Tuna teriyaki sesame sliders
500g tuna fillet
2 garlic cloves, finely chopped
10g fresh root ginger grated
2 tbsp fresh coriander
Zest and juice of 1 lime
1 tbsp soy sauce
1 tsp sesame oil
Mix of black & white sesame seeds
Salt & pepper
Pop the quinoa in a pan with 150ml water. Bring to boil, reduce to simmer on a low heat until all the water is absorbed.
Dice the dish and put in the freezer for 20 mins to chill.
Take fish out and put in a food processor and pulse until ground - freezing it first stops it turning to mush.
Add the fish to a bowl with all the ingredients except the sesame seeds.
Season with salt and pepper
Chill for another 30 mins.
Preheat the oven to 200c and line a baking tray with baking paper.
Divide the mixture into the size sliders to wish to use. I go small, the kids are more likely to eat more that way.
Pour both types of sesame seeds onto a plate and roll the sliders in them until well coated.
Place on the baking tray. Cook for 8-12 mins depending on how well you like your fish cooked.
