There isn’t just one way to go vegan. Some people do it overnight and completely cut all animal products out instantly. Some people might find that too overwhelming and it may seem impossible to them, so they prefer to go vegetarian or even pescatarian first and then continue from there. Then there are others who cut out products bit by bit eg. changing cows milk to almond/soy/oat/other nut milk, then moving on to changing to vegan cheeses and the vegan chocolate continuing on to being vegan. Whatever steps you need to take to become vegan is up to you but let me just tell you that once you do it, you’ll feel so much better in every way and you’ll probably look back and think.... why did I think it would be so difficult If you need any support or have any questions about veganism or transitioning, please feel free to ask 💓 and as I always say, it’s very important to educate yourself. You need to know WHY you’re doing it for it to continue in the long term.
IS SALAD REALLY SO HEALTHY - That depends! It depends on what the ingredients of the salad are! If it is just salad leafs with tomato cubes, then the salad is not really healthy and also definitely not delicious.
In my childhood, I hated salad. I hated the leafs and I hated tomatoes (I’m still not the biggest tomato fan). Whenever me and my family have been to a restaurant I didn’t eat the salad. Well you know this three leafs of salad and the two slices of cucumber and tomato, which are kind of a healthy add on of a meal, which is mostly garbage like some kind of meat and some fries… Plus I didn’t like the meat ether, so I basically just ate the fries xD I have been such a complicated kiddo^^
Today I see the whole salad theme completely different: I love salads. In all kinds and colors. I learned over the years that a salad is much more than lettuce and cucumber. The perfect salad has not only veggies in it, which is the next point. I think it also has some nuts and herbs and another protein source, like tofu, cooked and cold beans. And sometimes also fruit.
The salad in this post for example has baked tofu and cooked whole grain pasta in it, different herbs and some pumpkin seeds. Of course also the veggie parts like, Iceberg salad, cucumber, carrots and celery
But a salad is not the only way to get many nutrients into your system, smoothies are also a great way to load up your body with nutrients! If you are interested in that stay tuned for my upcoming smoothie challenge! :)

1 medium eggplant (as narrow as possible)* 1/4 cup unbleached all-purpose flour (or other flour of choice - GF for gluten-free eaters) 1 cup panko bread crumbs (GF for gluten-free eaters) 2 Tbsp vegan parmesan (plus more for serving // or sub 1 Tbsp nutritional yeast per 2 Tbsp vegan parmesan) 1 tsp dried oregano (or sub 2 tsp fresh per 1 tsp dried) 1/4 tsp sea salt 1/2 cup unsweetened plain almond milk (or other neutral milk) 1 tsp cornstarch
PASTA + SAUCE
8 ounces pasta (such as linguini, but any kind will do, including veggie noodles or gluten-free) 2 cups marinara sauce
Slice eggplant into thin rounds slightly less than 1/2 inch thick, and sprinkle each side liberally with sea salt. Arrange in a circular pattern in a colander and place in the sink to draw out the bitter taste of the eggplant. Let rest for 15 minutes, then rinse and arrange on a clean absorbent kitchen towel. Top with another clean dish towel and lay a baking sheet on top. Place something heavy on top, such as a cast iron skillet, to thoroughly dry for at least 10 minutes. In the meantime, preheat oven to 400 degrees F (204 C) and line a baking sheet with foil and spritz with nonstick spray. Also, if making pasta, bring water to a boil in a large saucepan. Prepare your dipping stations by placing almond milk + cornstarch in one bowl; flour in another bowl; and bread crumbs + sea salt + oregano + vegan parmesan (or nutritional yeast) in another bowl. Once thoroughly dry, dip eggplant slices in flour, then almond milk mixture, then breadcrumbs. Arrange on the baking sheet and pop in oven to bake for a total of 20-30 minutes.

“Minks are intelligent, extremely active animals who are excellent climbers and swimmers. In the wild, they forage for food, move between multiple den sites, and have a home range of several miles near a waterway. Intensive confinement with no chance of escape caused some minks on these farms to exhibit symptoms of “zoochosis,” or captivity-induced insanity, including frantic pacing, circling, and gnawing on cage bars.
Eighty-five percent of fur sold today comes from fur factory farms like these, where thousands of animals are confined to crowded, filthy cages before being killed by gassing, electrocution, having their necks broken, or other cruel methods. Canada alone is home to 194 fur farms with over half a million minks. These animals are plagued by fear, stress, disease, parasites, and other physical and psychological hardships on a daily basis—all for a “luxury” item that no one needs.” -Peta
