Starting to experiment with vegan nuts and bolts for the holidays! Really praying these turn out because I frickin love snack mix and the store bought stuff is never vegan. 🙏🏻
Crispy, crunchy baked cauliflower bites. My absolute favorite food ever. I could eat these every single day.
Recipe below and in my highlights.
1 large head of cauliflower
1/4 cup flour
1/4 cup water
1 cup panko
1. Chop up cauliflower into small florets
2. Mix flour and water in one bowl to form a thin batter. (I like it pretty thin. It's mostly to help the panko stick to the cauliflower.)
3. In a separate bowl put panko and any spices you want to season your wings with. (I use a different combo each time but a good starter mix is salt, pepper, cayenne, garlic powder, and onion powder.)
4. Toss the cauliflower florets in the flour/water mixture to get them all coated.
5. Roll the florets in the panko/spice mixture.
6. Arrange on a cookie sheet. You may need 2. Don't crowd your pan. Give them room to breathe.
7. Bake at 400° for 30 minutes.
8. Once they're done you can toss them in sauce or leave them plain and dip them. (I'm usually a dipper 😉)
Portobello steak with stuffed potato cakes.
Marinade: Equal parts olive oil and balsamic vinegar. 2 cloves of chopped garlic, salt, pepper and steak spice.
Instructions: use a spoon to scrape the gills out of the mushrooms, brush marinade over both sides of the mushroom and let sit for 30min-1hr
Once ready bake at 400 for 20 minutes and finish on broil.
STUFFED POTATO PANCAKES
Boil potatoes until soft.
While they are boiling make the filling: I used mushrooms, red peppers, red onion, green onion.
Mash the potatoes and Leave them to cool. Once cool add salt, pepper, flour and cornstarch until it becomes dough-like. Roll the dough into balls, and make an imprint to put the filling in, cover with more dough and seal. Fry in oil/vegan butter until crispy on both sides.

Is Honey vegan 🐝🌺🌸🌼🌻 In short, NOPE! Honey is made by bees for bees as their main source of energy and fuel. Without it they would starve, and without bees, humans would starve since 1/3 of our global food supply is pollenated by bees. Honey also provides essential nutrients for bees during the winter months so by eating it, we are exploiting bees, especially when we take their food and replace it with sugar substitutes.
One bee produces just one twelfth of a teaspoon in its entire lifetime. Did you read that correctly 1/12! Honey takes a lot of work to create and is in no way sustainable. To make just 1 pound of honey, bees needs to visit 2 million flowers and fly 50,000 miles which is farther than circumnavigating the globe twice!
Bees are not commodities. Beekeeping is as an exploitative practice aimed to harvest the most amount of honey to make the most amount of money. The honey industry, like many other commercial industries, is profit driven where the welfare of the bees is often secondary to commercial gain. The following practices regularly occur in both commercial and hobbyist setups: 🍯 Shipping queen bees in the mail which can injure or kill them. 🍯 Use of antibiotics to bees which can contaminate honey and even harm humans. 🍯 Artificial insemination with carbon dioxide and decapitated bees. 🍯 Clipping the queens wings to prevent her and other bees from leaving the hive. 🍯 Swapping out honey with high fructose corn syrup so bees work harder to produce more honey. 🍯 Killing queen bees every three years and replacing them.
In 2012, 40% of bee species were close to extinction due to colony collapse disorder and the use of pesticides and herbicides. Bees cannot live without honey but humans can.
