🍌🥜🥒I’ve been watching a cluster of apple bananas in my basket go from ripe to spotty to brown(prime time for monkey bread!) to a questionable black 😬
And so I googled “black banana edible”. The answers were all “yes, if they are baked”....
Well then!! 🙊
Like 99% of things I make, after my first bite I already have a list of things I want to try differently in my next batch. But, I don’t know when I’ll get around to that “second batch” so here’s the deets on the first run at these guys..
4 Small local apple bananas (came out to 7oz)
2oz Shredded zucchini
1tbsp Coconut oil
35g Almond flour (I always use @birchbenders paleo or keto pancake mix for my gf flour)
30g @athorganics Plant protein
36g Powdered PB (I use @nakednutrition)
2tbsp Monkfruit sugar (or maple syrup but I wanted lower calorie option)
1tsp Baking soda
14g @lilys_sweets Choco chips (sugar free!)
2tbsp Natural peanut butter
Heat oven to 350. Shred zucchini, wrap in paper towel, squeeze out water & set aside. In a processor (or blender) add eggs, oil, & vanilla give a few pulses until blended. Add in flour, protein, powder pb, sugar or syrup & baking soda. Blend. **this is the only reason I use a processor because its the best way to fully dissolve and blend the protein and powder pb!)** Mash the bananas in a bowl then pour the batter in and mix. **this way you get chunky banana in your bites!** Add zucchini and choco chips and mix. Finally add peanut butter and swirl into batter. Pour into muffin liners and bake at 350 for about 20 min. After 10 min keep checking with a fork till it comes out clean!
To be honest, its really tough for me to write out directions for recipes because I’m so all over the place when I cook. It takes a minute for me to sit and retrace my steps and put them in a structured order that makes sense. Point being, if any of that doesn’t make sense just ask! I can clarify whatever you need. I’m also always always open to suggestions!

Top your favorite bread with nut butter & strawberry chia jam. To make the jam, add 2 cups strawberries or raspberries to a pot and heat on the stove. Mash once warm. Squeeze in the juice of 1/2 a lemon and add 2 Tbs chia seeds (to thicken) + a little drizzle of maple syrup if you want!

That time I have made this amaretto soaked fresh cherry, chocolate and almond tart with cashew cream topping.
It was unreal, full of super flavoured cherries with amaretto like liquor and ground almonds.
I am chilling at home after a long day, eating an apple and wishing for this cake to somehow materialize..
Autumn is in the full swing here in London, jumpers and coat weather for sure.

maple tahini dressing recipe (inspired by @livgreen_._):
mix 2 tbsp tahini, 1 tbsp maple syrup and cinnamon together and
add water if needed to thin
pumpkin cream cold brew recipe (inspired by @wellnesswithlinds):
add 1/2 c almond milk (@califiafarms is my fav), 2 spoonfuls of pumpkin, pumpkin pie spice, dash of vanilla and a little bit of maple syrup to a blender and blend until frothy. pour over top of some cold brew or expresso and enjoy😉
