Raise your hand if you’re still on the fence about that mysterious nut cheese
Alright, you’re officially invited to my next vegan charcuterie night, yep even the weirdos #
Keep reading and SAVE this post if you’re on board w/ nut cheese but just don’t want to spend $20 for a nibble of it.
Seriously, this recipe is easier than making PB+J and you might even woo a special someone, or your cat if that’s your current status 🔥
What you’ll be needing...
• 2 cups raw cashews
• 5 cloves garlic
• 2 medium lemons
• 3 table spoons of nutritional yeast
• 1 tsp salt + pepper
• garlic powder till desired taste
• fresh dill and additional flavours till desired taste
1. Place cashews in a bowl and cover with cool water. Cover and set over night OR quick soak in boiled water for 2 hours if you’re rushed.
2. Drain cashews and add to food processor with a splash of water. Slowly add the rest of the ingredients and blend until creamy while scraping down the sides.
3. Add more flavour and water as needed
4.Place a fine mesh over a large mixing bowl, and lay a thin towel or two layers of cheesecloth down in the strainer.
5. Scoop the cheese into cheesecloth or towel then tie the tops of the cloth so it’s shaped similar to a wheel of brie.
6.Place in refrigerator to set over night or until excess moisture disappears and it holds form.
7. Carefully flop onto a plate and serve with crackers
or vegetables and be sure to only keep it out of the fridge for a couple hours.
8. Keeps for 5ish days but I’m sure you’ll it in maximum 2

Às vezes, não sinto vontade de cozinhar fico-me pelas torradas com abacate e salada (eu sempre tenho uma tigela grande de salada pré-preparada na geleira e sem tempero -que dura 2 ou no máximo 4 refeições, o que pode me levar 1 ou 2 dias para terminar).
Confesso que tenho vício por torradas de abacate (na verdade, está muito difícil superar o vício por pão. Tentei parar, mas só durou três meses).
Não sinto falta de carne e nem muito menos queijo.
Agora como frutas principalmente. Mas como quase nunca preparo prato, não faço foto. No entanto, ainda sinto vontade de comer comida com sal.
No outro dia, eu estava a pensar nas frutas e nozes que tenho sempre prontas para comer, mas quase nunca partilho 🤔
Normalmente, são apenas: maçãs, bananas, melão, meloa, morangos, melancia, abacaxi, mirtilos, mangas, laranjas e muito aleatoriamente ameixas.
Sometimes I don’t feel like cooking and rely upon avocado toasts and salad (I always have a big bowl of pre prepared salad - no seasoning- in the refrigerator that last for 2 or maximum 4 meals that it may take me 1 or 2 days to finish it).
I confess I’m addicted to avocado toasts (actually it’s being really hard to overcome bread addiction. I’ve tried to quit but it only lasted for 3 months).
I don’t miss meat at all. At least I’m not going back to cheese neither.
I eat mostly fruits now. But I don’t make a dish out of them. Nevertheless I still feeling like eating something salty.
The other day I was thinking about the fruits and nuts that I always have ready to eat but almost never share about them 🤔
Usually it’s just: apples, bananas, cantaloupe, strawberries, melon, watermelon, pineapple, blueberries, mangos, oranges and very randomly plums.

But it is 100% sabotaging your efforts to be healthy, to lose weight, to be at the best health you can be. So this weekend, consider eating less cheese and dairy. Why yes. I always want fries with that.👌😏🥔 Start by cutting some organic russets into thin wedges, and gently steam until fork tender. Then add to a skillet along with some avocado oil, and fry over medium-high heat until golden, fluffy and extra-crispy on the outside. Finish with coarse salt, fresh herbs, and some sauces to dip them low and slow. ✨🤤✨(I used @sietefoods queso blanco, and some ketchup from @primalkitchenfoods). I met up my oldest sister for some entrepreneur stuff and decided to blow her mind with so amazing vegan food from @itsovegan in Grand Prairie.
The Wonton Nachos were so delicious and made a great appetizer for us to fight over the last bite for. I had the Fish Fried Mushroom Basket made with oyster mushrooms and my sister had the Nothing From The Sea Platter. My sister fell in love with the greens but I fell in love with those vegan crab cakes. I’m coming back for them. 😇
Also—don’t sleep on those Fish Fried Oyster Mushrooms. They are so 🔥
