The storm rolling in cut me off early harvesting tomatoes but I got about 5 lbs and will pick more later today. I mean if I can catch a short period of the rain lets up or might just put on the rain jacket and make a run for it 🤣 most these tomato's were a surprise I didn't know they were close to being ripe I went out to get caught up on my cherry/ small tomato picking! CAPRESE SANDWICH | serves 2
1 baguette, split in the middle and lengthwise
5dl (2cups) tomatoes, roughly chopped
2 shallots, sliced
1dl (1/2cup) basil, sliced
2 tbsp balsamic vinegar
3 tbsp extra virgin olive oil
1 tsp salt
1 tsp pepper
150g (5oz) mozzarella, sliced
1dl (1/2cup) mayonnaise
1 tbsp dijon mustard
2 tbsp lemon juice
1 clove garlic, minced
1/2 tsp salt
1️⃣ Mix all the ingredients from the mayomix in a bowl. Set aside.
2️⃣ Grill the baguette on the bbq for 3 mins on each side or 5 mins in the oven on 200°C (400°F).
3️⃣ Mix the tomatoes, shallots, basil, vinegar, 2 tbsp olive oil in a bowl. Season with salt and pepper.
4️⃣ Assemble sandwich starting with a layer of mayomix on the baguette. Then add the mozzarella and tomatomix. Drizzle olive oil on top and enjoy.
👨🍳 I like to use tomatoes such as cherry, plum or cocktail when making caprese🍅

I may not be soaking up the European sun, but this slow cooked lamb really hits the spot! So juicy & tender 😋😋
1. Marinate lamb shoulder & shanks overnight in paprika, dried oregano, 4 x cloves minced garlic, zest of x 1 lemon, salt, pepper & olive oil
2. Pre-heat oven to 160deg. Ensure you take the lamb out of the fridge, 2hrs before you want to cook it
3. Lay a bed of potatoes & season. Lay the lamb on top. Add sliced tomatoes, juice of 1 x lemon, slices of lemon & cup of water
4. Cover in foil & cook for 5 hours. I basted it in it’s juices every 2hrs. Let it rest before you serve .
