Good morning 🌞 we’ve had such a beautiful day yesterday! It was Alex’s birthday 🎂 🎈and we’ve been enjoying the sun outside, trying out bobsleigh run for the first time, eating lots of hummus... Just the perfect way to ease into vacation feeling, I would say. Good morning everyone another green smoothie Wednesday is here ! 💚💚💚I have made this green smoothies to celebrate our movement! #greensmoothiewednesday One of the jars is for beautiful @vegan.niinja who has formed the movement with me.
We want to encourage and motivate each other to increase the amount of greens we have in our diet. .
I have made a delicious matcha chia pudding to go with my green smoothie. 
I have mixed 3 tablespoons of chia pudding 
1 tablespoon of matcha powder 
1 tablespoon of maple syrup 
1-2 cups of almond milk. .

Dinkel-Nudeln mit Kürbissoße und gebratenem Gemüse 😍 super lecker, aber auch sehr mächtig, es sättigt also sehr sehr gut 😃
Für die Soße (2-3 Personen):
100g Cashewkerne über Nacht einweichen oder mit heißem Wasser übergießen und Ca. 1 Std. geschlossen einweichen·
1/2 Hokkaido waschen, in Stücke schneiden · 1 Gemüse Zwiebel schälen, in Stücke schneiden· Den Boden eines Topfes ca. 3 cm mit Wasser bedecken· Kürbis und Zwiebeln hinein geben und mit Deckel gar kochen· Noch heiß in einen Standmixer geben· Die Cashews dazu geben· 2-3 EL Hefeflocken dazu geben und nach Belieben würzen· Alles gut mixen· Direkt heiß auf die Nudeln geben 😍 Kürbismus schmeckt sehr gut dazu und macht optisch auch was her 😉 Guten Appetit 💚

Der Boden besteht aus Mandeln und Cashew Kernen und Datteln 🙆 dann eine Schicht Erdnussbutter und oben drauf 🍫🍫. Habt einen wunderschönen Tag 😘

1 Tasse Mandeln, 1 Tasse Cashew Kerne, 1 Tasse soft Datteln mit 1 EL Reissirup @reishunger und einem schluck Wasser in einem Mixer mixen und in eine Silkikonform aufteilen und abdrücken.
🌰für die mittlere Schicht (kleine Tassen): 1 Tasse Peanut Butter @sportnahrungwehle mit 1 großen TL Kokosöl, Vanille extrakt und etwas Reissirup vermengen und auf die Nussmasse geben und für ca. 20 Min. einfrieren.
🌰Für die letzte Schicht: Zuckerfreie oder Zartbitter Schoki schmelzen, oben darauf geben und weitere 30 Min einfrieren!

The amazing thing about this Dole whip is super easy to make it, no need to be in line to get it and using only 4 ingredients:
1. frozen chopped 🍍
2. coconut cream
3. fresh vanilla bean
4. organic powdered sugar.

Instructions
. Place the coconut milk and frozen chunks of pineapple into a food processor or high powered blender. (the pineapple has to be frozen)
. Turn on food processor and blend until the consistency becomes creamy.
You will have to stop several times and scoop down the pineapple.
. Keep blending until all of the pineapple chunks are gone and the mix is smooth.
. Enjoy immediately as it is ‘soft serve’ and should be eaten straight away.

Here's 👇🏻 the recipe for these almond tartlets. They are vegan and refined sugar free!🙌🏻
Ingredients are for 6x10 cm tartlets 。
~Crust 
50g dark chocolate, melted 
150g fine oats 
30 g almonds
1 tbsp coconut oil 
1 tbsp agave 
Pinch salt 
In a food processor, process the oats together with the almonds until finely ground. 
Add the rest of the ingredients and blend until well combined. You should get a sticky dough. Press the dough firmly into the tart tins and place them in the fridge whilst making the filling. 。
~Almond filling 
1 1/2cup (320ml) almond milk 
1/2 cup (100g) coconut cream 
1 tbsp almond butter 
1 tsp vanilla bean paste 
2 tbsp agave 
Pinch salt 
1 tbsp corn starch 
1 tsp agar 
Combine all the ingredients in a saucepan and bring the mixture to a brief boil, stirring continuously. 
Let it cool down until lukewarm and pour over the prepared bases. .

Energizing banana-mocha nicecream topped with unsweetened coconut flakes, peanuts, banana slices, and some crunchy granola.
📝 Banana mocha nicecream:
✅ 120g frozen banana slices
✅ 5g unsweetened cocoa powder
✅ 2 scoops plant protein powder
✅ 1 tsp ground coffee
✅ Splash of unsweetened almond milk (the more, the runnier your nicecream will be…so don’t add too much)
📝 Blend everything in a high-speed blender and pour into your favorite bowl.
📝 Add toppings:
✅ 5g unsweetened coconut flakes
✅ 10g peanuts
✅ A few banana slices
✅ 15g granola

Which is a tragedy at best because I love tacos. 🤔 Generally when I mention veggie tacos, some of my clients think that it sounds boring. I convince them otherwise by giving them different combos and flavors to play with. With the last bits of my nectarines, I made a nectarine and avocado salsa that I added over top my black bean and shredded brussel sprout tacos. 🌮 My tacos also got some corn and extra cilantro. Verdict? Delicious. 10/10 would eat again. 🙌🏽

Nectarine and Avocado Salsa
1 medium sized nectarine, diced
1 avocado, cubed
Juice of 1 lime
Zest of 1 lime
Bunch of cilantro, diced 
1-2 scallions, thinly sliced 
1/4 tsp red pepper flakes 🌱

Add all ingredients to a bowl and and lightly toss to combine and fully coat in lime juice. Top over any meal you fancy. I think it goes great in bowls or tacos as a fun condiment. Have a great night! 💃🏽

•condensed coconut milk -throw in & bring to simmer once lentils are almost cooked
•red curry paste (you can use powder too if you like)
•pumpkin purée
•Frozen veggie mix
•chickpeas
•spices I added: nooch, salt, pepper, turmeric, shit ton of cayenne •simmer until you can’t take it any longer & throw some on top of cauli rice and call it a night 😋

And as far as servings? Decide if you wanna cook for just you, have left overs, or share it. Then... just figure it out. If you need more specific instructions, I recommend pinteresting a recipe because that’s the best I can do for ya! Hahaha. You can’t go wrong with curry. It’s ALWAYS good.

Wanted to share my RECIPE for HEALTHY OAT TRAIL MIX BARS 👇🏽👇🏽 I based this off of @highcarbhannah vegan Clif bar recipe, but I changed a lot of the ingredients and they don’t really have the texture of Clif bars...still super tasty and I’m experimenting with recipes.

HEALTHY OATMEAL TRAIL MIX BARS

INGREDIENTS:
1.75 cups dry rolled oats
.25 cup dry steel cut oats
1 cup dates (170 grams)
2 tbsp peanut butter
2 tbsp maca powder
2 tbsp ground flax seed
1/4 cup unsweetened coconut flakes (13 grams)
1/4 cup raisins
3 tbsp chocolate chips (or 20 grams chocolate bar, broken to pieces)
1/4 cup nondairy milk

For glaze:
1/2 tbsp peanut butter
1 tbsp maple syrup
Splash nondairy milk

DIRECTIONS:
Blend oats in a food processor until they become a course flour. Add dates and continue to process. Add PB, maca powder and flax and process until combined; add in nondairy milk to reach proper consistency. Pulse in coconut, chocolate chips and raisins.

Press into a glass baking dish and drizzle glaze on top. Freeze for 2 hours and cut into bars. Store in fridge or freezer for best consistency. 
Makes 8 bars.

Rainbow taco bowl 🌶✨
Happy Friday! I made this meal-prep taco bowl a few days ago and it was the most satisfying dinner after a long day 🙌🏼 To heat, I quickly sautéed the pepper, corn, cabbage and kale with garlic then topped it with taco-spiced roasted chickpeas, avocado, hot sauce and lime!
🌱 curly kale, orange and red pepper, taco-spiced roasted chickpeas, corn, purple cabbage & an avocado rose with crushed red pepper and lime
💛 taco-spiced roasted chickpeas:
• 1 can organic chickpeas or 1 1/2 cups cooked chickpeas
• 1/4 tsp garlic powder
• 1/4 tsp onion powder
• 1/4 tsp chipotle chili powder
• 1/4 tsp paprika
• 1/2 tsp cumin
• 1 tsp chili powder
• 1 1/2 tsp olive oil
• salt & pepper to taste
- Preheat oven to 400F.
- Rinse and dry 1 can of organic chickpeas. After draining, I lay mine on top of a paper towel-lined baking sheet, roll them back and forth a bit, remove some of the skins and let them air dry for a few minutes.
- When dry, place chickpeas in a small bowl. Add olive oil, garlic, onion, chipotle chili, paprika, cumin and chili. Mix gently and add salt & pepper to taste.
- Spread chickpeas on a parchment-lined baking sheet.
- Bake for approximately 20-25 minutes or until the outside of the chickpeas are crisp. Stir halfway through cooking time.

Did you know that micro greens 🌱 contain 30 to 40 times the nutrient content compared to fully developed vegetables?

When I first heard that I thought that can’t be true 😆 but after hearing it from numerous credible sources including the world renowned @hippocratesinst and their brilliant doctors I am convinced that it’s true 👍
.
When you think about it logically it makes sense because the greens are in their infancy essentially sprouting from their seeds in just a matter of days and you consume them shortly after while they’re still full of life 💫
.
When you buy a vegetable from the store it most likely was picked weeks before you get to it (unless you grow it yourself or get it from your local farmers market) and a majority of its polyphenol content has been lost 👎
.
I have been absolutely addicted to incorporating micro greens into most of my meals these days after learning more about their energy content and I can really feel the difference 🙋‍♀️

These are radish greens from the amazing @littlebig.farm that I piled onto my jack fruit, eggplant 🍆 zucchini and rice 🍚 dish that I prepared in my @vitaclay slow cooker while I was working out 👌

Then, I topped it with baby arugula (if you haven't tried it on pizza do yourself a favor,) roasted chickpeas and two types of vegan parmesan. One from @followyourheart and the other is blend of cashsws, onion powder, garlic powder, Himalayan salt & nutritional yeast. Yum 😋🍕

Ingredients: 
2 1/3 cup @kingarthurflour almond flour 
3 small ripe bananas or 2 large (I use extra ripe so no additional sweetener is needed)
3 @vitalfarms eggs
2 Tbsp coconut oil (melted & cooled)
2 Tbsp @wholefoods almond butter 
1 tsp vanilla 
1 tsp baking soda
1/2 tsp cinnamon
.
Optional toppings: 
@enjoylifefoods chocolate chips, nuts, seeds &/or granola.

Instructions: 
Preheat the oven to 350ºF. 
Combine the dry ingredients, in a separate bowl use an electric mixer to combine wet ingredients (including bananas). Add the dry ingredients to the wet and mix until well combined. 
Pour the batter into a large loaf pan (I put parchment paper in the pan instead of greasing), add toppings if using them and bake for around 40 minutes or until the center is firm & toothpick comes out clean. 
Let it sit for at least 10 minutes before removing from pan, place on cooling rack and let cool completely before storing. 🍌🍞

Chocolate and mango vegan no bake cake 🍰

* (Ingredients are for a 16 cm cake tin)

⚘crust 
1 cup(120g) sunflower seeds, chopped
1/3 cup (40g) shelled hemp seeds 
2 Tbsp raw cacao powder @nu3_de
1/2 tsp cinnamon
Pinch salt 
8 dates, pitted and chopped @palmyradelights
1 Tbsp agave @nu3_de
Place all the ingredients in a food processor and process until a sticky dough forms. Press the dough into the tart tin and place into the refrigerator whilst making the filling. ~
⚘chocolate layer 
150g vegan dark chocolate, finely chopped 
1 cup (240ml) oat cream 
1 Tbsp agar 
1 Tbsp maple syrup
Pour the oat cream and agar in a saucepan and bring to a brief boil, stirring continuously. Simmer until it starts to thicken. Stir in the chopped chocolate and mix until well combined. Add the maple syrup and pour the mixture on the crust layer. Place into fridge to set (about 30 min)

⚘Mango layer (dark)
1 cup (240ml) oat cream
1 cup (240ml) mango purée
2 Tbsp agave 
1 Tbsp agar 
Combine all the ingredients in a saucepan and mix well. Bring to a brief boil and simmer until it starts to thicken. 
Let it cool down until lukewarm, stirring from time to time, then pour the mixture over the chocolate layer. 
Place back into fridge to set (about 30 min)

⚘Mango layer (light)
1 cup (240ml) oat cream 
1/2 cup (120ml) coconut milk 
1/2 cup (120ml) mango purée 
2 Tbsp agave 
1 Tbsp agar
Same procedure as the mango layer.

Apfel-Zimt-Walnussbrot aka die Bananen haben noch nicht die richtige Farbe für Bananenbrot 👅 dafür schmeckt es schon wundervoll herbstlich (bin ja eigentlich noch voll im Sommermodus) und ist definitiv eine gute Alternative zum Bananenbrot 🙏🏻 Hier das Rezept für euch:
- 250g Vollkornmehl (bei bedarf glutenfrei)
- 125ml Mandelmilch (ungesüßt)
- 100g Sonnenblumenöl
- 50g Agavendicksaft (oder andere Flüssigsüße)
- 100g Kokosblütenzucker
- 50g Speisestärke
- 1 Pck. Backpulver
- 1 großen Apfel (am besten einen besonders reifen)
- 100g Apfelmus (+ etwas für das Topping)
- Zimt nach Belieben
- 1 EL Honig
- Handvoll Walnüsse 
Für den Teig alle Zutaten (außer den Honig und die Walnüsse) in einer Rührschüssel vermengen. Dazu den Äpfel schälen und zu den anderen Zutaten reiben. Dann für etwa 30 min bei 180 Grad Umluft in den Ofen und anschließend gut auskühlen lassen. 
Anschließend für das Topping 1 EL Honig mit etwas Apfelmus und Zimt in einem Topf erhitzen und karamellisieren lassen. Die Walnüsse unterrühren und die Masse dann auf dem Kuchen verteilen. Jetzt nur noch im Kühlschrank fest werden lassen und dann genießen! 💋

Mein alltime-favourite sind und bleiben definitiv Chocolate-Chip-Protein-Balls 🙏🏻 dabei sind sie so simpel wie lecker:
- 2 Tassen Haferflocken
- 6 EL Butter/Margarine
- 6 EL Agavendicksaft
- 1 EL Vanille Proteinpulver
- Wasser nach Konsistenz (Teig muss sich gut kneten lasen )
- Chocolatechips nach Wahl 
Haferflocken im Mixer zu Mehl verarbeiten und dann alle Zutaten per Hand verkneten. Aus dem Teig kleine Kugeln formen und ab in den Kühlschrank (oder gleich in den Mund 🌚) That‘s it! Schönes Wochenende euch 💋 #snacktime #chocolatechip
