Another week another meal prep! ☺️I honestly love preparing lunch in advance it saves so much time and means you’re never tempted to grab something really fast which is most likely not so healthy🤞🏼. I’m trying out this week having slightly smaller meals but adding in snacks.✨I’ve always been so against snacking, I guess it’s been a fear of mine for a long time. But I’ve read how good it is for your digestion, especially if you suffer with IBS. 💛Since I’ve started listening to my body more I’ve noticed I get really hungry between meals, so I’m going to give it a go!🙋🏼‍♀️Here’s the recipe for this delicious and fast lunch: makes 3 portions. 250g of dry quinoa, 1 head of broccoli, 2 large sweet potatoes, 1 onion, 2 cloves of garlic, juice of 1 lime, chilli flakes, 2 tbsp of tamari, 2 tsp of maple syrup, 1 head of lettuce, 50g of roasted cashews. 
1. Preheat the oven to 180 Degrees. Chop up the broccoli and sweet potatoes with a little oil and cook for 40 minutes. 
2. Cook the quinoa for 20 minutes in a pan of boiling water. 💦 
3. Make the sauce add the lime juice, chilli flakes to taste, seasoning too, maple syrup, and tamari to a bowl and whisk with a fork. 
4. Heat the onions and garlic in a pan with either some oil or water until browned. 
5. Mix everything together in a bowl and then serve with lettuce. 🥗 •

Harissa-spiced noodles by @yummyyatra 🔥 Crunchy vegetables and spicy noodles--so delicious! .
Steps
Chop veggies and set aside. I used colored peppers, savoy cabbage, carrots and green onions. 
Heat a deep wok, add a tsp of oil, crushed garlic and sauté for a minute. Add some green onions and sauté. Now add all the vegetables, salt, harissa paste and sumac. Mix well and stir fry for about 4-5 minutes in high heat, stirring constantly. Add a few spoons of water to prevent the vegetables and spices from burning. Check for seasoning and add more spice or salt if you like
Cook the noodles according to package instructions. Combine the veggies with the noodles and toss well and garnish with some more green onions. .

Unfortunately, the staff seemed really under educated about the vegan food on the menu. When my dessert arrived along with my friends various non-vegan desserts, I asked which was the salted caramel bites (the vegan one) and the server replied 'I don't know'. When I asked if they could check with the kitchen, they asked if my friend could just 'try them all to see which one was vegan' 👀. They then proceeded to talk me through the menu claiming that everything with 'a V' was vegan to demonstrate that most desserts were 'vegan' (even though the menu clearly shows V as vegetarian and VG as vegan)

The service was pretty horrendous and I'm 99.9% sure the 'Vodka Bloody Mary dip' which came with the burger was BBQ sauce (not complaining, I love BBQ to be fair). Side note, there was also a small fragment of plastic embedded into the bottom of my bun which I found right at the end & they sat us upstairs (even though there was plenty of room downstairs) and then proceeded to close upstairs and try to bring our bill before we'd even finished our main, rather than offering to relocate us to downstairs which was still open.

All in all, a pretty crappy experience which was a real shame as the B12 burger was actually really delicious.

Moving Mountains B12 Burger. I was really excited about this one! Look how great it looks!!! So happy to see more vegan items on the menu @sluglettuce . Side note, there was also a small fragment of plastic embedded into the bottom of my bun which I found right at the end & they sat us upstairs (even though there was plenty of room downstairs) and then proceeded to close upstairs and try to bring our bill before we'd even finished our main, rather than offering to relocate us to downstairs which was still open. . Es folgt ein kleiner Einblick in meine Transformation.. (Okt. 19 - Jan. 19)

Wenn ihr nach rechts swiped seht ihr wie @doitright_coaching und ich gestartet sind.. Meine Ausgangsform im Januar 19 war nach einer 6 Wöchigen Sportpause aufgrund einer Op.. Wie ihr seht, seht seht ihr nichts 😅

Es folgte ein Aufbau mit Minicuts bis es dann letzten Endes Mitte Juni 19 in die Diät ging.. Aber nicht nur an der Form wurde gefeilt sondern auch immer wieder am Posing und dank der Posing-Workshops von @elenagrass wurde es stetig besser! Wenn ich bedenke, dass ich mir zu Beginn vorkam wie der größte Körperklaus und mittlerweile den größten Spaß daran habe, kann man mal sehen was Übung ausmacht 🥳

Today was my fortnightly weigh in. Pleasantly surprised to see that I’ve lost a stone overall and that my weight is steadily coming down! Also had a training session today with @hardwiredfitness - it wasn’t one of my best workouts as I struggled to push on a leg workout. the other night I had a bit more time to prepare dinner so I made a kidney bean and vegetable chilli sort of thing and it was sooo good🌶
INGREDIENTS
Pepper
Mushrooms
Courgette
Spinach
Can of kidney beans
Can of chopped tomatoes
Lemon juice
Garlic granules
Salt
Lemon
Paprika
Turmeric
Cumin 
And I had it with sweet potato (there was so much but the chilli was quite watery so it covered up all the potato in the bowl 😂😂) and hummus (because what is a meal without hummus?!)
To make this even quicker you can steam the veg in the microwave first so you don’t need to wait for them to cook in the pan and you can literally just combine all he ingredients and wait for it to heat up, and I always cook my sweet potato in the microwave because it’s 100x quicker and easier (plus we don’t even have ovens at uni anyway 😂)

OKAY GUYS LET'S GET REAL: losing weight is hard, staying on track is hard. @k.c2.0 and I have fallen off more than usual the past few weeks. I'm up 7 pounds from my lowest announced weight of 163 (140 down). for FOUR WHOLE DAYS we did literally the bare minimum. We didn't track a single thing, we didn't exercise nearly as much as we usually do. It was so nice, honestly, especially since he's been working so much lately. I'd love to give y'all some pitty story about why I fell off- but I can't, because I don't have one. We just really needed a vacation from the constant weighing and tracking food, from planning our entire existence around our gym schedule. As nice as it was, I am 110% ready to get back to our bullshit. Gym, walks, and tracking. I've said this before and I'll say it again, it's okay to take breaks, it's okay to fall off, it's okay to give in to those things you "shouldn't" eat. Just make sure you have a plan to get yourself back to business.

When news like this drops it makes me feel so blessed to be vegan and to have opened my eyes to the horrors of the meat and dairy industry. Some people turn a blind eye but there is no denying that these industries are all about the money and not at all concerned for your health, the environment, or the well being of animals.

If you are still eating beef (or any animal products) it’s time to reconsider. Your health, the environment, and the animals will thank you when you stop consuming these foods.

If you do use kelp all you need is a couple sprinkles a couple times a week.
