Grilled Salmon & Prawn Salad with @marionskitchenfood Vietnamese Tangy Dressing....The sweetness of the mango is the great accompaniment to the Tangy Dressing. The crunch of the salad vegetables is a perfect partner to the mouth feel (texture) of the salmon and prawns. I just loved every bite of this salad...I hope you will too!
4 skinless salmon fillets
2 cloves garlic minced
1 tablespoon oil
1 tablespoon chopped coriander
Salt & pepper to taste
120 gram bag @colessupermarkets
2 cups bean shoots
2 red cayenne chillies sliced
1 red onion sliced fine
Handful each of fresh coriander, basil & mint leaves
1 mango peeled and sliced thinly
1/2 cup @marionskitchen Vietnamese Style Tangy Dressing
2 tablespoons fried shallots
Marinate the salmon & prawns together in a bowl with the oil, garlic, chopped coriander. Season with salt and pepper.
BBQ or pan sear until the salmon is slightly pink on the inside and the prawns have turned a lovely coral colour. Set aside while you were assembled the salad. Mix the remaining ingredients together in a large bowl with the Tangy Dressing. Serve either with the salmon fillet whole or break up amongst the salad with the prawns.
