Another week another meal prep! ☺️I honestly love preparing lunch in advance it saves so much time and means you’re never tempted to grab something really fast which is most likely not so healthy🤞🏼. I’m trying out this week having slightly smaller meals but adding in snacks.✨I’ve always been so against snacking, I guess it’s been a fear of mine for a long time. But I’ve read how good it is for your digestion, especially if you suffer with IBS. 💛Since I’ve started listening to my body more I’ve noticed I get really hungry between meals, so I’m going to give it a go!🙋🏼♀️Here’s the recipe for this delicious and fast lunch: makes 3 portions. 250g of dry quinoa, 1 head of broccoli, 2 large sweet potatoes, 1 onion, 2 cloves of garlic, juice of 1 lime, chilli flakes, 2 tbsp of tamari, 2 tsp of maple syrup, 1 head of lettuce, 50g of roasted cashews.
1. Preheat the oven to 180 Degrees. Chop up the broccoli and sweet potatoes with a little oil and cook for 40 minutes.
2. Cook the quinoa for 20 minutes in a pan of boiling water. 💦
3. Make the sauce add the lime juice, chilli flakes to taste, seasoning too, maple syrup, and tamari to a bowl and whisk with a fork.
4. Heat the onions and garlic in a pan with either some oil or water until browned.
5. Mix everything together in a bowl and then serve with lettuce. 🥗 •

Moving Mountains B12 Burger. I was really excited about this one! Look how great it looks!!! So happy to see more vegan items on the menu @sluglettuce
Unfortunately, the staff seemed really under educated about the vegan food on the menu. When my dessert arrived along with my friends various non-vegan desserts, I asked which was the salted caramel bites (the vegan one) and the server replied 'I don't know'. When I asked if they could check with the kitchen, they asked if my friend could just 'try them all to see which one was vegan' 👀. They then proceeded to talk me through the menu claiming that everything with 'a V' was vegan to demonstrate that most desserts were 'vegan' (even though the menu clearly shows V as vegetarian and VG as vegan)
The service was pretty horrendous and I'm 99.9% sure the 'Vodka Bloody Mary dip' which came with the burger was BBQ sauce (not complaining, I love BBQ to be fair). Side note, there was also a small fragment of plastic embedded into the bottom of my bun which I found right at the end & they sat us upstairs (even though there was plenty of room downstairs) and then proceeded to close upstairs and try to bring our bill before we'd even finished our main, rather than offering to relocate us to downstairs which was still open.
All in all, a pretty crappy experience which was a real shame as the B12 burger was actually really delicious.

the other night I had a bit more time to prepare dinner so I made a kidney bean and vegetable chilli sort of thing and it was sooo good🌶

Can of chopped tomatoes
And I had it with sweet potato (there was so much but the chilli was quite watery so it covered up all the potato in the bowl 😂😂) and hummus (because what is a meal without hummus!)
To make this even quicker you can steam the veg in the microwave first so you don’t need to wait for them to cook in the pan and you can literally just combine all he ingredients and wait for it to heat up, and I always cook my sweet potato in the microwave because it’s 100x quicker and easier (plus we don’t even have ovens at uni anyway 😂)
For anyone who has been living a plant based life for a while and is maybe starting to experiencing fatigue or brain fog after having unlimited energy for the first year or so, could be down to a lack of iodine in your diet according to Dr Michael klaper. Even if you feel great, you want to make sure you have enough iodine in your diet as it is a crucial mineral for health.
🔰 Dr Michael klaper " At the base of our neck we have this gland called our thyroid gland, it puts out a hormone called thyroxine that regulates how quickly our cells burn energy. You want to have just the right amount of thyroxine in your blood, and for the thyroid gland to make thyroxine you need enough iodine. I think a significant amount of vegans who have come to me over the years saying "doc I felt great at the start but I'm starting to feel drained now, i just feel like I have no energy".What's turning out when you go over their diet is they have very little iodine which leads to low thyroid function. I believe iodine deficiency is one of the really common causes of vegans failing to thrive".
In theory we should be able to meet all of our iodine needs from a wide variety of plant foods however many of the soils that the agri based food supply industry use to grow our food is thought to be very low in iodine and vastly lower than they used to be.

The best sources of iodine are sea vegetables like wakame, arame or dulse. You can purchase these in dried powder form, all you need is a few sprinkles three times a week in your salad or smoothie. kelp is a seaweed that is very high in iodine and if you take to much iodine you will flood your thyroid and create more of the same deficiency that you are trying to cure. If you do use kelp all you need is a couple sprinkles a couple times a week.
