sauce and encourage it to coat each noodle completely.

When I was 28, I moved to Florence to study food writing. I announced I was quitting my legal job to move across the globe and was met with genial chiding from my colleagues who claimed I was seeking to write my own Eat, Pray, Love story. I was abundantly aware that I’d manifested my life into one giant cliche but couldn’t be bothered to care. It was a glorious year. I was completely magnetized by the way the sun hit the green shutters on the apartments lining the Arno. Eating became an act of spiritual devotion and one I took to with the seriousness and dedication of a novitiate.Tuscany, and Florence in particular, is well trodden by tourists for a reason; it is absolutely spectacular.
