I’m a slow cooker. A true daal would’ve taken me forever to make. And, as you may know, I’m super lazy about cooking. So, these @mayakaimalfoods pre-made lentils were perfect for tonight. Cooked some rice, sautéed celery with garlic/salt/pepper for literally 3 mins (because I had leftover celery in my fridge), heated this up, and ate it all with random chips and dried seaweed I had in my cabinet. Half as cheap as Indian takeout and just as good! 💛 .

I’m making a quick lentil stew to throw over rice for dinner. The base is carrots, onions, kale and garlic. I’ll add the lentils after sautéing and cook the lentils with the veggies. If you are running short on time lentils are your friend. I like my lentils firm so I only cook for 10-12 minutes. The rice and the lentils cook in pretty much the same amount of time! Perfect dinner solution.

Rare sighting: me eating salad instead of pizza. But sometimes that’s what your body tells you it needs! And I just discovered the @justsalad roasted balsamic mushrooms and I could eat them everyday 🍄. Added them to my classic Caesar here. Such a quick and reliable @seamless delivery after a long day 👏

Carrot Socca!!! It’s my fav recipe ever. So simple and so so tasty.
1/3c garbanzo bean flour
1/2c cold water
1Tbs hemp seeds
8oz carrots (shredded)
1/2 tsp fresh dill
1-2 tsp vegenaise
Juice of half a lemon
Mix garbanzo flour with cold water and hemp seeds in a large bowl. Add shredded carrots and mix well. Throw in a pinch of salt and pepper to taste. Set aside.
Dice radishes and cucumber and dill, mix together with lemon juice and vegenaise. Add salt and pepper to taste. Set aside.
Heat pan or griddle and add 1 tsp of your fav oil. Scoop 4-6 spoonfuls of carrot/garbanzo batter onto hot pan. Amount of pancakes you have depends on size of your scoops! Mine are about 4” and made 4. Flatten like a pancake while cooking. Cook on both sides until browned and cooked through.
Put on bed of greens, top with radish/cucumber mix.
